Tim Maddams
Born in 1979 in Wiltshire, Tim Maddams was drawn to cooking from an early age. After leaving catering college in 1997, he worked as a chalet boy in Courchevel before his career took off. He has worked for Fergus Henderson at St John; Alastair Little in Notting Hill; cooked 1,200 steaks a week for Marco Pierre-White; had a spell with Mark Hix at Rivington Street; and afterwards at the renowned One Aldwych. He was lured away from London by the opportunity to handle VIP catering for the Ferrari F1 team and was “living the dream” when love struck. After getting married and starting a family, he realised something more stable was required. He decamped to Devon, joined Hugh Fearnley-Whittingstall’s River Cottage enterprise, running the Canteen in Axminster, and appearing on numerous TV programmes as well as writing River Cottage Handbook No 15: Game, before going solo in 2012.
