SPAGHETTI BOLOGNESE

PREP + COOK TIME 1 HOUR 20 MINUTES SERVES 4

1 tablespoon extra virgin olive oil
1 large brown onion (200g), peeled and chopped finely
2 cloves garlic, crushed
600g minced beef
1 large carrot (180g), peeled and grated coarsely
2 tablespoons tomato paste
1½ cups (375ml) beef stock
800g canned crushed tomatoes
2 teaspoons mixed dried herbs
375g spaghetti
Parmesan and fresh basil, to serve

1 Heat the oil in a large saucepan on medium heat. Saute the onion and garlic until the onion is soft.
