WARM VEGETABLE AND BULGUR WHEAT SALAD

pumpkin, red onion, bulgur wheat and frozen peas

Serves 4 EASY 30 mins

Preheat the oven to 200°C. Place and in a large baking tray. Drizzle with and season to taste with and . Toss until coated well. Roast in the preheated oven until the pumpkin is soft, 15 – 20 minutes, stirring the vegetables halfway through the cooking time. Remove from oven and set aside until needed. While the vegetables are roasting, cook according to packaging instructions. Thaw in hot water, strain and set aside. Combine the roasted veg, bulgur wheat and thawed peas in a large bowl. Drizzle with more olive oil and adjust seasoning, if desired. Serve immediately.
