SERVES 6 - 8
INGREDIENTS
2 tbsp vegetable oil
• 1.4kg beef chuck,
cut into large cubes
1 tbsp kosher salt
2 cups minced onion
6 garlic cloves,
chopped
½ tsp cumin
1 tsp coriander
1 tsp smoked paprika
1 tbsp chipotle in
adobo sauce
1 (410g) can chopped
tomatoes
2 lobster tails or
about 350g cooked
lobster meat
8 tortillas
Scallions, jalapeno pepper, onion, coriander, sour cream (for serving)
DIRECTIONS
1) Preheat oven to 180?C.
2) Heat oil in a heavybottomed, oven-safe pan over medium-high heat. Pat beef cubes dry and toss with salt. Add beef to pan and cook until browned on all sides.
