No-cook Peanut Chicken Noodles

Preparation Time 20 minutes Total Time 25 minutes Serves 4

1. Place 200g to 230g thin rice noodles in a large bowl, cover with boiling water and let soak until tender (7 to 9 minutes); drain.

2. Meanwhile, in a large bowl, whisk together 1/3 cup each peanut butter and rice vinegar, ¼ cup low-sodium soy sauce, 2 tbsp water, 1 tbsp sriracha and ¼ tsp salt. Add noodles and toss to coat, adding more water 1 tbsp at a time if noodles seem dry.

Fold in 2 cups shredded cooked ; 1 cup frozen shelled (thawed); 230g (about 2 large carrots, coarsely grated) and ¼ cup , chopped; and additional coriander if desired.
