Baking, it is said, is good for the soul, and what better time of year to enjoy this simple pleasure than at Christmas. • 125g butter• 100g caster sugar• 3 heaped tbsp dark treacle• 300g plain flour,• 1 tsp bicarbonate of soda• 2 tsp ground ginger• 1 tsp pure vanilla extract or ½ tsp vanilla bean powder• 400g royal icing sugar, sifted• Sprinkles and sugar crystals
