Theo Randall was part of London’s up-and-coming River Café in 1989, left, then returned as head chef, earning its first Michelin star in 1997.

However, he wanted to have his own place and do something for himself, and so in 2006, he launched a fine-dining Italian restaurant at the InterContinental in London.

“A famous Park Lane hotel was not an obvious place for a chef in his 30s to do their first restaurant,” he says. “But the opportunity was there, as well as the support, and so Theo Randall at the InterContinental was born.

“Within a year, we were awarded best Italian restaurant and the restaurant started to feel like it was being recognised.”

And that love of Italy and its cuisine has always had a place in Theo’s heart, as he exclusively tells HELLO!…
