Calories per serving: 302
2 cups dry 15 bean soup mix
1 cup chopped carrots
1 cup chopped celery
1 large onion, chopped
2 garlic cloves minced
2 cups diced tomatoes
2 quarts vegetable broth (or organic, low sodium chicken broth)
1 bay leaf
1 tsp red pepper flakes
1 tsp cayenne pepper
1 Tbsp cumin
1 tsp basil
1 tsp oregano
zest and juice of one lime or lemon
1. Rinse beans well and soak beans in water over night.
2. Combine all ingredients in crock pot, cover and cook on low for 6 - 8 hours.
