I broke up with gluten.
Hands down, it was one of the most profound shifts of my life. Giving up gluten was my first step in really exploring how food affects me. I spent my life up until then being detached from the sensations I experienced, with no recognition that how I was eating was directly impacting every aspect of my being. Until I started to be able to feel the difference in myself, I wasn’t able to access some pretty deep things I’d not realized I was missing.
What my own ‘break up’ allowed me to access was a deeper understanding of the crucial role food plays in our lives, and a foundation for more learning and self-discovery.
Being without a food that caused me so much discomfort – and to be honest, one I was truly addicted to – opened up a door to find someone I had never expected to find. She was more fun, more fit, more vibrant: truly, the happiest version of myself I’d ever known, and one whom I have discovered has a lot more potential that I’d given her credit for.

Amy Height is a Holistic Health Coach and founder of From the Ground Up Wellness. She works with individuals and families looking to reestablish their relationship with food to build a strong foundation of lasting, healthy habits. She specializes in plant-based nutrition, weight loss, nutrition for children and young families, and managing food intolerances, including gluten-free, sugar-free and dairy-free lifestyles. After nearly two decades of emotional overeating, which led to being overweight and unhappy, Amy took on her own personal transformation. She overhauled her diet, her physical activity, and her mindset, which allowed her to find her happiest, healthiest self. She began to understand her relationship with food and found real joy in embracing an active lifestyle. Escaping the downward spiral of poor physical and emotional health truly changed every aspect of her life. Almost ten years later, the great habits remain, and she finds much enjoyment in helping others discover just how positive life can be when you choose to make a change. She believes in the value of a plant-based diet, constantly exploring the new possibilities of cooking with fresh produce, and shares recipe creations via the From the Ground Up blog. She strives to make being well uncomplicated and inexpensive and encourages her clients to establish lasting habits that will serve them for years to come. The From the Ground Up programs are implemented with a spirit of play, in line with the idea that wellness is meant to add to life, not detract from it. Chapter A - My Break-up Story

I was not always a gluten-single gal. In fact, for much of my life, wheat, refined carbohydrates, and their other gluten-filled buddies were my date of choice. I could find a way to justify spending time with them or work them into my day as often as possible. If I could sandwich something between bread (or put it on top of bread or near bread or just eat bread on its own), I did. Pasta was its own food group. No meal was complete without a side of refined carbohydrate. Crackers? My go-to. Muffins? Cookies? Pastry? Gluten and I were happy as could be, frolicking our way from Subway sandwich to box of Wheat Thins and back, and things were good.

Or so I thought.

When I was 18, I had the first big health scare of my life. Suddenly, my 40 extra pounds had caught up to me and my organs were not happy. Although I thought I’d been eating fairly healthfully (albeit, definitely in all the wrong amounts), a big part of my food relationship was causing some serious damage.

After a doctor at the hospital suggested I try an elimination diet to see what could be at the root of my digestive issues (not to mention lack of energy, weight retention, strange rashes, and moodiness), I discovered that I was incredibly sensitive to gluten and in fact, it was the culprit behind many of my issues.
