    CHIA SEEDS INTRODUCTION

    If you think of all seeds as bird-food, prepared to be amazed. Chia seeds have been used for literally aeons by some of the greatest and most powerful nations to ever walk the planet – the Mayan and Aztec – as a staple part of their diet. It is still a staple in many parts of South America to this day.

    This seed has been used to build empires due to its ability to increase stamina and keep [a warrior] going for extend periods of time. To call it a superfood is an understatement. This is one powerful, super-charged seed.

    What's so great about them? Just two tablespoons of chia (approximately an ounce), contains 139 calories, 4 grams of protein, 9 grams fat, 12 grams carbohydrates and 11 grams of fiber, plus calcium, phosphorus, magnesium, manganese, copper, iron, molybdenum, niacin, and zinc.

    Need more? Chia is a gluten free whole grain and the richest plant based source of Omega 3, dietary fibre, protein and antioxidants.

    That's a lot of goodies packed into this tiny unassuming seed.

    If you are even remotely interested in  building muscle, lowering cholesterol, and reducing your risk of heart disease then you need to take notice of chia seeds big time.

    Chia seeds are one of nature's wonder-pills and you need to be popping them.

    Chia is also extremely good for hydration and when added to any liquid, they retain the water and swell up to 12 times their original size. When it comes to holding water, they are akin to a plant version of camels if not better!

    Chia seeds help you to retain moisture and regulate and enhance the bodies absorption of nutrients and body fluids.

    Chia is a derivative of the (not so humble) mint plant and various variations of the plant are found all over South, Central and North America.

    The official latin name is Salvia hispanica and an offshoot with similar qualities is known as Salvia columbariae. The seeds from these plants is what is commonly known as chia.

    Varieties Of Chia

    There are a great number of strains of chia (over 60) based on the region and the soil in which they are grown.

    If you want to know which type of chia seed is going to be best for your recipe or remedy, you will have to look deeper than the pretty purple packaging and slick advertising....

    The problem is that due to the large number of chia farms all over south America, you will get vastly differing levels of nutritional value and consistency. The quality of the chia very much depends on the environment in which it was grown, the soil, the process of extraction and a whole host of other variables.

    Despite this, chia falls under three main categories: Black, white and brown chia seeds.

    Black Chia Seeds

    Chia plants with purple flowers will yield black chia but with a smattering of lighter colored seeds.

    Black and white chia seeds actually range in color from brown to gray (black) and gray to yellow (white).

    In a typical mixed bag of chia you will find that ¾ are black and the remainder white.

    White Chia Seeds

    Plants with white flowers will produce only white seeds. These are a marbled mixture of white, gray and yellowish.

    There are some manufacturers who will try to sell you the idea that their particular brand of white chia seeds are significantly better than everyone else’s and they have the price tag to prove it (think $30lb and up).

    Fortunately for us and our wallet, several independent studies into the difference between white and black chia seeds have shown no significant differences.

    The difference between the two will have more to do with where they are grown (region, environment, processing) than their color.

    These two categories of chia (black and white chia) are essentially the same. Some argue that there are slight differences in terms of some nutritional values but they are not significant and they cancel each other out with one being stronger where the other is weaker.

    Both have a neutral taste and smell, are of a similar size and can be used in the same manner, raw or cooked.

    Both black and white chia are typical found in the South and Central Americas and for best results, always purchase mixed bags containing both.

    Golden/Desert Chia Seeds

    This is from the same family of the black and white chia seeds but it's more like a cousin whereas black and white chia seeds are like siblings.

    Golden chia (or brown chia or desert chia as it's called, depending on where you are in the world), was as big for Native Americans as black and white chia was for the Aztec's and Mayans. Its plant is a small, three-tiered thistle which has purple-colored flowers and is usually found wild rather than domesticated for farming like the black and
