    Introduction

    This book contains proven steps and strategies on how to prepare the most succulent, tender, melt-in-your-mouth meat EVER!

    Protein is one of the fundamental building blocks of our bodies and our primary source of protein is the meat that we eat. Meat is without a doubt the cornerstone of the Paleo diet and forms the bulk of almost every Paleo meal. Oftentimes I find myself getting very frustrated, because after all, how many ways are there to prepare a piece of steak? And unfortunately, boredom can spell the end of many a well-meaning paleoites attempts at good health!

    Well folks, you can rest easy now because boredom is a thing of the past! I say this with extreme confidence as I hand you this book – packed full of absolutely lip smacking meat recipes for you to try out that I guarantee will keep the boredom at bay. In addition to popular beef, I have a selection of pork and lamb recipes that will surely excite your palate.

    For those of you with a more adventurous nature or those just looking for something different to spice up the weekly menu I have also included sections with various game meats. Some veal, venison, bison, wild boar or rabbit are guaranteed to add pizazz to any meal.

    Now this leads me into an area of contentious debate – can you really think of a more perfect pairing for any meat dish than a simple roast potato?? Now all you staunch paleo hacks out there DON’T SHOOT ME PLEASE!!!! Potatoes are one of those grey areas that can be debated for weeks – literally! Those against their inclusion say that potatoes are a product of agriculture and as such would not have been available to our Paleolithic ancestors. Furthermore, they cannot be eaten in their raw state and they contain awful plant chemicals and compounds that do outrageous damage to our bodies when not stored and prepared properly. Now technically, yes, they would be right, but the compounds do harm only if you are sensitive to those specific foods.

    The other school of thought points out that potatoes are as much a paleo food as tomatoes and peppers are, all being members of the Nightshade family, and that if they had existed when our Paleolithic ancestors were alive they most likely would have been eaten.  The Paleolithic era ended around 10,000 BC and the first potatoes were domesticated between 8000 and 5000 BC. They are whole foods, contain a ton of useful nutrients and if you really want to split hairs, the cooking process destroys all those nasty chemicals that the Paleo-Police are banging on about.
