Chapter 1: Oh so Awesome Breakfast Meals
Breakfast is the most important meal of the day. Without eating a proper breakfast meal, you would certainly feel tired and spent even if you haven’t done enough for the day. To prevent that from happening, you have to try these awesome dishes below!
1. Sunshiny Omelet
(Makes 2 servings)
(Start your day right with an amazing and warm omelet that’s sure to keep you pumped for the day!)
Ingredients:
—1 tsp olive oil
—2 large range-free eggs, scrambled
—2 green onions, diced
—2 small organic tomatoes
—1 cup fresh spinach leaves
—½ fresh avocado, sliced into small pieces
Directions:
—In a non-stick pan, heat some oil and sauté the onions until they are tender.
—Add the eggs and cook for 2 minutes in low heat before adding the rest of the ingredients.
—Fold the omelet and flip it. Cook until eggs are well-done.
—Serve and enjoy!
Health Benefits/Fun Facts:
—Did you know that a man named Howard Helmer has 3 Guinness World Records for making 427 omelets in just 30 minutes? Wow!
—Range-free eggs are great so you can be sure that they’re clean and healthy.
—Avocados are quite beneficial because they are a good source of fats (the healthy kind), and good sources of dietary fiber, too! Because of this, cholesterol production in the body can be reduced and other diseases such as heart problems and stroke can be prevented, too!
—Green Onions are better than their contemporaries because they are good for bone health.
—Green Onions are also full of Vitamin A that is essential for great eye health and can also protect the immune system and the heart from various diseases—and that’s mainly the reason why you shouldn’t take green onions for granted!
2. Macon and Avocado Omelet
(Makes 2 servings)
(Use Macon, instead of Bacon, because it is made from Mutton and is healthier than pork)
Ingredients:
—1 avocado
—Macon slices
—1 Tbsp fresh cilantro, minced
—1 Tbsp red onion, minced
—4 eggs
Directions:
—Cook the bacon until it is crispy. While the bacon is cooking, crack the avocado open. Remove the pit, and then scoop the flesh out and place it in a bowl. Mash until it reaches your desired
