    Cake mixes are extremely high in sodium b/c of the instant "pudding" added to these concoctions. Emulsifying salts are terrible tasting and if you need these added to the pile of sawdust you bought out of the Betty Pillsbury section, congrats for tucking into a Super-Moist slice of floor sweepings held together with glue and infested with five-ten times the sugar needed to make a good cake.

    For the Shreikees who're going to start stuttering about just make it from scratch and add the extras, formulations made with box mix are not created for the chemistry of a genuine pastry. Those emulsifying salts, palm solids, soy lecithin, invert sugar and other components that make these approximations of food such a quick fix are also what makes a recipe for a scratch base cake and a mix incompatible.

    When Kitchen Re-assemblers go ga-ga for jazzed up bonemeal in a box, that's not baking. What Kitchen Re-assemblers fail to account for in their blind crusades to save time and blah, blah, blah, single mom, blah, blah, is that a good cake barely takes any time to mix up.
