Savory meat pies date back as far as 9500 BC, but they are perhaps most recognized by their popularity in medieval times. Savory fillings for meat pies have come a long way since their consumption during the Middle-Ages, however, when magpie was the most frequent source of protein!
It wasn’t until 1440 that the pastry of savory pies was perfected by the French and Italians, but even with a delicious crust, it took a while for savory pies to catch on worldwide. As they spread in popularity, various cultures added their own touch to meat pie fillings creating a range of localized recipes.
Part of the popularity of meat pies throughout history is due to their portability as well as their ability to keep foods preserved under thick crusts. When they were taken to the America’s by the British, savory pies took a while to catch on, not becoming popular until the 1800’s. Even once accepted in the America’s, savory pies were soon overthrown for the more preferred sweet pies.
Despite not being as popular as they once were, savory pies are still a staple in some cultures worldwide offering affordable and portable hearty meals.
The Importance of Pastry
As exemplified by the concentration of the French and Italians, pastry is a crucial part of a delicious savory pie. Unlike many foods, the perfect pastry does not simply rely upon a good recipe.
