But before we delve into the wonderful world of Japanese hot pot cooking, we should explore exactly what hot pot is.
What is a Japanese Hot Pot?
Japanese hot pots are a tantalizing mixture of foods such as vegetables, seafood, chicken, beef, pork or noodles that derive their incredible flavors from simmering in a scrumptious broth. The term ‘hot pot’ refers to the metal pot that these foods simultaneously cook in. This pot is generally kept at a simmering or boiling heat throughout the cooking process.
Hot pot recipes have an intermingling degree of flavors, with each new layer providing a burst of tasty goodness. The layers are simple, but essential to these recipes. We start with our broth, then add foundation ingredients (these are the basic dish ingredients), main meat or vegetables, your choice of flavors and finally your garnishes. Each layer intricately works to enhance the other, providing a medley of flavors in each dish. Many Japanese hot pot recipes will also call for a side or dipping sauce to accompany the meal and enhance the flavors further.
Due to the beautiful warmth these dishes provide, Japanese hot pot meals are generally cooked and consumed in the colder months.

These flavorsome, humble and hearty meals were perfect for families who wanted to fill tummies on tight budgets. Back then, meat such as beef was quite pricey, which meant that the method of mixing together more economical meats such as pork was an option that appealed to many.
