Philippine Eggplant Omelet Ingredients: 6 eggplants half a kilo of ground beef 4 cloves of garlic, crushed 1 onion, chopped 1 tomato,

chopped 2 bay leaves 6 to 7 eggs cooking oil salt & pepper Procedure: 1.Grill your eggplants over charcoal or oven until shriveled and soft, about 10 to 15 minutes. 2. Put the eggplants in a basin with cold water to facilitate your task of taking of their skin. Flatten each eggplant with a fork . 3. In a bowl mix the rest of ingredients: ground pork, garlic, onion bay leaves,tomato and bay leaves. 4.Beat the eggs. 5. In a plate put the eggplants and then,put on the top your meat stuffing and pour over some beaten eggs. 4. Heat a pan and put your cooking oil. Fry the eggplants. Carefully flip the eggplants using a spatula to cook the other side. ENJOY!
