Su means good and Baya means divine agreement, so some villagers dene the name as a place that is safe from all sorts of danger. Historically, the villagers came from the northern coast of Singaraja but chose to reside in these

In the seventh month of the Balinese pawukon calendar the village community of Subaya holds a ceremony known as the Usaba Desa, which takes place at the villages Bale Agung Temple. This rite is associated with the series of Pujawali ceremonies in the village, with offerings presented to
the deities Ratu Sakti of the Puseh Temple, Ratu Ngurah of the Mende Temple and Ida Batara of the Bangsing Temple. At the height of the celebration last year, sacred dances were performed from 7 p.m. until midnight. Among the sacred dances were the Baris Truna, Rejang Adat,
hills due to an inter-village war that broke out on the coast and because pirates frequently came to loot their village. Currently there are 1,205 inhabitants within this traditional village, one administrative banjar, and one village head.

Baris Gede, Baris Jojor, Baris Presi, and the Baris Dadap. Their costumes resembled that of common Baris dances, yet the facial decorations were much simpler and done without the special makeup features that are so common in ceremonies held in Denpasar. The following morning, villagers brought towering gebogan arrangements lled with various fruits to the Bale Agung Temple that is located in the village center. Traditional guards known as pecalang were on patrol to secure the processions, while four rain stoppers were busy carrying out their duties to ensure clear skies over the course of the ceremony. The sacred dance of Darpana, performed by village youth, marked the start of the Usaba Desa. They presented offerings to the village elders, followed by igel wayah

featuring an ear dance. Ketut Suar, the village administrative head of Desa Subaya, explained that only village leaders or elders who have been puried and are sitting at the Bale Pesamuan hall are allowed to perform this dance. Next was the Baris Truna dance performed by young unmarried village men in simple costumes. Rejang Adat was presented by village maidens and then Baris Gede, which features spears and intricate costumes, was performed by village adults. There were also several other types of Baris dances presented at the ceremony including Baris Jojor, which resembles the Baris Gede dance but with the spears only carried on shoulders, attributed to battles of the past. A round horned shield is
characteristic of the Baris Presi, with choreography that differs largely from the Baris Gede and Jojor, as it features moves that are more uid and the performer occasionally smiles during his performance. The Baris Linjong dance followed, which was similar to the Baris Presi in featuring a shield, but a more elongated version. Finally, youths dressed as a civil guard, a gambler, a barong made
out of cardboard, and a drunkard performed acts in the temples central courtyard. Their operetta presented episodes inspired by daily life where a drunkard and a gambler were raided by a civil guard. As a nale, the Subaya villagers conducted prayers at the Bale Agung Temple, asking for blessings and welfare for a better and balanced life. By Anggara Mahendra

t was a bright and sunny morning just after the Easter weekend when I stepped into the lobby of the W Retreat & Spa Bali - Seminyak. Although

I soon saw another fresh face enter the lobby Whitney Pozgay, designer of the label WHIT, dressed in a cute black and white sundress from her line. It was no coincidence to see her there, for indeed we were gathered specically just to meet
her. The up-and-coming designer had traveled all the way from New York to garner inspiration from this tropical paradise.

Whitney Pozgay was selected to participate in the program, and if youve never heard of her I wager you will soon. Important gures in the fashion industry have undoubtedly taken notice and this is just the beginning. Her Spring 2013 collection was full of unique silhouettes, bright colors, and eye-catching patterns that would denitely look at home in Bali. W is helping promising designers

Songket fabric requires more time and energy due to the special silver or gold colored threads woven into the patterns, so prices for those fabrics can start at about Rp. 1,300,000. Once these beautiful fabrics reach Jakarta or beyond they can go for much more. Jakarta women love when Indonesian fabric or craft conventions are held on their home turf, and they will easily snatch up pieces like these for Rp. 3,000,000 or more. Often times these ikat fabrics are worn in a traditional way for weddings and social events, other times they are brought to seamstresses and transformed into modern skirts. Trendy ikat and

We visited the Werdhi Budaya fabric factory, which has been in operation since 1982. Whitney was quickly ushered into the production area to learn all about the processes from two lovely and friendly Balinese women. I hovered out front near the shop for a bit to chat with a kind man named Pak Sena, who explained to me that for simple patterns a single piece of

We were headed to Klungkung specically in search of traditional ikat fabrics. The Klungkung area is reachable by car, about two hours drive from Seminyak, a bit more if you hit trafc along the way. In this specic area of East Bali fabrics are

was quite enthusiastic as she chatted with the local women and certainly seemed inspired when seeing the real deal. In recent years ikat has exploded onto the international fashion scene and you can see ikat patterns on everything from blouses to bags to armchair upholstery. Of course, these are all printed and not woven the traditional way. I hope that one day ikat origins will be more common knowledge, so that rather than being referred to as some cool ethnic print people will know that ikat designs are passed down through many generations, crafted for months by the nimble songket skirts that you see nowadays require about 1.5 pieces of fabric. After my chat with Pak Sena, I entered the area housing the wooden looms where ten or so women sat weaving gorgeous ikat and songket. I marveled at the open air space and the turquoise, cherry red, tangerine, royal purple, and fuchsia pieces in progress. With friendly smiles the women allowed me to watch their weaving process, done with such speed that it looked to be second nature. Some seemed amused to see my in-awe face, which I just couldnt help. It was more like a chilled Gazpacho by the time I was ready to stop admiring the intricate pattern on the soup surface
inscribed using cream of cucumber, mint and yoghurt. It tasted delicious, with the broccoli and spinach blended smoothly enough to allow repeated mouthfuls. It was so easy to drink (maybe this is a good tip for the parents out there invest in a blender if you want your kids to eat their greens)! What was especially appealing was that there werent any overpowering spices added to disguise the taste of the vegetables. The design was a representation of the interconnectedness of the 7 chakras, perhaps a gentle reminder

Typically Ubud is famous for its suckling pig or crispy duck, so Petani has created their own hybrid called Suckling Duck. The other local dishes comprise simple food that farmers

that we were in yoga-loving Ubud and next door to the Yoga Barn. The next dish to come out was the nasi bungkus, beautifully wrapped in its trademark banana leaf. Help from the waiter was enlisted to unwrap the gift with minimal disturbance to its surrounds. Such surrounds included chicken satay, chilli egg, sh sambal matah, tofu and tempeh, crackers and more chili. The variety served as a brilliant introduction to traditional Indonesian ingredients and the combination of avors and spices were foreigner friendly too, making the introduction to local cuisine a very smooth and tasty one. Of course there was the option of adding in extra heat if desired, with the extra chilli on the side. The banana leaf performed its role elegantly, maintaining the moistness and freshness of the rice and allowing the avors in the lauk to infuse naturally into the dish. another course was justiable. As an introduction to Indonesian delights this time, the Local Sweet Temptation was the perfect choice. Containing a selection of six bite-sized portions, the colorful platter of earthy textures was divided evenly. The manis klepon, or rice our cake, came in the shape of a perfect square with the consistency and appearance of hardened green jelly. Rolled in coconut, the palm sugar sweetness was offset. Perhaps it was the inuence of the pandanus and suji leaves hiding in the dish? The pisang goreng, a childhood favorite, was different from the usual battered variety. Their preparation gave the banana fritters a delicate appearance, and the generous sprinkles of cinnamon rather than sugar were also welcomed. The bubur injin (black rice pudding) was akin to Japanese red bean sweets, with a depth of sweetness that really satises. Judging by the expressions

A close second in my book that never fails to leave me happy and satised is the legendary Sop Buntut Borobudur. Mention Sop Buntut Borobudur to any Indonesian and it is likely that they will know exactly what you are talking about, especially if they have ever lived and worked in the Jakarta area. The recipe is decades old and

HUMBLE BEGINNINGS
This particular recipe for oxtail soup comes from the Bogor Caf at Hotel Borobudur, hence the name Sop Buntut Borobudur. It is said that the soup was rst sold by a street vendor right outside the hotel in the 1970s, and it was so delicious that they asked the vendor to come inside and cook in the kitchen of the Bogor Caf.
I say this dish is denitely worth pulling out your brave card and having a go. Put your preconceived notions aside because in all honesty it is not as scary as the name might suggest. Hearty and comforting, the dish consists of a savory broth and meat that is tender and juicy. When done correctly, the meat

three menu items came with a side of white rice, emping crackers, acar (Indonesian pickled salad), extra chili sauce, and a lime. I was quite happy with the size of the oxtail pieces in my soup. The broth was steaming hot and the savory nature of it made the white rice a perfect accompaniment. The Fried Oxtail was delightfully crispy but surprisingly not oily, and the rich avor of it tasted great combined with the acar, which helped to lighten up the palate. As for the Grilled Oxtail it was tender, sweet, and fell right off the bone. We were some very happy campers at the end of that meal, to say the least. friend in Jakarta recently asked me about family friendly accommodations in Bali. She wanted to

Seven minutes starts from now. AndGO! At once they scattered, searching under

Watching the children made me think about my experience earlier that day at breakfast. Ill admit that I had been a bit pre-occupied with their expansive buffet, but I do remember noticing many families. Some had small children and some had teenagers, but they were all as absorbed with the impressive spread as I was. I recalled seeing one of the chefs help a small boy with a plate that looked too big for his little hands. After relieving
him of the loaded plate, the small boy immediately took the chefs hand and they walked together back to his table. It was one of the most heartwarming scenes I had witnessed in quite some time.

A TREASURE UNEARTHED
For centuries, Bali has been a most wanted destination. As early as the year 1597, when the Dutch rst landed in Bali, Cornelieus Houtman dealt with the problem of his sailors refusing to leave the island to sail back to their country. They believed they had found their dream home in Bali. A similar reaction came from the French nobleman Henri de la Falaise in the early 1930s. He had sailed for 32 days to reach the island and was so stunned by the beauty of its nature, the richness of its culture, and the hospitality of the Balinese people that he was inspired to make a movie of it. However, instead of making a documentary about the island he decided to make the rst romance movie set in Bali, which was later distributed by Paramount pictures. In 1935 the lm Legong (dance of the virgins) was released. It was a sensation, and what made people crazy about it at the time was the beautiful landscape, the gamelan (Balinese percussion) and the dancing. Since then everyone from artists to the rich and famous have selected Bali as their holiday destination of choice. A unique fact about the island is that even after a disaster, the recovery takes only a short amount of time. According to locals, when Mount Agung erupted some visitors decided to stay to witness the eruption and continue their holiday in Bali. Several days after the eruption, small rocks produced by the eruption became the best selling Balinese souvenir. Why did the visitors stay? It was not only due to the novelty of the situation, but according to several publications it was because of the Balinese hospitality, the culture, and natural landscape that helped make visitors feel comfortable about staying on the island.
UPS AND DOWNS

World War II was obviously not good for tourism in Bali. But after Indonesias independence the Indonesian government had the Ngurah Rai airport built as well as Balis rst hotel, The Grand Bali Beach Hotel located in Sanur. It was an amazing moment for the islands tourism industry. However another downturn happened in 1963 with the eruption of Mount Agung.

In 2010 the number of visitors to Bali reached nearly 2.5 million and is expected to grow even more in the years ahead. The government is trying hard to build the infrastructure necessary to accommodate this inux of visitors. The construction process of course brings side effects that can cause inconvenient situations. But lets be positive and think of this as us being able to witness a transformation. The island is about to become a tourism destination that will be able to accommodate all the needs and desires of its visitors. As long as the

kitchen utensils featuring a mortar and pestle, weighing scales, teapots, copper pots, and gold embossed storage jars. I half expected an old sage to emerge from behind the counter. Instead, an Indonesian woman named Nonik appeared to share the ancient wisdom handed down through generations. The four ingredients of kunyit asam were displayed in copper pots. Especially designed for women, the healing properties of kunyit asam are that they improve digestion and skin condition, help with weight control,
medicine rituals and offers jamu classes for guests. Dala in ancient Sanskrit means leaf, which is heralded as a source of nutrition and provides shelter and nurturing qualities. When you step into Dala

and support the immune system. Unravelling the scroll, the key ingredients can be matched with the raw versions displayed on the counter. Noniks ne chopping of the peeled turmeric and the release of its fragrance gave a little hint of the taste to follow. The true identity of the sticky toffee ball in the next pot was then revealed as tamarind paste, scooped directly from its bean pod. Local palm sugar and sea salt add the nal touches to the blend. All four of these ingredients were added directly into a kettle, and after boiling and a settling period the brew was ready for sharing. The transfer from the kettle to the elegant silver teapot required a sieve to catch the mustard-coloured sediment. With a preparation time of only 20 minutes and no pots and pans, the simplicity holds much appeal!
Direct to the neighboring spa lounge, the Espresso-sized burnt yellow brew was delivered to the hessian-covered pod chairs. Usually prescribed rst thing in the morning, either warm or iced, the taste is surprisingly nurturing and easyto-drink. With a woody, chestnut nish, the accompanying bite-sized cashew nut cookie was a perfect combination for the drink. Traditionally from Java, there are ve main jamu recipes that utilize the staple ingredients of tamarind, turmeric, cloves, cinnamon, ginger and galangal. The latter is a new discovery, resembling the appearance of a mini clump of ginger with a unique fresh fragrance. Depending on the blend, the jamu remedy can be preserved in the freezer for a few days. Though the Javanese are the main consumers,
Nonik explained that a local Balinese jamu recipe includes kayu manis chlorophyll. Green in color, it is often disguised in ceramic cups. As I sat back and caught a glimpse of the heads of the practicing yogis in the distance, my mind drifted into thoughts on the similarities between such ancient traditions as jamu and yoga. t was 3 p.m. when I arrived at the Tanjung Bira harbor after ve hours on a bus from Makassar. For only Rp. 70,000 the air-conditioned bus was
transportation among villages, known as pete-pete, doesnt operate after midday, so I had to walk with my heavy backpack for two kilometers from the harbor to the touristy side of Tanjung Bira. These kinds of things always seem to happen when you go out looking for adventure! Tanjung Bira is not as crowded as Bali, so you can easily nd guesthouses and cottages around the beach area. The day before I
traveled to South Sulawesi I had called Nini, the friendly owner of Sunshine Guesthouse, to make a reservation, as many of my friends had recommended this place for its great view of Bira from above. After chitchatting with Nini and having a brief rest, I decided to go to the beach. I was eager to see whether the rumors were true about the sand at Tanjung Bira beach, which people
quite comfortable nice enough for me to fall asleep for half of the trip. As I disembarked from the bus Tanjung Bira welcomed me with clear blue skies and very bright sunshine, and immediately I began to sweat. Unfortunately for me the local

say is as ne as our. In Indonesia we recognize many kinds of beach sand such as black sand, white sand, pink sand or even sand that looks like pepper. But at Tanjung Bira I must say that the sand felt different from any other sand Ive touched. It was indeed soft and white, just like our, and when wet it was like holding cookie dough. Not far from Tanjung Bira is a small island called Liukang Loe.
Tourists who want to snorkel can get a boat ride from local sherman and then swim around the island. As for those who wish to go deeper into the sea, Bira also has a dive center. If youre not interested in getting wet you can just walk along the beach, especially at dusk when the blue skies slowly turn to orange. The west side of Tanjung Bira is lovely place to enjoy a romantic sunset moment with a special someone.
INCREDIBLE PHINISI
Two years ago, I watched a documentary about a Phinisi boat maker in Tana Beru, a village in Bulukumba that is about 20 kilometers from the beach. Phinisi are traditional Buginese sailing ships that have two main masts and seven sails. Phinisi are very tough ships that have been used for transportation around the archipelago since the 1500s and

the Buginese have their own unique way of building them, which involve many traditional rituals. There is always one leader who is designated the punggawa, whose main job is to supervise the whole project. To build a Phinisi that can survive the hazards of the ocean, they have to follow very specic rules and guidelines that have been passed down from their ancestors. Every step is very crucial. It starts with choosing an auspicious day through traditional calculations in order to
start looking for wood. The wood is processed with simple equipment and then spliced into a boat. Believe it or not, the Buginese are able to build these enormous Phinisi ships without any blueprints or computerized systems. It all comes from their head and their skilled hands. It takes about one year to nish building a single Phinisi, depending on its size. When I decided to travel to South Sulawesi I made a promise to myself to go to Bulukumba and
watch the making of these fantastic ships. I found that I needed to rent a motorbike to go to Tana Beru because I could not count on the petepete, but then Nini told me of another solution if my time was limited I should just visit Tanetang village because I could easily nd a Phinisi maker there. All I had to do was walk through the harbor and go east. I woke up early and followed Ninis instructions. The east side of Tanjung Bira was abundant with shermans houses and I found the

sand wasnt our-like as it was in the west. After a little more than a kilometer of walking from the harbor to Tanetang village I nally found what I was looking for. Two big ships were being built right on the beach! It was really amazing to see how the workers, young and old, looked so tiny compared to the giant ships. But their skills had undoubtedly been passed down through the generations. A friendly old man explained to me that the Phinisi ship they were
working on was to be sold to a foreigner from Europe. Nowadays, Phinisi ships are often used for commercial luxury cruise purposes, and although they have additional modern comforts, the Buginese never stray from the traditional rules in constructing them. They do this not only to maintain the unique beauty but also to conserve their heritage as Phinisi ship makers. While I wasnt able to make it to Tana Beru this time around, I still hope to go there some day, just like in the documentary.
If Im lucky Ill be able to watch the ceremony where newly constructed Phinisi are launched into the sea.
LOCAL DELICACIES
Dare to try the local food? Coto Makassar is the dish I was most eager to try when I arrived in South Sulawesi. It is a beef soup that contains innards such as intestine, liver, lungs or sometimes even brains, so beware if youre watching your cholesterol level! Coto is served with ketupat, which is steamed rice

wrapped in banana leaves. I have to say that I really loved this beef soup it was so tasty and spicy. At the end of my journey I couldnt help but stop for another bowl of coto before I left. Not interested in beef innards? You can try another popular delicacy made from dry noodles called mie titi. These noodles are rst boiled and then fried until dry and crunchy. Add the special sauce made from cornstarch and voila! Its ready for you to devour. There is something very unique about eating in South Sulawesi. Wherever you go, fresh-cut limes will always be provided at your table. This was intriguing to me because I saw this even at a little fried rice stall. According to Makassar locals, limes give freshness to whatever food you eat. It seems as though it has become one of their condiments of choice! Before you leave dont forget to try their delicacies made from bananas. The locals grill bananas over charcoal then rub them with palm sugar. Known as pisang epe, they taste great with pineapple jam

Call an ambulance by dialing 118, but it is a lot more practical and quicker to hire a taxi. Most hotels have on-call doctors on standby. For Bali Belly, Lomotil and Imodium eliminate symptoms, but not gastro-related infections. A fever along with symptoms requires doctor-prescribed antibiotics. Drink as much liquid as possible. Isotonic drinks under various brand names are widely available and are known to replenish body hydration and replace uids. For discomfort, diarrhea and cramping, drink strong, hot tea; avoid fruits and spicy foods. Some day-biting mosquitoes carry dengue fever, but this is not a problem in tourist areas. Bali is non-malarial and prophylaxis is not required. Mosquito bites, cuts or abrasions easily become infected in the tropics. Treat them immediately. Drink only bottled or boiled water. Peel fruit before eating; avoid raw vegetables except at reputable restaurants. Ice in restaurants is safe. Protect yourself from the intense equatorial sun. Use high SPF sunblock and a hat. AIDS and sexually transmitted diseases are increasing in Indonesia. Local sex workers have multiple partners from around the world. They are not checked for sexually transmitted diseases. Act responsibly and use condoms, available over the counter at pharmacies.
