Savory Ham Balls are a nice twist on the classic meatball, using ham, ground pork, and minced

onion. They're perfect in just about any recipe, or great by themselves as an appetizer. Prep Time: 25 minutes Cook Time: 40 minutes Total Time: 1 hour, 5 minutes Yield: 30-35 meatballs Ingredients:

2 tablespoons olive oil 1 onion, finely chopped 3 cloves garlic, minced 2 eggs 2 tablespoons milk 1 cup soft whole wheat bread crumbs 2 tablespoons honey 2 tablespoons Dijon mustard 1/4 teaspoon salt 1/8 teaspoon pepper 1 pound ground cooked ham 1 pound ground pork

Preparation: Preheat oven to 350 degrees F. In small skillet, heat olive oil over medium heat. Add onion and garlic; cook and stir until very tender, about 6-8 minutes. Place in large bowl and let cool for 10 minutes. Add eggs, milk, bread crumbs, honey, mustard, and salt and pepper and mix well. Add ham and pork and mix with hands until blended.

Form into 1-1/2" meatballs and place on baking sheet with sides.

Bake for 35-45 minutes or until a thermometer registers 160 degrees F. You can glaze these meatballs with a purchased sweet and sour glaze, or use them in sandwiches or pasta recipes. They also freeze well; cool completely and freeze in a hard-sided freezer container up to 3 months. To use, thaw overnight in the fridge, then gently reheat in a saucepan with glaze or sauce until hot.
