FAGIOLIN I IN U MID O

1/4 cup ext ra virgin olive oil (59ml) 1 onion, chopped 2 dried chili pepper, crushed (optional) 2 cups plum t omat oes, peeled ( 500ml) salt to taste 1 1/4 lb string beans, t ips t rimmed (571g)

To start your Fagiolini in Umido:


Heat up olive oil in a saucepan. Add onions and chili pepper and st ir. Cook unt il onions are translucent and soft . Then add the t omatoes and salt . Wit h t he back of a w ooden spoon, br eak up t he tomat oes int o litt le chunks. Add t he string beans to t he pan, cover w it h lid and let simmer f or 10 to 15 minutes. Serve hot or at room t emperature. Per 4 persone
