Dirty carpets Trash and old food stuffed in the seats Debris left on the table and hasnt been cleaned out Blinds are filthy Dirty dishes all over the kitchen and counters When the chef smoked he didnt wash his hands Fryer was old, dirty and burnt. Chef knocked it against the inside of trash can Nasty old sauce being used on food Sauce jar fell on floor Kitchen is cluttered and a huge mess Food is not being cooked to temperature Chef was drinking while preparing foods and personal hygiene was not to standards The fridge was full of rotten, moldy, improperly wrapped and labeled foods. Walk-in floor was soiled Meat was in bowls to thaw improperly The bathroom had never been bleached and was covered in bodily fluids Sausage links from super bowl Sunday Raviolis in slimy old water uncovered Sending out raw foods twice Using incorrect proportion sizes

At the end of the day, sweep the floor and mop under everything Clean under the chairs and between the seats after every customer and end of shift Have the staff clean the tables properly, possibly hire a table busser/dishwasher Create a schedule for deep cleaning days Clean up as you go, put dirty dishes into the wash area Designate times to smoke and make sure staff is doing proper sanitation Have staff trained on proper cleaning and handling of equipment Use a steam table of have an area to hold foods properly for immediate use Have a place for everything so that everything can be in its place and not just anywhere Keep the kitchen neat and organized and filed or things put away properly Make the staff use thermometers or have a timer set to know when things are done from fryer Have staff keep food and drinks set aside from food preparation with a lid Properly wrap, label and store foods after opening or for storing. Sweep and mop out floors daily to prevent contamination Always thaw out meats properly according to regulation Do not keep old foods. Throw out after 7 days Throw food out after 7 days and properly store until then Have staff trained on proper temperature requirements for food Send it out right the first time Create a portion control to control price cost and food waste/shortage

One year later Nyla had made some really great changes for the restaurant. She fired and hired multiple staff including Q from a previous KN episode Sebastians. Drew had left Casa Roma. Her son Jeremey is no longer part of the managerial part anymore. The kitchen is very clean and re organized, the dining room is full, seating an average of 28 tables instead of 2 nightly. They transformed the menu more and got rid of the crappy stuff. Nyla was presented with a certificate from the community for her contribution.
