C a r o t e n o i d s a r e n a t u r a l o r g a n i c p i g m e n t s d e r i v e d f r o m p l a n t c o m p o u n d s . C a r o t e n o i d s a r e a c l a s s o f o r a n g e , r e d a n d y e l l o w a n d c o n t r i b u t e t o t h e p i g m e n t i n m a n y f r u i t s , v e g e t a b l e s , p l a n t s a n d a n i m a l s .

T h e b e n e f i t s o f c a r o t e n o i d s a r e e m i n e n t b y t h e i r a n t i o x i d a n t p r o p e r t i e s w h i c h m a y l o w e r t h e r i s k o f m a n y t y p e s o f c a n c e r s i n c l u d i n g l u n g c a n c e r . W h e n c a r o t e n o i d s a r e c o n s u m e d i n f r u i t s o r v e g e t a b l e s t h e y a c t a s f r e e r a d i c a l s c a v e n g e r s a n d h e l p r e d u c e o x i d a t i v e s t r e s s t h a t c a n l e a d t o s e v e r a l t y p e s o f c a n c e r . F i r s t s t u d i e s o f c a r o t e n o i d s d a t e b a c k t o t h e b e g i n n i n g o f t h e 1 9 t h c e n t u r y . C h e m i s t s w e r e f i r s t i n t e r e s t e d i n s t u d y i n g c a r o t e n o i d s b e c a u s e o f t h e i r b r i g h t c o l o r s a n d p r o p e r t i e s . B e t a c a r o t e n e w a s f i r s t i d e n t i f i e d i n 1 8 3 1 b y W a c k e n r o d e r . C a r o t e n o i d s a r e c o n s u m e d i n m a n y f r u i t s a n d v e g e t a b l e s s u c h a s , c a r r o t s , s w e e t p o t a t o e s , b u t a l s o s e e n i n p i g m e n t s o f f i s h s u c h a s l o b s t e r a n d s a l m o n , a s w e l l a s b i r d s t h e p u f f i n a n d f l a m i n g o . R e s e a r c h h a s s h o w n m a n y s t u d i e s t a k e n t o l i n k t h i s m e c h a n i s m o f b e t a c a r o t e n e a n d i t s a n t i o x i d a n t p r o p e r t i e s t o r e d u c e t h e r i s k o f l u n g c a n c e r . O n e s t u d y c o n d u c t e d h a d t h e f o l l o w i n g t h e s i s o f s t u d y , O b s e r v a t i o n a l e p i d e m i o l o g i c a l s t u d i e s s u g g e s t a n a s s o c i a t i o n

b e t w e e n h i g h e r d i e t a r y l e v e l s o f f r u i t s a n d v e g e t a b l e s c o n t a i n i n g b e t a c a r o t e n e a n d a l o w e r r i s k o f l u n g c a n c e r , ( c o r t e z ) . T h e o v e r a l l o b j e c t i v e o f s t u d y w a s t o s e e i f t h e a n t i o x i d a n t b e n e f i t s f r o m c o n s u m i n g b e t a c a r o t e n e i n f r u i t s a n d v e g e t a b l e s w i l l h e l p l o w e r m o r t a l i t y r a t e s i n p e o p l e w i t h l u n g c a n c e r . S t u d i e d p o p u l a t i o n i n c l u d e d , r a n d o m i s e d c o n t r o l l e d c l i n i c a l t r i a l s c o m p a r i n g d i f f e r e n t

v i t a m i n s , m i n e r a l s u p p l e m e n t s o r s u p p l e m e n t s w i t h p l a c e b o , a d m i n i s t e r e d t o h e a l t h y p e o p l e ( c o r t e z ) . T h i s s t u d y p o o l e d r e s u l t s f r o m a r a n d o m e f f e c t m o d e l a n d h a d a 9 5 % c o n f i d e n c e . T h e m a i n f i n d i n g s f o r t h i s s t u d y w a s t h a t p e o p l e w h o s m o k e d a n d w e r e e x p o s e d t o a s b e s t o s w e r e a t h i g h r i s k o f l u n g c a n c e r c o m p a r e d t o p l a c e b o . B e t a c a r o t e n e i n t a k e s h o w e d a s m a l l b u t s t a t i s t i c a l l y s i g n i f i c a n t h i g h e r r i s k o f l u n g c a n c e r i n c i d e n c e , l u n g c a n c e r m o r t a l i t y a n d f o r a l l c a u s e s m o r t a l i t y .

A n o t h e r w e l l k n o w n s t u d y i s t h e b e t a c a r o t e n e a n d r e t i n o l e f f i c a c y t r i a l s t u d y . T h i s s t u d y t e s t e d t h e r i s k o f l u n g c a n c e r f o r m a l e s m o k e r s o r m e n e x p o s e d t o a s b e s t o s w h i l e w o r k i n g . T h e t e s t i n v o l v e d s u b j e c t s v o l u n t a r i l y t a k i n g a b e t a c a r o t e n e s u p p l e m e n t . B l o o d V i t a l s w e r e t a k e n b e f o r e a n d a f t e r a n d s t u d i e d . T h e s t u d y w a s s t o p p e d b e c a u s e t h e r e s u l t s s h o w e d a n i n c r e a s e i n l u n g c a n c e r r i s k a m o n g t h e m e n w h o s m o k e d o r w e r e e x p o s e d t o a s b e s t o s a n d r e c e i v i n g t h e s u p p l e m e n t s . O t h e r s t u d y t o o k o v e r a n d f o u n d t h a t t h e i n c r e a s e d l u n g c a n c e r r i s k w a s o n l y s e e n i n t h e h e a v i e s t s m o k e r s , t h o s e m e n w h o s m o k e d m o r e t h a n t w e n t y c i g a r e t t e s p e r d a y . T h e y a l s o f o u n d a n i n c r e a s e r i s k w i t h m e n w h o h a d h i g h d a i l y a l c o h o l i n t a k e .
