Goal(s) To educate the audience members about how to plan menus and find recipes that will stretch their budget, along with strategies to assist them in saving money while shopping at the grocery store: a. 14.3 Demonstrate the ability to acquire, handle, and use foods to meet nutrient and wellness needs of individuals and families across the lifespan. i. 14.3.2 Design strategies that meet the healthy and nutrient requirements of individuals and families with special needs. i. 14.3.3 Demonstrate ability to select, store, prepare and serve nutritious and aesthetically pleasing food. ii. 14.2.2 Analyze the relationship of nutrient and wellness to individual and family health throughout the lifespan.

Prior Knowledge Prior knowledge will assessed by asking the participants why they think it would be important to limit the amount of meat in a dish that you are serving to their family? Asking also, what could you add to your dishes to take the place of the meat that you are limiting in your dishes to add protein back into the dish?

3. Learner Outcomes: Upon completion of the lesson plan, participants will be able to determine that beans and rice together make the perfect protein. After the lesson, participants will be able to determine that beans and rice are an inexpensive way to add filler and extender to casseroles, soups and other dishes, as well as add nutrition. After the lesson, participants will be able to determine the cost difference between canned and dried beans, and that dried beans are cheaper, and easy to prepare. After the lesson, participants will have a variety of recipes that utilize rice, beans and other food items easily found at food pantries or are inexpensive if purchased, and to prepare at home for their family.

4. Assessment of Learner Outcomes: Include Depth of Knowledge (DOK). The participants will be surveyed to report back to me the ways that beans and rice can be used as extenders in meals. (DOK Analyzing). The participants will be asked why using beans and rice are a good alternative to adding meat to their dishes. (DOK Analyzing). The participants will be asked to report by surveying them why it is better to serve and cook brown rice over white rice in their dishes. (DOK Analyzing). Also to discuss the price differences between the canned and dried beans, and to discuss if anyone has ever tried cooking with dried beans, how they would prepare them, or how they would use them in their dishes to serve to families.
