Onion Pie 3 c onion -- thinly sliced 1 Tbsp Olive Scene Butter Olive Oil 2 c swiss or gruyere cheese -- grated

1 Tbsp flour 1 tsp salt 1 dash cayenne pepper, optional 3 eggs -- well beaten 1 c milk scalded, cooled Make favorite crust. Press into a 9 inch pie plate. Cook onions in oil until tender but not brown, allow to cool. Place in crust. Combine cheese with flour, salt, cayenne pepper. Add eggs and milk. Pour over onions. Bake in slow oven until set. 325 degrees for about 40 minutes.
