Apple Cake

These little cakes are deliciously moist and packed full of apple. They can be served as a dessert with natural yoghurt and honey
175g 175g 3 !""g 1tsp &tbsp 3 $1!5gm% 5"gm Softened butter superfine granulated sugar Large ggs Self raising flour #aking powder $heaped% 'atural (oghurt )risp *pples candied citrus peel chopped finely

EQUIPMENT

+ cup muffin , cup heart muffin + cup mini savarin #owl whisk baking sheet pan

METHOD

-i. the first + ingredients into a bowl and beat thoroughly for one minute until the mi.ture is light and creamy *lternately mi. in a food processor /uarter and core the apples but do not peel and chop into small pieces Stir into the mi.ture with the candied citrus peel if using a blender mi. in instead place the pan on a cookie sheet. Lightly grease the cups if it is their first use. fill the cups three 0uarters full bake in the centre of the oven for 1! to 15 minutes until they are well risen golden brown and springy to touch at the centre. *llow to cool before turning out
