For this month's Indian Cooking Challenge, Srivalli chose Ulundangali ( Urad dhal halwa which uses sesame oil. She gave us two recipes to try. I opted this recipe which uses equal quantities o rice and urad dhal. !his kali is given to girls at the time o pu"erty. I prepared the kali and had it when ever I was hit with ache and there was a great relie. I haven't asked her a"out the proportions. I ollowed Srivalli's recipe and the result was great. It was delicious as I added $ t"s o ghee along with sesame oil. I you want to make it as halwa, %ust su"stitute the sesame oil with ghee and add some chopped roasted nuts. It will make a great dessert. &ctually %aggery' karuppatti is used. (ut I have used "rown sugar' vellam. )ou can also used sugar instead. !he taste varies according to the sweetener used. Ingredients: *aw *ice' +acharisi,-'$cup Urad .hal,-'$cup (rown Sugar' /ellam,$cups Sesame 0il,1t"s 2hee,$t"s Cardamom +owder,-'$tsp 3ater,$cups Procedure: -. .ry roast rice until golden and puy. !ranser to a plate. $. .ry roast urad dhal in the same pan until golden. !ranser to the plate with rice. 4. 0nce cool, grind dhal and rice together in a mi5er to a coarse powder. 1. 2rate "rown sugar and add -'6cup o water to it. 7. 8eat the mi5ture and keep it on lame until the sugar melts. 9.
