holding a two-day festival called the Sunny Side
Up Tropical Festival! Working in collaboration

Qatar Airways has a new daily non-stop route
from Doha to Bali beginning on July 21. This
route will initially be served by the airlines
Airbus A330 planes (featuring a two-cabin
conguration), but in October this will change
over to a new eet of Boeing 787 Dreamliner
aircraft. For those traveling from Qatars
extensive network in Europe, the Middle East
and Asia, connecting journey times to Bali
will be reduced signicantly with just one
international transfer at Dohas soon-to-be-
opened Hamad International Airport.

The Blue Bird Group has recently expanded
its Taxi Mobile Reservation service to Bali
a mobile application designed to enable
better service when booking Blue Bird taxis.

he Balinese are incredibly
devoted to their Hindu
religion. Theorists
have argued that the
commitment shown by
the Balinese is due to the culture
being merged with the religion,
while believers argue that their
commitment is just part of the
spiritual journey.
There are many ceremonies
that must be performed to show
gratitude toward the universe. Some
ceremonies are performed annually
while others take place twice a
year (based on calculations of the
Balinese calendar). Below is a list
of some of the important Balinese
Hindu ceremonies that are believed
to bring good things to the island.
JANUARY 2014
Tumpek Kandang
The Tumpek Kandang ceremony is
conducted to show gratitude toward
the presence of animals on this
planet, as they are crucial for the
survival of human beings. On this

day, the Balinese wish for the power
of the Lord to bring health to all
animals. This ceremony took place
on January 11.
Siwa Ratri
This is the day that the Balinese
attempt to elevate their awareness
of the role that human beings
play in the universe. This is done
through fasting and meditation. The
ceremony is usually performed for

magnied after performing the
prayer rituals. Tumpek Wayang fell
on February 15.

Saraswati
Sarawsati is celebrated to increase
Balinese peoples awareness of the
importance of knowledge. On this
day, the Balinese wake up early
in the morning to pray at their
schools, universities and houses.

Buda Keliwon
Pegatuwakan
This is a very special day but not all
Balinese take part in the ceremony
(it is mostly just the priests). The idea
of Buda Keliwon Pegatuwakan is to
increase self-control. For 24 hours,
those celebrating this day are not
allowed to talk to anyone. The idea
behind word fasting is to become
one with the energy of the universe.
It is also believed that people who
perform this non-talking ritual will
gain a better understanding of
themselves and a healthier physical
condition. This celebration took
place on June 25.
JULY 2014
Tumpek Krulut
This is the day of love and beauty
for the Balinese. The idea behind
the Tumpek Klurut ceremony is that
God has bestowed upon human
beings amazing lives full of love and
except for certain buildings such as
hospitals, and no one is permitted
to be out on the street. On Nyepi
the Balinese spend time with
family, resting and praying the
entire day. The day before Nyepi
is called Pengerupukan, which is
when the Balinese perform energy
cleansing rituals for their houses
and surroundings. Efgies called
ogoh-ogoh are also paraded down
the streets on this day. Nyepi fell on
March 31 this year.
APRIL 2014
Tumpek Bubuh
On this day the Balinese show their
gratitude to nature. They believe that
to take care of nature is to create a
better home overall. This ceremony
took place on April 26.
MAY 2014
Galungan
Galungan is one of the biggest
ceremonies in Bali. This is the day
the Balinese celebrate kindness
and good karma with their families
and relatives. They start by visiting
public temples and then continue
with praying at their home temples.
Afterward comes a feast attended
by relatives. If you visit Bali during
Galungan, you will see penjor,
the long bamboo poles decorated
with fruit and coconut leaves, lining

beauty, and it is important to show
appreciation for this. On this day,
the Balinese have dance and musical
performances at the public temples.

unique story: In the year 1103 King
Sri Ekajaya (who ruled Bali at that
time) ordered all Balinese to stop
celebrating Galungan. Not long
after, a strange epidemic disease
overtook the island. A year after
the King withdrew the order and
ever since the Balinese make sure to
celebrate Galungan.
Kuningan
See May for explanation. Kuningan
is a day full of love and tenderness.
The Balinese will gather with their
family and have a feast together with
yellow rice as the main food. The
yellow color comes from turmeric,
and the color is meant to represent
wealth. Kuningan will be celebrated
for a second time this year on
December 27.

Ask your accommodations host
to arrange airport pickup for you.
There will be plenty of people
offering their services at the airport
(including taxis), but they are likely
to be overpriced.
Rent a car with a driver if youre
here with family or with a group. Its
the most convenient option for day

Dont attempt using a motorbike
unless you already know how
to drive one. If you must feel the
breeze in your hair, hire an ojek
(motorcycle taxi).
Pak Putus Tip: Wear a helmet
(and wear it properly) if you
do decide to rent a motorbike.

he award-winning Hanging Gardens Ubud resort has recently
undergone a major revamp with facility upgrades, new
independent management, and the fresh face of Chef Adriano
Ricco bringing new culinary concepts and menus to the table.
The dual-level restaurant, spa and 38 pool villas and suites
come dramatically terraced (gravity-deant on stilts) on a 45-degree
angled hillside running down to the Ayung River. All are beautifully
camouaged amongst the natural rainforest and serviced by two resort
funiculars, thankfully! So thats why this boutique luxury resort, secluded
in north Ubud and further downstream from Sayans cliff-perching resorts,
is named Hanging Gardens.
JUNGLE DINNER
It is a relatively long drive to the Hanging Gardens Ubud from the
bustling Kuta and Seminyak areas but well worth it for the stupendous
views alone, including the journey itself bucolic splendor personied.
Be sure to arrive early for pre-dinner sunset sundowners and the dusk
jungle sounds, preferably seated on the newly-expanded outer deck
located on the lower level of the timber-thatched stilt restaurant that rests
above the twin-level innity pool.
The much-lauded pool, which dangles suspended over the rain-
forested ravine, is so spectacular that it was voted Worlds Best
Swimming Pool by Cond Nast Traveler and TripAdvisor.
Proceed upstairs to the open-sided dining room a charming ne
dining meets Balinese rustic from where directly opposite, on the other
side of the ravine, the Penataran Dalem Segara temple hides within
the jungle.
If your senses arent already dazzled enough, then theres the cuisine.
Since the Brazilian chef arrived this year, the restaurant places more
emphasis on increased sustainability and fresh, healthy cuisine with
wellness leanings, albeit absolutely satisfying discerning gourmet diners
(and fussy kids!).
This is possible by way of the estates abundant organic gardens,
which like the rest of the property cling to the slopes for dear life, and
are landscaped to freely follow the land contours down to the riverbanks.

basket of just-picked herbs that he
is using in the kitchen, but laments,
I wish we could grow everything
cooked in the kitchen, but its
impossible. Still, additional quality
organic produce originates from
premium island suppliers.
NEW TWISTS

2013, Chef Adriano comes globally
experienced, Japanese-inuenced
with classic French and Italian
training. Here, his contemporary
fusion cuisine with local, Asian and
Western dishes carries strong focus
on quality ingredients, with a play
on avors and textures.
Some dishes feature innovative
twists on old classics self-confessed
signatures such as starter Hamachi
Ceviche (Rp. 165,000) with fresh
local Hamachi sh blended with
green apples and estate-grown
herbs, red onions, chilies and lime,
topped with Siberian caviar and

Purple Sweet Potato Samosa with

PICK OF THE CROP
Working closely with the head
gardener (his chief adviser and
experienced organic farmer), Chef
Adriano cultivates as much organic
produce, spices and herbs as
possible for his menus, adapting
dishes to what is readily available.
These borderless gardens
continually expand, but currently
yield a vast array including
avocadoes, vanilla, cinnamon,
star fruit, coconut, coffee beans,
lemongrass, cherry tomatoes,
lollorosso, passion fruit, pandan,
kafr and curry leaves, jackfruit,
ginger and basil varieties and more.
In Bali, Chef Adriano is inspired by
what grows around him, but hardly
culture-shocked like other chefs.
Brazil and Bali are on roughly
the same latitude with similarities
in climate and produce, so I can
relate to the tropical ingredients
here. Garden-grown shallots,
garlic, ginger and chilies are my
prime base for stocks, sauces and

by garden produce and whats
seasonally available, experimenting
with home-grown fruits and edible
owers, spices and herbs. Try
singular, refreshing cocktails made
from basil, lemongrass or tamarind,

ALTERNATIVELY
The chef can organize tailor-made
gourmet dinners such as Romance
under the Stars a oating dinner
with champagne served on a central
stone island in the lower pool. But
for a truly magical experience,

chef, butler and live cooking stations
(going back down the valley later by

Bali & Beyond (BB): Could you share
with our readers what JALANAN
is about and your intention behind
making this documentary?
Daniel Ziv (DZ): I spent quite a few
years as a journalist, author and
magazine editor documenting street
life in Jakarta. The citys sub-culture
of pengamen bus musicians who
play their own social and political
compositions was one of the most
colorful, intriguing phenomena I
encountered. I felt it was a story that
needed to be told. JALANAN is an
intimate portrait of three of them, but
its also a portrait of Indonesia at a
transitional, tumultuous juncture in its
recent history.
BB: JALANAN was released in
commercial cinemas in Indonesia
and went strong for 40 days. What
a feat for a documentary!
DZ: Documentaries in Indonesia
dont usually make it into commercial

THE 2013 BUSAN INTERNATIONAL FILM FESTIVAL.
lmmaking, because JALANAN
is my rst movie. But as a fan of
documentaries, I knew that what
made a strong lm was strong
characters, people viewers could fall
in love with and be fascinated by. So
I spent two months hopping on and
off buses looking for street musicians
with powerful personalities, charm,
talent and cheekiness. In Boni, Ho &
Titi I found all of that.
BB: How did it feel to work on
this project for 7 years? Were you
surprised it took so long, or did you
expect it since you wanted the main
characters lives to unfold naturally?
DZ: I never planned for it to take
that long, and probably wouldnt
have started had I known. But once
I did, yes, I realized that if I wanted
to witness the most special, dramatic
events in these three peoples lives,
I needed to be incredibly patient.
You cant force reality to t into a
shooting schedule. So I shot for 5
years and then lm editor Ernest
Hariyanto and I edited for nearly a
year and a half.
BB: What were some challenges you
encountered? Did you ever feel like
throwing in the towel?
DZ: Yes, almost every week! It was
hardest staying patient when I truly
didnt even know where the lm and

cinemas at all, but we showed it
to the two main Cineplex chains
here and they understood it was a
different kind of documentary, and
offered us a 3-day trial run. Then we
launched a pretty aggressive social
media campaign and people started
going to see the lm. Word of mouth
spread like crazy and then it took on
a life of its own even the cinema
chain was amazed.
BB: Why do you think JALANAN
was embraced by audiences? What
particular themes hit home the most?
DZ: I think JALANAN offered a
very human, accessible glimpse of life
in the margins, an intimate encounter
with street people that most middle-
and upper-class Indonesians see
through their tinted car windows but
never get to meet. But it didnt make
them feel guilty, because it was told
in the voices of three very likeable
main street musician characters
Boni, Ho & Titi. Although its about
poverty, its full of humor, hope and
catchy music. It also spoke a lot
about individual freedom, which
I think everyone relates to, and
corruption, which everyone here
is sick of.

BB: How did you go about casting
the main characters?
DZ: I knew nothing about

really been a case of overnight
get-rich-quick super stardom, its
something much deeper: theyve
gone from being marginalized
people without even identity cards,
to receiving public acknowledgement
as heroes of their own life story on
the big screen. Theyve appeared
on national TV and radio, traveled
overseas and appeared at political
rallies. They are discovering that
who they are and what they think
actually means something. And thats
beautiful to watch. As the lmmaker,
Im incredibly grateful the lm has
found such a wide audience and
has already had such political and
social impact. This has reafrmed my
faith in the power of storytelling and
ideas, in the importance of doing
things well and not taking shortcuts,
and in creating things that are
meaningful.
BB: How can our readers watch
the lm?
DZ: Our Indonesian theatrical run
has ended but we still hold special
public screenings across Indonesia,
and well be releasing the DVD and
digital download in August. All our
latest news can be found on our
website and Facebook page.

BB: Back to the topic of moving
hearts and minds, you relocated
to Ubud to work on the editing of
this lm. Could you name some
individuals in Ubud or Bali in general
who have inspired you since youve
moved here?
DZ: So many. I met my amazing
editor Ernest Hariyanto here.
Legendary photographer Rio Helmi
story were headed. At certain points,
people would start wondering if my
lm would ever happen, including
myself. So just sticking to it was
very hard. And editing 250 hours
of footage into under two hours
of coherent, engaging story was
incredibly challenging. Ernest and
I did nine rough cuts and twelve
test screenings before we felt that it
really worked.

BB: Jakarta Governor Basuki
Tjahaja Purnama (Ahok) saw the
JALANAN trailer and arranged for
himself and all senior government
ofcials to view and learn from this
lm. How does it feel to see the lm
moving hearts and minds?
DZ: I never dreamed of impact that
high up or that direct or that fast. I
truly felt I was making a subversive
lm that would be ignored or even
banned by the authorities. So when
Pak Ahok embraced it as a tool to
educate his senior ofcials on more
humane approaches to governing
Jakartas marginalized poor, I was
amazed, and of course incredibly
moved and grateful. Hes a truly
unique politician and leader. When
the screening ended, he was in
tears, and immediately went to the
media and announced some key
urban policy changes. He remains
in close touch with me and all three
musicians from the lm.

BB: How have the lives of the main
characters Ho, Titi and Boni changed
since the release of this lm? And
how has this entire experience
impacted your life?
DZ: For Boni, Ho & Titi it hasnt
has been a dear friend, mentor and
supporter ever since I arrived. Odeck
Ariawan and Tara Murff created a
wonderfully supportive artistic space
for all of us at BetelNut. Daniela
Burr brings to Ubud some of Bali
and Indonesia and the worlds most
exciting ideas through the amazing
TEDxUbud. Janet DeNeefe and
Summa Durie do incredible things
with the Ubud Writers & Readers
Festival. Rock band Navicula
frontman Robi Supriyanto & my
manager Lakota Moira have taught
me whats possible at the juncture
of activism and art. And a new
generation of entrepreneurs and
creatives at Ubuds fantastic HUBUD
co-working space have become my
dynamic ofce mates.

BB: What kind of projects can we
look forward to seeing from you in
the future?
DZ: Ive started writing a new book
about Indonesian identity, in Bahasa
Indonesia, and Im hoping to nish
another (shorter) documentary soon
about transsexuals.

We caught up with the photographer behind this months
FASHION FOLIO to nd out more about the man behind
the lens.
How was it shooting this fashion spread for Bali & Beyond?
It was fun. The concept of the photo shoot was new for me. From
the location, styling and the property that we used it was all
very attractive. I think were all very satis ed with the results.
What was the most challenging part?
Racing against time and the pre-existing conditions. We had to
work around those to get spectacular photos.
How would you describe your photography style?
I think my photography style is high fashion/edgy. But as an artist
and a professional, I have to listen to the client and portray their
product or brand appropriately. From natural style to high fashion,
editorial to commercial, soft light to harsh light I can do it all.
Who are some photographers that inspire you?
There are only three names: Steven Meisel, Patrick Demarchelier
and Annie Leibovitz.
Where are your favorite places to shoot in Bali?
Every place I have shot at in Bali is interesting and unique in its
own way. Bali is the perfect place for photo shoots because it
has it all beaches, elds, forests, mountains, barren hills, rivers,
hotels, villas, restaurants with unique interiors, etc.

TO THE NEW PROPERTY TO SEE WHAT
THIS FRENCH LUXURY HOTEL BRAND IS
BRINGING TO THE ISLAND.

is truly commendable. Despite the
high trafc, never once did they
look ustered. They greeted guests
warmly and sat them promptly,
moved quickly to clear tables,
relieved guests of their food-laden
plates (carrying them the rest of the
way) and helped lost children nd
their way back to their tables. And
they did this all with lovely smiles on
their faces.
If this is the kind of service that
guests can expect when visiting
the Sotel Balis other food and
beverage outlets or when using the
ballroom and meeting facilities, then
they surely wont be disappointed.
LUXURY AT ITS FINEST
The Sotel Bali has 415 rooms
including 17 private villas. Their
standard rooms are known as
Luxury Rooms and there are
398 in total (the rest of the rooms
comprise of suites). These Luxury
Rooms are decked out in an eye-
catching contemporary style, mixing
wooden details with vibrant pops of
color such as teal and orange.
The bathroom boasts a marble
vanity, a rain shower and luxurious
bathroom amenities. It is separated
from the bedroom by a beautiful
wood-carved sliding door inspired
by Indonesian batik. The bedroom
has a cozy corner sofa for lounging
and wall paneling that is reminiscent
of Japanese origami. Out on the
balcony, there is an inviting rocking
chair and an intriguing hanging
is still construction taking place
(namely at the Nikki Beach Club,
the wedding chapel and the Vietura
Aesthetic Lifestyle center) but guests
seem to hardly notice the occasional
hammering sounds coming from
beyond the temporarily-erected
barriers.
From what we saw during our
visit, the guests looked to be more
concerned with getting their ll of
omelets, cured meats and cheese,
dim sum, curries, and sushi at
Kwee Zeen, the 160-seat Pan Asian
restaurant where Sotel Bali guests
take their breakfast.
Located below the resorts lobby
(which is decorated with scenes
depicting the Balinese circle of
life), the extensive buffet at Kwee
Zeen is set up in a circular fashion
and the attitude of the staff there

pon entering the
BTDC area in Nusa
Dua, guests are
greeted by the
sight of a garden
fountain and winding pathways that
practically beg passersby to take a
leisurely afternoon stroll or go for
a jog. This clean and beautifully
manicured area is home to some of
Balis best resorts, including the new
Sotel Bali Nusa Dua Beach Resort.
The resort is already bustling
with activity even though the grand
opening has yet to take place. From
traveling European couples to large
conference groups to Indonesian
families taking advantage of the
school holiday, the guests who
choose to stay here are a diverse
lot, and to say the resort is busy
is really an understatement. There

The level of comfort and luxury in
these rooms would make it difcult
for anyone to tear themselves away,
but a rumbling stomach never fails
to get feet moving. Aside from the
all-day dining at Kwee Zeen, there
is also the option of dining at the
exquisite Cut Catch Cucina (CCC).
This is an Italian Osteria, steakhouse
and sea grill all in one, and we
recommend you try their 350 gram
Wagyu Sirloin with 5-6 marbling.
This gigantic steak is grilled to
perfection, comes with your choice
of sauce and side, and will certainly
not disappoint.
WELLNESS & MORE
Guests who are focused on well-
being can balance out their dining
indulgences by doing some laps in
the outdoor swimming pools or by
paying a visit to the So FIT gym.
Afterwards, theres the So SPA
to look forward to, which offers
a selection of effective treatments
combined with rened French
cosmetology. Experiencing the spa is
not to be missed, especially with the

Theres a make-your-own juice station at breakfast! Choose from
carrot, pineapple, orange, apple, mint, kale and ginger (among other
ingredients) and have the staff juice it up for you right before your eyes.
The toiletries are Lanvin in the rooms and Hermes in the villas.
The gorgeous carved-wood sliding door that separates the bathroom
from the rest of the room is designed to look like batik.
The hanging rattan cage chairs add a unique and contemporary touch

The cocktail of the month at CCC is to-die-for. We tried The Carnalipto

little island. Try as I might, I just cant
seem to nd the delete button on my
mental camera that would forever
erase the memories of how things
were almost 20 years ago when I
made my rst visit to the Island of
the Gods.
If I could, then maybe Id be able
to enjoy the ever-changing face of
Bali and not care about its future.
But Im not good at ignoring things
that I care about and I know there
are others like me out there. But with
such a bewildering array of issues at
hand, its almost paralyzing to think
about taking the rst step in doing
something about it. So where do
you start?
Perhaps the fastest way to make a
decision would be to write down on
slips of paper categories like Trash
Disposal, Plastic Bags, Recycling,
Animal Welfare, Beach Cleaning,
Water Pollution, Sewage Treatment,
Health and Education, tack them
onto a dartboard, spin around three
times, and then just toss a dart and
see what it hits. But my guess is that
most of us wouldnt go with that rst
throw, as we might not be willing
to seriously get behind it 100%.
Its better we to do a bit of thinking
before we make our decision.
Here are 5 points that should help
you with your decision making
process:
Skills
What are you good at? Writing,
public speaking, technology, sales,
building things?
Experience
What are you most experienced
at? Have you ever been (or are you
currently) a nurse, builder, writer,
computer programmer or engineer?
Passion
Think about the times you felt
tremendous emotion over an injustice

memories of the good old Bali
days, it will denitely help shape
the future of the island by changing
the life of a child, adult or animal, or
preserving things that havent been
damaged, or xing the things that
need immediate attention. Thats the
way you can make a difference.

money to something you feel
passionate about, however little
it may be.
After thinking these things
over, take the issue that you are
most passionate about and then
ask yourself if your skill set and
experience can be put to good use
in that area, and how much time you
can dedicate to it. It may be that you
dont have the skills or experience
or time, but you could still donate
money to it. Then you could choose
another that perhaps you do have
the skills and time to put in, but you
wouldnt have to contribute money.
You can support more than one!
The most important thing here is
that you choose something, and do
something. You can always make
another choice later, but at least you
are helping to make a difference
in one of the many issues that this
island is wrestling with right now.
That will feel good, I promise!
And while it may not erase those
the education, wellbeing and
self-reliance of people living in
underprivileged circumstances, while
ensuring environmental resilience
and sustainability.

the last thing we
heard before
Mario, our Level
3 instructor,
was whisked out of the boat and
rocketed three stories high into the
air. Moments later he landed gently
like a feather on the calm waters of
the Sanur lagoon.
We looked at each other in
disbelief before realizing that he
did it all for show very impressive!
Shortly after, we headed back out
in the small boat towards the reef to
practice maneuvering the kite with a
control bar at kite surng speeds as
it ew high above our heads. Mario
looked at me with anticipation in his
eyes and a smirk on his face and

being a junior lifeguard as a kid to

Our adventure started with a 20-
minute classroom session at the Rip
Curl School of Surf on the beach
in Sanur. In the Level 1 course they
provide an informative introduction
booklet on kite surng basics that
covers the history, equipment, safety,
wind, and more importantly the
principles of ying these specialized
kites.
After the classroom session it
was time to set up the equipment on
the beach and practice ying two
different training kites in the comfort
and security of the soft white sand.
The power of holding the wind in

2-DAY PACKAGE

day package deal three levels
of approximately two hours each.

ampung is home to (among
other things) Sumatran
elephant and tigers, and the
coffee plantations that pump
out the increasingly popular
Kopi Lampung. But people rarely
mention its beaches when talking
about this province on the southern
tip of Sumatra.
The Lampung province is
surrounded by water on three sides,
so if youre asking whether or not
there are noteworthy beaches out
there, the answer is an absolute yes!
WHITE SANDS
The rst time I visited Lampung was
more than a decade ago. I have
fond memories of visiting Pasir Putih
Beach (literally translated as White
Sand Beach), which is popular with
local weekenders as is Mutun Beach
and Queen Artha Beach.
They can get pretty crowded these
days, so another option is to head to
the islands just off the shores of Pasir
Putih, which also boast beaches
that are great for swimming. These
islands are located between Bandar
Lampung and the Bakauheni Harbor,
so there is a good chance you will
pass them on the way to or from
Java if you are traveling by ferry.
These are all nice to visit, but what
motivated me to make the journey
to Lampung this time around was a

photo of a spectacular rock formation
that had stolen my heart. After doing
some research I learned that the
collection of pointed rocks jutting out
of the water is called Gigi Hiu due
to their resemblance to sharks teeth.
The location has become increasingly
popular among photographers, off-
roaders and nature lovers alike.
It is only about 90 kilometers
from the city of Bandar Lampung to
Sharks Teeth, but the infrastructure is
still undeveloped so the journey can
be challenging. This is especially the
case in the 20-kilometer stretch where
a motorbike or four-wheel drive
vehicle is a must (hence the appeal
for off-roaders). So it is no wonder
that the area has been able to remain
a hidden treasure for so long.
JOURNEY TO
SHARKS TEETH
On the way to Sharks Teeth our
group stopped by the Ketapang
dock (which required renting a car
from Bandar Lampung). Chartering
a boat for Rp. 500,000, we glided
through calm green waters passing
the four islands of Pahawang Kecil,
Pahawang Besar, Kelagian Kecil
and Kelagian Besar.
The crown jewel of the four is
Pahawang Kecil, with its powdery
white sand and small peninsula.
Next to Pahawang Kecil is
Pahawang Besar, which according
to the boatman is the best spot
for snorkeling. Across from the
Pahawangs are Kelagian Kecil
(covered by dense mangrove trees
and a beach, though the sand
is not as powdery as Pahawang
Kecil) and Kelagian Besar with its
coconut tree-fringed beach. All these
beaches were unspoiled, and it
was almost as if we were in Papua
and not Lampung, which is just a
stones throw away from the heavily-
populated Java.
Back on land, the road conditions
worsen all the way to Kiluan (a
small village famous for dolphin
watching). Going further west, only
motorbikes and four wheel drive
cars can get through. This is a coffee

plantation area, but from a distance
its hard to distinguish it from the
tropical rainforest.
The journey continues into
Lampungs sparsely populated
interior, where people still live in
stilt houses mostly without electricity.
Pak Beni, our ojek (motorcycle taxi)
driver, eagerly showed us Pantai
Kelapa Dua, or Twin Coconut Tree
Beach. As the name implies, there
are two coconut trees that sprout out
peculiarly from a black rock forming
a small island.
SETTING UP CAMP
Close to Kelapa Dua is Gong Wani
Beach, another secluded stretch
of sand about one kilometer long.
A couple of kilometers further we
turned left, entering a forest that
had just been cleared by a farmer
and into a patch of dense forest
leading to a small cove, with a great
view of Sharks Teeth. We decided
to pitch two tents in this sheltered
area, where there was even a small
stream nearby.
Suddenly a man showed up
and politely introduced himself as
Andi Kurniawan. I treated him as
an honored guest, serving him a
drink and inviting him to stay and
chat. Not long after I found that
he and his family were owners of
the land stretching all the way to
Sharks Teeth (it turns out we were
the guests, and not the other way
around!).
He explained that he had
no problem with visitors, and
had even cleared the area for
this purpose. But he expressed
his disappointment with people
who failed to ask his permission,
oftentimes leaving rubbish behind.
I apologized for entering his
property and erecting our two tents
without his consent, but told him
that no one had mentioned it was
private property, not even the ojek
drivers who had dropped us off.
Pak Andi, why dont you put
up signage? I said. Something
that would let people know they are
entering private property, something
with your contact number?
He seemed reluctant, so we
explained that tourists sometimes
come from hundreds of kilometers
away and have no way of knowing
that it is private property. Eventually
he agreed and expressed his
appreciation by showing us the best
vantage point for viewing Sharks
Teeth. The jagged peaks protruded
into the sky while dark clouds moved
fast in the background, and all the
while the waters of the Sunda Strait
crashed hard against them.
I spent three days camping in that
same spot and found the scene was
continuously changing. It was a joy
to photograph and Sharks Teeth
never ceased to amaze me.
If you want take a trip to our
exact location with less hassle, Pak
Andi recommended taking another
route by turning right at the last big
intersection with signage to Kiluan
(paved road). The road quality is
better and any car with high ground
clearance can handle it. Youll
end up coming from the opposite
direction, approaching the village
where Pak Andi lives rst. The
people in the village will always be
ready to help, including opening up
their houses if you are in need of
accommodation.

he rst wave put
instant coffee by
Folgers in many
American households
in the 19th century.
Back then, people needed the
caffeine in coffee as a mood
booster, especially in the
morning.
Then the undisputed icon of
the second wave came along,
Starbucks. The brand popularized
espresso-based coffee and single
origin coffee. Second wave coffee
shops usually have many outlets,
and the customers who are a part of
this wave usually view coffee as an
essential part of a modern lifestyle.
The Coffee Bean & Tea Leaf and the
local brand Bengawan Solo Coffee
are other examples of second wave
coffee shops.
As for the third wave, this takes
every part of the coffee production
process farmer, trader, roaster,
coffee shop and barista and
brings it to a whole new artisanal
level. Instead of chains, shops are
fewer in number to ensure better
quality control. And customers
drink coffee not just to enjoy it but
also to appreciate it, like how wine
connoisseurs appreciate a ne wine.
ARTISANAL WAVE
In Indonesia, the third wave is
an exciting prospect because the
country boasts so many unique
local coffee beans. Said founder

is Brazil, as it has many regions
that produce coffee. However, the
characteristics of each region are
relatively similar. On the other hand,
Indonesian coffee is very interesting
because regions such as Java, Bali,
Papua, Sulawesi and Sumatra all
have their own signature avors.
Though an exciting concept, he
admitted to it still being quite foreign
to customers here, and even to the
rest of the world. In America, I
struggled to nd third wave coffee
shops. To me, theres only one place

in the world where the third wave
concept has become something
common for the people and thats
Melbourne in Australia.
FLAVOR PROFILES
The main difference between second
and third wave coffee shops lies in
the taste of the coffee that comes
from better quality beans. In the
past, farmers didnt have much
knowledge about the proper way
to grow coffee and the correct
processing method, so the quality
of green beans suffered.
To cover up the beans defects,
beans would get roasted longer to
produce what we call dark roast.
This process produces coffee with
a strong aroma and bitter avor, a
prole that is commonly associated
with coffee.
Thanks to new advanced
knowledge, Indonesia is now
able to produce premium Arabica
specialty coffee. The Specialty
Coffee Association of America
(SCAA) denes specialty coffee
(in the green bean state) as
Coffee that has no defects and
has a distinctive character in the
cup, with a score of 80 or above
when graded according to SCAA
Standards.
With this premium green bean,
we get the light or medium roast
coffee that is commonly used in
third wave coffee shops. The lighter
roasting releases natural characters
in coffee like sweet, fruity and
acidic, along with tons of different
avor and aroma notes, from citrus
to berry-like to honey to tobacco.
It may take awhile to learn to
appreciate the different avor
proles because the coffee we are
accustomed to is strong, black and
bitter. This is something that that has
been imprinted in our brains and
might be hard to change.
According to Doddy Samsura,
champion of the Indonesia Barista
Championship (IBC) 2013 and
store manager of One Fifteenth
Coffee, Most people say coffee
is bitter, causes sleep problems,
stomachaches, heart beating faster
or cold sweat. So when I have new
customers, I show them something
totally different. Our Arum Manis
(coffee bean from West Java) is a
good example. People might never
expect that coffee can be sweet and
fruity. Our seasonal Geisha (coffee
bean from Panama) even tastes like
jasmine tea.

FRESH BEAN STOCK
The freshness of the bean is also
pertinent to third wave coffee, as
explained by Muhammad Aga, the
Head Barista of Tanamera Coffee
and runner-up of IBC 2014. Coffee
is very sensitive. After the roasting
process, the bean needs resting time
to reach its optimum taste, he said.
Usually, Indonesias beans taste
best after resting for 10 to 14 days.
After two to three months, the taste
starts to degrade.
Its quite a challenge for coffee
shops to maintain a good stock
of fresh beans. For this reason,
many third wave coffee shops roast
themselves. Some even end up
as serious roasteries that sell their
roasted beans to other coffee shops.
MANUAL BREW
Third wave coffee shops are also
known to serve manual brewed
coffee, which exposes the natural
avor of the coffee further. With
espresso machines, we force the
coffee to release its potential through
pressure. Some people even say
that brewing coffee with espresso
machines is a rough and forceful
way to extract coffee, said Doddy
Samsura.
Not everyone can stand the
strong taste of espresso, therefore
the less intense manual brewed
coffee opens up a whole new
array of avor alternatives. There
are many methods to brew coffee
manually, from the most simple
methods like kopi tubruk and
French press to the fancy ones like
siphon and cold brew. However,
the pourover technique using Hario
V60, Chemex or Kalita Wave, is
currently the most popular technique
among many baristas.
INDONESIAS
THIRD WAVE
It can be hard to tell which coffee
shops belong to the third wave
category because the rules are
not written in stone. But a good
place to start is with the baristas of
the aforementioned coffee shops
explain their coffee processes to you.
So will third wave coffee shops
eventually replace the second wave?
This is unlikely. We still have our
instant coffee packs in our houses
and ofces, and people are still
lining up outside of Starbucks and
other second wave chains. But
the third wave concept opens up
a market for new consumers who
appreciate the ner, artisanal things.
If you are adamant about your
dislike of coffee, perhaps now is the
time to reconsider.
American author Mark
Pendergrast summed it up best,
Only one thing is certain about
coffee... Wherever it is grown,
sold, brewed, and consumed,
there will be lively controversy,
strong opinions, and good
conversation.

A GRAND MILESTONE

Call an ambulance by dialing 118, but it is a lot
more practical and quicker to hire a taxi. Most
hotels have on-call doctors on standby. For Bali
Belly, Lomotil and Imodium eliminate symptoms,
but not gastro-related infections. A fever along
with symptoms requires doctor-prescribed
antibiotics.
Drink as much liquid as possible. Isotonic
drinks under various brand names are widely
available and are known to replenish body
hydration and replace uids. For discomfort,
diarrhea and cramping, drink strong, hot tea;
avoid fruits and spicy foods.
Some day-biting mosquitoes carry dengue
fever, but this is not a problem in tourist areas.
Bali is non-malarial and prophylaxis is not
required. Mosquito bites, cuts or abrasions
easily become infected in the tropics. Treat them
immediately.
Drink only bottled or boiled water. Peel fruit
before eating; avoid raw vegetables except at
reputable restaurants. Ice in restaurants is safe.
Protect yourself from the intense equatorial sun.
Use high SPF sunblock and a hat.
AIDS and sexually transmitted diseases
are increasing in Indonesia. Local sex workers
have multiple partners from around the world.
They are not checked for sexually transmitted
diseases. Act responsibly and use condoms,
available over the counter at pharmacies.
