President's Note
Greetings Everyone. This has been a big month so far for our family as
we now have a 4 year old in the house! Fiona woke up with a whole
di!erent attitude, more condence & extra sass.. we're sure to be in for
an exciting year ahead. Also, this was the rst year my husband
participated in the Color Me Rad race & it was so awesome to see so
many MOMS Club mamas out there too!
As you all know, I'll be stepping down from my role as President this year
after two incredible years! And I'm pleased to report that there has been
a lot of interest in board positions which is honestly a great problem to
have! I'm very thankful that so many people are excited to help continue
to make our club thrive. I feel so lucky to be a part of it all! Just wanted
to take a moment to remind everyone about how this whole election
process works. The basics:
* May Member Meeting:
focuses on nominations.
* June Member Meeting: we
vote for the new board via paper
ballot.
* July 1st: the new board starts
(old board helps with transition).
This Thursday is our monthly
meeting & the most important
thing to know is that if you want
to be considered for a position
you have to be nominated at this
meeting. You do not have to be
present for this to happen. But,
only names nominated this week

interested in all Executive
positions right now but we still
need a Helping Hands
Coordinator & a Big Sister
Coordinator. Here's what you
need to know about these
positions:
Helping Hands (1-2 hours a
month)
Organizes membership to
provide support/assistance to members in need: new babies,
emergencies, death in the family, etc. This person sets up an online
meal calendar for each event to meet the specic needs of the situation.
They also monitor the calendar to help make sure it gets lled up!
Denitely one of the great perks of being a member of this club is
getting some meal support in a time of need. You also organize one
club event a month (you are welcome to organize more but only one is
required).
Big Sister (2-3 hours a month)
Matches new members up with a more seasoned member. You also
organize one club event a month (you are welcome to organize more but
only one is required).

Prep Time: 15 minutes
Cook Time: 18 minutes
Total Time: 32 minutes
Ingredients:
3 cups cooked shredded chicken (I like rotisserie)
6 ounces cream cheese, softened
1/3 cup sour cream
1/2 cup salsa
1 + 1/2 cups shredded sharp cheddar cheese
1 + 1/2 cups chopped baby spinach, stems removed
coarse salt and fresh black pepper, to taste
9 - 10 (6-inch) our tortillas
Book Club Anyone?
Now that the parenting discussion group has nished meeting, we'd like
to nd out if anyone would be interested in restarting our chapter's book
club (pun intended). In the past, the club has met one evening per month
at local co!ee shops, etc. Would any of you be interested in joining
and/or organizing a book club with some of the nicest ladies around? :)

New Me mber Corner
We haven't done a spotlight on new members for a while, so the list is
long! Here are all the ladies who have joined us since December:
Anna Braun, mother of Weston, was in our club before a brief move out
of Eugene. We're happy to have her back!
Brittany Gilbert, mother of Delilah and Solomon, is also back in MOMS
Club after a short stint away from us. Welcome back, Brittany!
Ashley Bohanan, mother of Liam, enjoys running, reading, and outdoor
activities.
Caitlyn (Caity) Cook, mother of Cohen and Oslo, is currently studying to
be a nurse, and also enjoys crafting, being outdoors, watching TV, and
reading.
Tara DeSando, mother of Michael and Harper, works from home full
time as a medical coder and enjoys drawing.
Stefanie Gibson, mother of Connor and Claire, is interested in
gardening, photography, sewing, and travel.
Erin Piibor is the mother of Nicholas and another baby boy, due in July.
She works as a tness director, trainer, and instructor, and her hobbies
include physical activities, movies, dinners, and dancing.
Marty Torres, mother of Tiger, teaches Bikram yoga classes, and is also
a fan of cooking, dancing, walking, and hiking.

9 - 10 (6-inch) our tortillas
vegetable or canola oil, for frying
your choice for serving:
sour cream/quacamole/salsa/taco sauce/ranch dressing
Instructions:
1. In a large bowl mix together the chicken, cream cheese, sour
cream, salsa, cheddar and spinach. Season to taste with salt and
pepper.
2. Working with one tortilla at a time add 2 heaping tablespoons of
the chicken mixture o! center and spread out like a log. Roll up
and set seam side down on a platter. Repeat until all the tortillas
are lled and rolled.
3. Add enough oil to a large skillet to generously cover the bottom.
Heat on medium to medium-low heat, cook tortillas in batches,
turning to brown each side. Remove to paper towels to drain.
4. Serve with your choice of dunking sauce.

Amazing! To the best of our knowledge there were no new babies that
joined MOMS Club this month. Please correct us if we're mistaken!

May is a big month for us, as it's when we elect new members of the
executive board and new coordinators for the coming year. Several of our
current board members will be continuing to serve the club, but we
would love to have some fresh blood too! Here are the roles we're
looking to ll:
- Big Sister Coordinator
- Helping Hands Coordinator
For more detailed descriptions of these roles, see Anneka's message
above. Please come to our meeting on May 8 if you can, so you can
participate in the nominations! We hope to see you there, and look
forward to working with you.

AC Gilbert Discovery Center & Sale m Waterfront
Carousel Day Tri p
At the beginning of the month there was a day trip to Salem which
included lots of fun at the AC Gilbert Discovery Center, several Carousel
rides nearby & a meet up with the Parkin family!

lled with lots of good info. We'll be sending out a digital only version

These three awesome ladies are who the board relies on the ask any
questions they don't have an answer for or to steer us in the right
direction. They provide support for our club as well as many others.

ages.
Babies 2009 & older
We don't currently have a regular meeting time for this group. Contact

in getting one started.
Babies 2010 AM "Blue" Playgroup* meets on Wednesdays, from 10am
to Noon. Members take turns hosting. Contact Mary Suelzle

Babies 2010 PM "Purple" Playgroup* meets on Wednesdays from 2:00-
4:00. Members take turns hosting. Contact Shireen Wright

Babies 2010 Everybody Monthly Playgroup* meets on the third
Wednesday from 11:00 am - 3:00 pm in lieu of the blue and purple
divided groups. Meet at Tiny Tots whenever your schedule allows.
