Pork with Prunes and Apples

cup pitted prunes


cup apple juice
2 tsp olive oil
6 oz boneless pork loin chop, sliced
cup sliced onion
1 apple, peeled, cored and sliced

1. In a small bowl, our apple juice over prunes and let sit for 15 minutes, until slightly
softened.
2. Meanwhile, in a skillet, heat oil over medium high heat. Add pork, turning to brown
evenly. Transfer to a plate.
3. Add onion to skillet and cook, stirring, until tender and golden, about 5 minutes.
Add apple and cool, stirring, for 5 minutes more. Stir in prunes with juice and browned
pork; cover, reduce heat and simmer until apple and prunes are very tender and pork is
no longer pink inside, about 10 minutes. Let cool

Transfer to blender and blend on high speed to desired consistency.

Tip: If constipation is an issue, increase prunes to cup and omit the onions.
