POACHED PEARS WITH BERRY COULI

INGREDIENTS:
150g Sugar
600 ml water
2T Lemon Juice
cinnamon stick
3 Coriander Seeds
1t Vanilla Essence
2 Pears

METHOD:
1. Leaving the stork on, carefully peel the pears from top to bottom.
Using the peeler lightly remove any remaining ridges. Rub gently
with a tea towel to smooth the surface of the pear.
2. Remove the core carefully and slowly from the base of the pear.
3. Using a pastry brush, brush a little of the lemon juice over the pear
to prevent it browning.
4. Place the sugar and the water into a large saucepan and heat while
stirring in the sugar to dissolve. Then add the half cinnamon stick,
coriander seeds, vanilla essence and remaining lemon juice.
5. When the cooking liquid is simmering place the pears into the liquid
and cover with a lid. Turn the pear during cooking to ensure pear is
cooked evenly.
6. Poach until cooked but still firm. Test with a skewer from the bottom
of the pear.
7. Cool pears in the poaching liquid then chill in the fridge.
8. Serve with berry coulis, whipped cream and decorate.
