Laboratory Report: Making Rock Candy

Introduction:
There are many kinds of candies and many ways to make it, one of
the most popular is rock candy. Rock candy are made by the process called
crystallize. It occur when the chemical reacts by supersaturated solution of
water and sugar. Supersaturated solution is more soluted. In our experiment
will show how to make the rock candy (crystallization) in a simply way by
using boiling water, sugar, food colouring and strings.

Purpose: To find out how to make the sugar to be crystallize.

1 cup of water

Procedure:
1. Boil a cup of water in the pot.
2. Pour 3 cups of sugar into the boiling water little at the time.

3. During pouring sugar, Stir it continuously until all of the sugar is


dissolved in boiling water
4. Wait until the boiling water with sugar become cooler a little
5. Dip the tip of strings into the boiling water with sugar
6. Roll the tip of wooden sticks with extra sugar
7. Pour a drop of food color and food flavour in the cups
8. Pour the water with sugar into the cups
9. Stir it

Put the tip of strings into the cups

Wait 4-5 days

Break down the surface

Pour the fluid out to see how the rock candy is going on.

If it is not really harden, pour the fluid down

Put the strings off

Analyzing Result:
1. Discuss the different properties of sugar and how these properties vary
among types of sugars.
Sweetness
- Sweetness is received by taste buds of the tongue
- Different types of sugars have different range of sweetness
- Temperature, consistency, pH and concentration can affect
sweetness
Caramelization
- When sugar is heated and water is gone
- brown color --Carbon
- Each types of sugar have different caramelizing point
Solubility
- can dissolve in water
- if sweetness increases, the soluble also increases
- Fructose is the most soluble
Crystallization
- sugar crystal left after water evaporates in sugar solution
- Supersaturated solution provide the beginning of crystallization
- Different sugar have different crystal

4. Who in your group was the most successful? What might be the reason for
their success?
Petes rock candy was the most successful because Pete was carefully
to do the rock candy and put lots of effort in it. His rock candy was look really
good, it has a little crystal more than other members.

5. If you were to perform this lab again, what might you do differently?
In this experiment, our rock candies did not successful as we
expected. Because of some processes that we did not do perfectly, such as
pour sugars and stir it. Therefore, if we have chance to do this experiment
again, we will do every process by carefulness and delicacy.

Conclusion:

This experiment, we made the rock candy that is an example for one of the
properties of sugars, which is crystallization. The crystallization is occurred by
boiling sugar solution and evaporating water.The majority of our rock candies looked
like a thin plate and small.However, our results were quite good because there were
some crystal in the strings, but the rock candies did not big as a general rock candy
that can be found in market place. The reason would be about the temperature,
time and some processes that is missing or inaccurate. Therefore, if we can perform
the experiment again, we will fix our mistake that we have done.
