The%first%audit%is%carried%out%on%a%daily%basis%by%the%HISD%Quality%Control%team.%Every%
day%on%each%shift%an%employee%makes%the%rounds%throughout%the%production%facility%
checking%for%issues%within%personal%hygiene,%housekeeping,%product%handling,%pest%
control,%structure,%and%mechanical%equipment.%I%followed%one%of%the%Quality%control%
personnel%through%their%daily%rounds%checking%for%issues,%temperatures%and%quality%
control.%We%found%one%employee%chewing%gum%which%I%noted%in%the%audit%sheet%and%
addressed%the%employee.%The%employee%was%verbally%corrected%and%we%watched%as%
they%disposed%of%the%gum,%washed%hands%and%put%on%a%new%set%of%gloves%before%
resuming%work.%We%did%not%find%anything%else%to%be%out%of%the%ordinary%during%the%
audit.%We%also%swabbed%surfaces%to%be%sent%off%to%an%independent%lab%to%check%for%
anything%out%of%the%ordinary.%The%results%were%negative.%%

2. Special%Dietary%Accommodations%

Any%special%request%has%to%done%through%the%proper%channels.%
%
A%students%physician%request%form%must%be%submitted%to%dietetic%staff%at%
HISD%
Special%diet%dietitian%will%develop%menu%
Menu%must%be%signed%by%the%parents%or%guardian%(approved)%
Physician%form%and%signed%menu%must%be%kept%on%file%in%the%cafeteria%
Production%records%must%be%filled%out%daily%and%kept%on%file%
Supplement%supply%and%expiration%dates%must%be%clearly%labeled%and%filled%
All%orders%for%special%diets%go%directly%through%special%diets%dietitian%
Forms%must%be%filled%every%year%they%are%not%repeatable%%

I%performed%an%audit%during%the%lunch%period%at%Neff%Early%Education.%Three%
students%were%on%file%as%having%special%dietary%needs.%Once%I%went%through%the%
paperwork%available%I%noticed%two%of%the%three%students%did%not%have%completed%
paperwork%on%file.%The%parents%of%both%students%had%not%yet%signed%the%special%diet%
forms%so%the%cafeteria%staff%could%not%legally%make%any%changes%to%the%diet.%The%
cafeteria%was%not%at%fault.%It%is%up%to%the%nursing%staff%at%the%schools%to%make%sure%the%
parents%sign%the%forms.%I%made%sure%to%document%this%issue%and%we%contacted%the%
nurse%to%get%the%issue%resolved.%%

The%third%student%receives%a%supplement%drink%every%day%at%lunch.%The%correct%paper%
work%was%found%on%file%and%the%proper%procedure%was%followed%for%documenting%the%
process%of%giving%out%the%supplement.%I%watched%the%cafeteria%staff%go%through%the%
meal%and%when%the%student%came%through%the%line%they%knew%to%make%sure%they%got%
the%supplement%and%to%keep%track%on%the%production%records.%%

I%let%the%dietetic%staff%know%about%the%issue%with%the%other%two%students%and%it%has%
been%taken%care%of%as%of%now.%
