The Innkeepers Wife

OTELS HAVE SERVED as the changing
houses of social currency since the late
1890s, when newly minted magnates stalked
Manhattans haut monde along the palm-lined promenade of the Waldorf-Astorias Peacock Alley. Yet in the
decades prior, the citys fashionable fauna eschewed
these too-public precincts. As a 19th-century arbiter of
etiquette noted, the sole safeguard for U.S. society, in the
absence of a royal court, was its homes. Only the impossibility of putting ones five hundred dearest friends
into a narrow house, she added, has led to the giving
of balls at public rooms.

Marietta
Stevens
saw in her
husbands
success as a
hotelier the
instrument
of her own
ascendance.

If members of the old guard hesitated to cross the thresholds of even the best hotels (see The Top 100 Hotels, page
87), they certainly would not permit the owners of those
establishments to cross their own. Yet this tacit proscription did not deter Marietta Reed Stevens, the wife of one
particularly prosperous hotelier. The daughter of a grocer,
19-year-old Marietta began her career as a schoolteacher,
in which capacity she garnered the attentions of Paran
Stevens, a wealthy widower more than twice her age.
Paran began life modestly in a Boston tavern, but his
industry enabled him to buy some of the best hotels on
the East Coast, including the Fifth Avenue Hotel in New
York (pictured). Marietta, whom Paran married in 1851,
saw in her husbands success the instrument of her own
ascendance. Yet the Knickerbockersthe patrician
descendants of New Yorks earliest settlerssternly
resisted the upward thrusts of the willful Marietta, who
purchased the white marble mansion of Mary Mason
Jones, a recently deceased matron of impeccable pedigree, to claim as neighbors the cream of Gotham society.
Still unable to open these closed doors, she traveled to
England, where her husbands millions procured an aristocratic suitor for their daughter, Minnie. Though one
duchess dismissed Minnie as an innkeepers daughter,
her marriage to Arthur Paget, an intimate of the Prince

of Wales, earned Marietta considerable clout in New York,

where British titles constituted the most valuable form
of social capital. Indeed, the arriviste knew she had arrived
when the formidable Caroline Belmont called on her with
great ceremony at her new residence.
The surrender of a house was not the only embarrassment that the Jones family endured on Mariettas account.
Lucretia and George Frederic Jones belonged to societys
most conservative stratum, and though they increasingly
encountered Marietta in the drawing rooms of acquaintances, they pointedly rebuffed her. The Joneses distress
was therefore palpable during the 1880 Newport season,
when their daughter, Edith, began to court Mariettas
21-year-old son, Henry Harry Leyden Stevens, who on
his 25th birthday stood to inherit $1.25 million from the
trust set up by his late father. Unlike most of his contemporaries, Harry delighted in Ediths intellectual interests,
and when the Joneses anxiously departed for Europe,
the affable young man followed. Harrys solicitous
demeanor during the final illness of Ediths own father
warmed even Lucretias icy nature, and in 1882, Harry
and Edith became engaged.
Marietta, who ought to have considered the alliance a
coup, remained oddly silent on the subject. The wedding
was set for mid-October, but as that date approached,
Town Topics announced an indefinite postponement.
The reason for the rupture, reported the Daily News, was
a preponderance of intellectuality on the part of the
intended bride. Yet the likely truth lies in the terms of
Paran Stevenss will, which granted Harry his share of
the money at age 25or at the time of his marriage. By
allying her family with the elite of Old New York, the
spendthrift Marietta would forfeit much of the fortune
that made realizing this ambition possible.
Harrys unexpected death from tuberculosis six weeks
after Ediths marriage to the Bostonian Teddy Wharton
mitigated her public disgrace by providing a plausible
explanation for the breach. Only later, as one of her
countrys most celebrated novelists, did Edith Wharton
exact revenge: In The Age of Innocence, she uses the innkeepers wife as the model for social-climbing Mrs.
Lemuel Struthers, a former saloon girl of dubious morals whom another character describes as having eventually married a shoe-polish baron. There were volumes
of innuendo in the way eventually was spaced, Whartons
narrator acidly observes, and each syllable was given
its due stress.

Made by one of Italys greatest producers of vermouth,
Carpano Antica Formula or Ancient Formula is a red sweet
vermouth created in 1786, in Turin Italy by Antonio Benedetto
Carpano. In a world of commercially produced spirits, it
stands apart as a hand-crafted vermouth best served on its
own, but also used as a secret ingredient by many master
mixologists to enhance the flavor profile of classic cocktails
such as a Negroni, Manhattan, or Red Martini.

STAR ATTRACTION
1932 Daimler 40/50 Double Six Sport Saloon

HE DAIMLER COMPANY was an independent manufacturer that licensed its name from
the German automaker Daimler at the end of the 19th
century and quickly became a favorite of the British elite.
The company, based in Coventry, England, was awarded
a Royal Warrant in 1902 and remained the monarchys
official motorcar manufacturer until 1955, when Queen

30

Elizabeth II granted the privilege to Rolls-Royce.

Thirty years earlier, Daimlers rivalry with Rolls-Royce
prompted the company to develop the Double Six series.
The cars were powered by a new 6.5-liter V-12 that was
essentially two inline-6 engines paired in a V configuration. It developed 150 hp and featured a sleeve-valve
design that enabled the cars to run relatively quietly.

Daimler delivered the first Double Six in 1926, a year

after Rolls-Royce launched the Phantom I, a more
powerful version of the Silver Ghost.
Though Daimler continued to offer the Double Six
until 1937, it built only 26 examples. The one shown
herewith an 8-foot-long hood, massive wheels, and
a low rooflineis a long-wheelbase version. Its

wheelbase, at 13.3 feet, is nearly as long as that of

Bugattis Type 41 Royale.
The car is said to have been commissioned for the
British actress Anna Neagle by Herbert Wilcox, the film
producer and director whom she would marry in 1943.
In 1932, the year the car was delivered, Neagle starred
in the first of 32 films made by Wilcox. ROBERT ROSS

THE OPENING LEVER

HOVERS OVER THE ACTION

FLOATS WITHIN THE
WALNUT PISTOL GRIP.

NE COMPANY, Beretta (beretta.com), is

steeped in centuries of tradition. The other,
Apple, has introduced some of this centurys most
influential innovations. And Marc Newson has collaborated with both in recent months. Newson is an
Australian-born industrial designer who first rose to
fame in the mid-1980s with his Lockheed Lounge, an
aluminum-paneled sculpture that looks like a cross
between an 18th-century chaise longue and an aircraft
fuselage. Since then, his designs have ranged from a
concept car to airliner interiors to clothing. He joined
Apple in September and is believed to be responsible
for designing the Apple Watch. (In the 1990s, he
cofounded the watch brand Ikepod.) In November,

Beretta, an Italian firearm company that has been in

business since 1526, introduced the 486 by Marc
Newson. The $25,000 limited-edition offering is his
take on the 486 Parallelo, the 12-gauge double-barreled
shotgun that Beretta released in 2012.
Newsons design is sleeker and lighter than the original
486 Parallelo. The opening lever hovers over the action
as if suspended in air, and the safety seemingly floats
within the walnut pistol grip. The laser-cut engravings
on the round-bodied receiver refer to the regions of Asia
where the pheasant originated. Each of the six Beretta
galleries (in Milan, Paris, London, Buenos Aires, Dallas,
and New York) is offering one example of the 486 by

HE LT IN the name of the new McLaren 675LT (mclaren.com) stands for Longtail, a

nod to the companys F1 GTR Longtail racecar model that placed first and second in its
class at the 1997 24 Hours of Le Mans. The car was known as the Longtail because,
compared to its predecessor, the F1 GTR, it had an extended rear section with a wider
spoiler. (It also weighed less.) The 675LTs tail is not any longer than that of the 650S, its Super
Series sibling, but its spoiler is 50 percent wider, and the car is 220 pounds lighter. The design
changes contribute to the 675LTs superior stability (40 percent more downforce than the 650S)
and extraordinary speed (zero to 62 mph in 2.9 seconds). The 675LT has a starting price of about
$350,000. Deliveries in the United States are expected to begin this summer. ROBERT ROSS

Diamond Frenzy

VISIT TO THE Cy Twombly exhibit at Londons Tate Modern last year inspired the

designs in Wilfredo Rosados new Bakkheia collection of jewelry (available through Just
One Eye, justoneeye.com). I loved his frenzied, maniacal way of scribbling on the
canvas, says Rosado, who is based in New York. The jewelry, which is made in Italy, is
constructed with layers of circular 18-karat gold interspersed with rare colored Scarselli diamonds.
I wanted to showcase colored diamonds in an artistic way, says Rosado, noting that such stones
are typically set in a classical design. The ring shown here features white, pink, and yellow
diamonds, and is priced at $184,000. The earrings, which cost $254,000, are set with white, blue,
and green diamonds. JILL NEWMAN

Dutch cuisine largely remains a mystery.

Rijks (rijksrestaurant.nl), an elegant new
restaurant attached to the Rijksmuseum in
Amsterdam, has been designed to showcase
the Netherlands most stellar ingredients,
from the crisp oysters of Zeeland accented
with edik, a mild Dutch vinegar, to a dessert
of Dutch farmhousegouda custard with
grapes, walnuts, and wild rice (shown).
Rijkss bar serves only Dutch spirits, while its
40-bottle wine list is also Dutch, with many
selections from the Limburg region, not far
from Germanys Mosel.
On executive chef Joris Bijdendijks menu,
traditional Dutch avors ricochet in
contemporary dishes. Zuurvlees, a homey
beef stew, for example, becomes a
composition of tender beef cheeks, turnip

ts with the whole idea of Rijksmuseum,

Belle of Bordeaux
AT LA GRANDE MAISON, JOL ROBUCHONS MENUS ARE
AS OPULENT AS THE REGIONS GREATEST WINES.

HERE ARE FEW PLACES in the world as

closely associated with wine as Bordeaux. The
picturesque city in southwestern France is
synonymous the world over with rich, earthy reds and
vibrant whites. This year, however, the talk of the town
is not the latest vintage but La Grande Maison, the restaurant and boutique hotel that vintner Bernard
Magrez and the Michelin-starred French chef Jol
Robuchon installed in a handsome 18th-century whitestone manor.

Since its opening last December, the restaurants two

Napoleon IIIstyle dining rooms have been booked solid.
The demand for tables originates partly with the wine
trade, whose luminaries have adopted the new eatery
as their preferred gathering place; however, a renewed
emphasis on great food among the Bordelaises at large
has also contributed significantly to the establishments
success. Although the city has always boasted excellent
restaurants, what diners drank there often mattered
more than what they ate. Now the tables have turned.

Robuchon also anticipated the moment.

I knew there would be a clientele for a serious gastronomic restaurant in Bordeaux,
says Robuchon, who holds 28 Michelin stars.
And speaking as a chef, its a gastronomically
discerning city with remarkable produce
some of the worlds best lamb comes from

wild mushrooms in season. The local larder
is spectacular and very inspiring.

I wanted to create a restaurant with a

great harmony between what you eat and
what you drink, says Magrez, the owner of
four Grands Crus Classs chteaux in the
region and dozens of other estates in France
and around the world. Bordeaux was not
only ready for a great new restaurant, it
needed one. The city has evolved so much
over the last 15 yearsits younger and more
worldly than it was before.

These raw materials Robuchon entrusted

to his longtime sous chef, Tomonori Danzaki,
a native of Japan, who heads up the kitchen
at La Grande Maison. His contemporary
cooking contrasts dramatically with the dining rooms velvet banquettes and Baccarat
chandeliers. The kitchens modern and
meticulous approach is evident in such presentations as a medallion of caviar-garnished
crabmeat served on a mirror of crab aspic
topped with tiny tufts of cauliflower cream
decorated with dark-green dots of herbal jus.
Indeed, Danzakis technically precise cooking elevates even the most familiar French
classics, including Robuchons famous
version of tournedos Rossinia delectable
composition of filet mignon topped with
warm foie gras. At La Grande Maison, the
matre dhtel displays on a bed of salt what
appears to be a glossy, chocolate-colored
lozenge resting on a large crouton. Only
when he removes the morsel to a cutting
board and carves it tableside does one realize that the steak and the foie gras, both
perfectly cooked, have been fused together,
their textures enhancing the luxurious flavors of the port sauce and truffle shavings.
To accompany these delicacies, diners
may select a bottle of wine from one of the
best lists in France, which contains 259
Grands Crus Classs de Bordeaux (including prized bottles from Magrezs crown
jewel, Chteau Pape Clment in Pessac),
as well as vintages from California, Chile,
Morocco, and even Japan.
Although patrons may order la carte,
the tasting menus offer the surest means
of exploring the depth and breadth of the
cuisine. Each begins with a selection of
three small portions of some of Robuchons
greatest recipesperhaps cabbage-wrapped
langoustine ravioli, truffle spaghetti, and
deep-fried frogs legs with new garlic puree.
Fish and meat courses follow, as do a cheese
selection and a suite of desserts, the best of
which is the spectacular caramel souffl.
Still, the sweetest finale to an evening of
epicurean indulgence is retiring to one of
La Grande Maisons six splendidly appointed
guest rooms. ALEXANDER LOBRANO

blance is merely case deep. Within, the

Braveheart conceals a number of technical
features that represent a significant advancement for Bovet timepieces. I had the
idea the day after we opened our new manufacturing facility in 2006, says Pascal Raffy,
owner and CEO of Bovet Fleurier.
Afterward, I told my team that when we are

able [to construct] this watch, we will be a

true [watchmaking] facility.
The timepiece qualifies as a landmark
leap forward on a number of counts. Perhaps
its most impressive technical achievement
is a long, 22-day power reserve supplied by
two massive barrels. A patented-differentialgear assembly enables the wearer to charge
these barrels in full with as few as 56 turns
of the crown. At the center of the regulating system, which has been completely
reworked, is a flying tourbillonanother
first-time construction for Bovet. The balance wheel has been replaced by a highinertia, three-armed spoke with ogivalshaped weights at each end. The spoke is
driven by a cylindrical hairspringa type
formerly used in marine chronometers
that Bovet makes in-house. The escapement
has been placed on the reverse side of the
carriage, which also features a separate
seconds indicator that rotates in the opposite direction of the tourbillon.
While many of these features are present in other high-end watches, Bovets
Braveheart strings them together in an
especially logical and aesthetically pleasing
manner. Our goal was not just to pay tribute to the long power reserve watch in our
patrimony, says Raffy, referring to the
brands 1910 pocket watch that could run
continuously for just over a year. It is a
global concept, with [the] balance wheel
connected to the barrels in terms of both
energy consumption and chronometry.
In fact, Bovet has limited the frequency
of the watch to 18,000 vibrations per hour
to save energy; at this speed, the improvements to both the new balance and the
hairspring are critical to maintaining chronometric performance.
For Raffy, who often approaches watch
development from the perspective of a collector, 18,000 vibrations per hour is a speed
that enables the wearer to enjoy a view of
the cylindrical hairspringthe component
he believes delivers the poetry of the timepiece. The longest trip I ever take is three
weeks, he says, and I take great pleasure
when I get home to find the babys heart still
beating. JAMES D. MALCOLMSON

GMs Superlative Car

THE CORVETTE Z06 HAS POSTED UNPRECEDENTED
PERFORMANCE MARKS FOR THE AUTOMAKER.

ENERAL MOTORS has good

reason to call the 2015 Chevrolet
Corvette Z06 one of the most capable vehicles on the market. It accelerates
in a flash, stops on a dime, and provides
more horsepower per sticker-price dollar
than perhaps any other production car.
An extensively tuned version of the
Stingraythe seventh-generation Corvette
that debuted for the 2014 model yearthe
Z06 is powered by a supercharged 6.2-liter
V-8 that churns out 650 hp and 650 ft lbs
of torque. Chevrolet has produced Z06
variants of the second-, fifth-, and sixthgeneration Corvettes, but this is the first
with a supercharged engine.
It is also the first Z06 available with an
optional automatic transmission. When
equipped with the 8-speed, paddle-shifted
gearbox and the Z07 performance package

66

ROBB REP ORT.COM | MAY 2015

(which includes 40 percent stiffer suspension, bodywork that is more aerodynamic,

Brembo carbon-ceramic brakes, and
Michelin Pilot Super Sport Cup tires), the
Z06 accelerates from zero to 60 mph in 2.95
seconds (and in 3.2 seconds with the standard 7-speed manual). That is the fastest
zero-to-60-mph time of any front-engine,
rear-wheel-drive production car. With the
automatic transmission and Z07 package,
a Z06 also posted the fastest time ever for
a production car tested on GMs 2.9-mile
test track, beating the Corvette ZR1s record
by a full second. It also achieved the best
braking performance of any GM production car (from 60 mph to a stop in 99.6 feet),
and it produced the most downforce of any
car ever tested at GMs wind tunnel.
While the new Z06 boasts a number of
firstsfeatures and rankingsit also

represents a long-standing production

practice with the Corvette. The original
Z06 was conceived in the early 1960s by
Zora Arkus-Duntov, the GM chief engineer
who helped transform the Corvette from a
docile roadster into a world-class sports car
in the mid-1950s. After the Sports Car Club
of America banned factory-sponsored racing, he wanted to provide a performance
package for Corvette owners who would
continue to race their cars. Thus, since
launching the Corvettes second generation
in 1963, the company has produced the Z06
and other top-tier variants (including the
aforementioned ZR1) that are comparable
to the highest-performance European
sports carsvehicles that cost twice as
much or more. The new Z06 has a starting
price of just under $79,000. A convertible
(the first Z06 convertible since 1963) will
arrive later this spring with a price tag of
about $84,000.
During a test-drive earlier this year at the
Spring Mountain Motorsports Resort in
Nevada, the Z06s outrageous thrust
accompanied by a blast from the cars four
tailpipesmade short work of straightaways,
and the automatic transmission delivered
well-timed, lightning-quick gear changes.
Chevrolet claims it shifts faster than
Porsches dual-clutch PDK transmission.
The Z06 was sure-footed when turning
into corners, thanks in part to Chevrolets
Performance Traction Management system,
which anticipates power slides and adjusts
the engine torque accordingly. As promised
by their record-setting stopping distance,
the Z07 packages carbon-ceramic brakes
were strong and fade free. Another optional
feature, the Performance Data Recorder,
enables drivers to document and review
their track laps. It uses a forward-facing
camera to record high-definition video,
which is overlaid with data for engine rpm,
gear selection, throttle and brake pressure,
and steering angle.
GM has long billed the Corvette as
Americas Sports Car. While lauding the
Z06s capabilities, it is calling this Vette
Americas Supercar. The designation fits
the performance. BASEM WASEF

G90XT, which made its first flight in January,
is a remanufactured version of the Beechcraft
King Air C90Aa variant of an aircraft that
has been in production since 1964 and has
outsold every other business turboprop ever
built. The G90XT promises slightly better
performance than Beechcrafts latest version
of the King Air 90 series, the C90GTx, at
about 70 percent of the purchase price.
Nextant strips down the C90A airframe
and rebuilds it with new General Electric

more fuel efficient, and quieter than the
originals; a new Garmin G1000 flight deck;
and a redesigned cabin that can be configured to seat from three to seven passengers.

president and CEO Sean McGeough. When
we come to market with that new interior,
its going to be spectacular.
Nextant, which is based in Cleveland, was
founded in 2007 by Kenneth Ricci, who is
a principal of Directional Aviation Capital,
the investment firm that also owns privateflight providers Flexjet, Flight Options, and
Sentient Jet. In 2011, Nextant introduced
its first model, the 400XT, which is a remanufactured version of the Hawker Beechcraft
400 business jet.
When Beechcraft launched the King Air
90 series in 1964, the aircraft was lauded
for offering the short-runway performance
of a prop plane and the roomy cabin and
range of a small business jet. Beechcraft
introduced the C90 version of the King Air
in 1971 and sold more than 500 examples
in the next 12 years. The C90 and the various upgrades that followed (the C90A was
produced from 1985 to 1992) became a

favorite of small corporations and ownerpilots, and it was ubiquitous in charter

fleets. About 2,100 examples of the C90
variants are still flying. Though not as popular as Beechcrafts larger King Air 200 and
300 series turboprops, the C90 remains a
top seller: The company delivered 21 examples of the C90GTx last year.
A new C90GTx costs about $3.9 million.
Nextant has priced the G90XT at $2.6 million, and if a customer already owns a King
Air C90A, it will upgrade that aircraft to
G90XT specifications for $2 million.
Beechcrafts C90GTx has a range just shy
of 1,300 miles when carrying four passengers, and its maximum cruising speed is 313
mph. According to Nextant, the G90XT has
a range of 1,423 miles when carrying four
passengers and can cruise as fast as 322 mph.

The Other Post Man

J. C. LEYENDECKER IS FINALLY EMERGING
FROM HIS SUCCESSORS SHADOW.

EFORE NORMAN ROCKWELL

there was Joseph Christian (J. C.)
Leyendecker. From 1899 to 1943,
Leyendecker created cover illustrations for
322 issues of the Saturday Evening Post
the same number of Post covers that
Rockwell illustrated from 1916 to 1963.
Rockwell grew up idolizing Leyendecker,
whose work in the Post, other magazines,
advertisements, postcards, posters, and
books made him the most published popular artist of his era.
By the time of his death in 1978, Rockwell
had achieved enduring fame, and his work
was represented by galleries and exhibited
in museums. Today, a Rockwell original
illustration can command tens of millions

76

ROBB REP ORT.COM | MAY 2015

of dollars. Leyendecker, whose influence

on Rockwells work is unmistakable, died
in 1951 at age 77, in virtual obscurity. When
his longtime partner, Charles Beach, held
an estate sale to disperse his archive of
original illustrations, Leyendeckers
Saturday Evening Post covers sold for as
little as $75 and studies could be had for a
few dollars.
Lately, however, Leyendecker and his
work are receiving their due. In November,
Christies auctioned a 1918 Leyendecker
Post cover of Santa Claus dressed as a World
War I soldier for $209,000. And on May 2,
Heritage Auctions will offer a 1928 Post
cover that Leyendecker created for the tercentennial of the First Thanksgiving that

depicts a pilgrim glowering at a football

player. Its exquisitely well painted. The
football player on the right is a classically
beautiful American male that you see from
Leyendecker, says Ed Jaster, a senior vice
president at Heritage. Theres a bit of mirth
in the painting. The presale estimate is
$100,000 to $150,000, but Jaster thinks it
could sell for more than $200,000.
In addition to the Post covers, Leyendecker
also illustrated advertisements for a
number of menswear brands. His most
popular creation was the Arrow Man (for
Arrow Collars and Shirts), a Gatsbyesque
paragon of style.
Leyendeckers prolific work for menswear companies may have contributed to
his falling out of fashion. His style and
association with high living, which made
him the most important illustrator of
his day, died away in the years of the Great
Depression and World War II, says
Christine von der Linn of Swann Auction
Galleries in New York.
He also toiled decades before his type of
work was respected as an art form. People
were not collecting commercial artwork,
says Judy Goffman Cutler, the director of
the American Illustrators Gallery in New
York. It wasnt looked at as painting. It was
seen as having served a purpose and was
no longer valuable.
But now Rockwell, the teenage fan who
came to overshadow him, is helping to
restore Leyendeckers prominence while
also elevating the overall perception of
U.S. illustration art. Rockwells bringing
$46 million got a lot of peoples attention,
says Jaster, referring to the sum paid at a
Sothebys auction in 2013 for Rockwells
1951 Post cover Saying Grace. Other major
auction companies are starting to include
more and more illustrations in their
American-paintings sales. Prices are high
for all the top illustrators. More people are
discovering illustration art and loving it.
Its a coming of age.

EOPLE OF SUBSTANCE

have long gone to great lengths

to make auspicious entrances.
Alexander the Great had his elephants. The Holy Roman Emperor Maximilian I may never have conducted
a triumphal equine procession, but he did commission a 177-foot-long depiction of one. And in the modern era, potentates, pontiffs, and pop stars have
used large and luxurious motorcars to impress their public.
Perhaps no automobile marque has served this purpose more than MercedesBenz. In the 1920s, it produced the 630, an example of which served as transport for German President Paul von Hindenburg. Pope Pius XI, Japans
Emperor Hirohito, and von Hindenburg rode in Mercedes-Benz 770s, which
the company produced in the 1930s and early 1940s.
In 1951, as Germanys economy recovered from World War II, MercedesBenz introduced the glorious Type 300, which became known as the Adenauer
because Konrad Adenauer, the first chancellor of West Germany, used a variety
of closed- and open-top models to travel to state affairs. Mercedes-Benz followed the Type 300 with the Type 600, which it produced from 1963 until

1981. The Pullman-length version remains the brands

most famous limousine. It seems that everybody who
was anybody during that era had a 600. Aristotle Onassis,
Hugh Hefner, Elvis Presley, Fidel Castro, Pol Pot, Idi
Amin, and Kim Jong Il all appreciated the comfort and
status conferred by the stately 600.
When the 600 went out of production in 1981, it left a
void in Mercedes-Benzs luxury lineup, in the United

States at least. The company made a handful of S-Classbased Pullman sedans, but they were never officially
imported to this country. Mercedes-Benz did not have a
limousine-class sedan to compete with Rolls-Royce and
Bentley until 2002, when its parent company, Daimler,
resurrected Maybach, a luxury-car brand that had been
dormant since World War II. Daimler produced two versions of the Maybach: the long-wheelbase 62 and 57. (The

numbers represented the cars lengths in decimeters.)

Prices for the various variants and special editions ranged
from about $350,000 to more than $1 million. Daimler
expected to sell 2,000 Maybachs a year, half to U.S. customers. But the Great Recession tempered the demand
for an ber-luxury limousine, and when the final Maybach
rolled off the assembly line at the end of 2012, the company had produced fewer than 3,000 total units.
Now the Maybach is back. Again. Sort of. In April,
Mercedes-Benz launched a car that by its name, and its
purposethough not its $189,350 starting priceevokes
the 600 and the Maybachs of the recent and distant pasts.
The Mercedes-Maybach S600 also marks the launch of
a new brand.
Unlike the Maybach 57 and 62, which bore the doubleM badge on their grilles, the Mercedes-Maybach S600
sports the Mercedes-Benz silver star, the same emblem
that adorns the S-Class sedans and coupes. But on the
left edge of the deck lid is the word Maybach, and applied
to each C-pillar is a discreet double M. The name and
logo suggest that occupants will be ensconced in the most
luxurious and opulent Mercedes-Benz available. Daimler,
to make the Mercedes-Benz model lineup more decipherable, has created two sub-brands: Mercedes-AMG
for high-performance variants and Mercedes-Maybach
for the most exclusive and prestigious models.
Compared to the S-Class sedans, which previously held
the latter distinction, the Mercedes-Maybach S600, at
just under 18 feet long, is 8.2 inches longer and offers
more than 6 inches of additional legroom for rear-seat
passengers. But the extra space is just one of many comforts that media members enjoyed earlier this year in
Southern California, where Mercedes-Benz introduced
the car to the press with an 80-mile chauffeur-driven
ride from Santa Barbaras historic Belmond El Encanto
hotel to the Presquile Winery in Santa Maria.
According to the engineers who joined the media members for lunch at the winery, one of the design objectives
was to make the rear of the cabin the quietest of any
production sedan. Having achieved that goal, it seems
reasonable that Mercedes-Benz would make the car available with an optional refrigerator (concealed in the rear
center armrest) that can be stocked with a pair of silver
Champagne flutes to toast the tranquility.
In any chauffeur-driven automobile, the rear seats have
to be comfortable, and the Mercedes-Maybach S600s do
not disappoint. They rival a well-used Eames lounge chair.
They recline to a 43-degree angle and are equipped with
power-actuated calf supports. Seat-belt air bags and active
belt buckles ensure that passengers are protected while
they are reclined. The optional Executive Rear Seat Package
Plus, a two-seat configuration instead of the standard
three-seat setup, adds a center console with the refrigerator, Champagne flutes, and tables that fold out like
those on an airplane seat. The console also has cupholders

that can heat or cool beverages. The rear seats are situated behind the door openings for maximum privacy,
and the triangular window that is part of the door glass
in the S-Class sedans has been relocated to the C-pillar.
The interior is lined with hand-stitched leather. It covers the seats, the consoles, the doorsills, the pillars, and
the headliner. An optional pillow-stitching pattern can
be specified throughout, even on the dash and on throw
pillows that are suitable for a Roman feast. MercedesBenz offers a choice of seven color schemes for the interior and 14 colors for the exterior. Especially impressive
is the Designo Magno Alanite Grey exterior, a matte
finish that contrasts beautifully with the optional and

exclusive 20-inch slotted wheels.

The Mercedes-Maybach S600
further caters to the sybarites auditory, tactile, visual, and even olfactory senses. The seats are equipped
with a feature that replicates a hotstone massage. The panoramic sunroof is available with the optional
Magic Sky Control function that
turns the glass from light to dark to
provide shade from the sunlight. If
there were any noise from the road
or wind in the cabin, the 1,540-watt,
24-speaker Burmester surroundsound system could drown it out.
An atomizer in the glove box contains an agarwood fragrance developed exclusively for
Mercedes-Maybach. And an analog IWC Schaffhausen
clock in the dashboard reminds the driver and passenger
that the greatest luxury is time.
The Mercedes-Maybach S600 will not waste any time
getting from one place to another. It is powered by
Mercedes-Benzs 6-liter V-12 biturbo enginethe smoothest in the business. It produces 523 hp and 612 ft lbs of
torque from an impressively wide torque band of 1,900
to 4,000 rpm. The engine enables the car to accelerate
from zero to 60 mph in 5 seconds, which is more than
adequate for the real world.
For the driver, the Mercedes-Maybach S600 feels like

the S-Class S600. Though it has a longer wheelbase, it

handles just as well. Like the S-Class, the MercedesMaybach S600 is equipped with Magic Body Control,
which uses forward-facing cameras to scan the road
ahead and then adjusts the active suspension accordingly to counteract uneven surfaces. Speed bumps that
would loosen even the most intractable molars can be
taken at speed without calamity or upset.
The only people who might be upset by the MercedesMaybach S600 are owners of the original 21st-century

Maybach. In terms of fit, finish, and detail, no other

car came close to it, but toward the end of its production run it was hampered by an aging platform and
obsolescent technology. The Mercedes-Benz S-Class
has leapfrogged the Maybach with its technological
advancements, and the Mercedes-Maybach S600, in
addition to its many niceties, possesses those same
upgrades.

SACHER TORTEAN AIRY chocolate cake layered with apricot
jam and served with a spoonful of whipped cream on the side
has been on the menu at Hotel Sacher Wien since the Sacher
family opened the hotel on Philharmonikerstrasse in 1876. Nearly
a century and a half later, the decadent confection and its historic home remain two of Viennas greatest indulgences. The
149-room hotel is a beguiling spectacle of n-de-sicle artistry,
with its brocade wall coverings, silk curtains, glittering Lobmeyr
chandeliers, and original oil paintings. Plush and vibrant in emerald green, the Restaurant Anna Sacher is delightfully antiquated
with white-glove service and dark-wood-paneled walls. A glass
conservatory at the scarlet-hued Restaurant Rote Bar overlooks
the Vienna State Opera across the street. In the Sacher Spa,

Say Good Night, Grace E

The new 240-foot yacht from Perini Navi and Philippe Briand offers
passengers rest, relaxation, and rejuvenation. BY SHAUN TOLSON
TRAVELERS SEEKING TRANQUILITY will nd it aboard Grace E, a 240-foot yacht from naval architect and designer

Philippe Briands Vitruvius Yachts. The sundeck serves as a health spa, and the diesel-electric propulsion system enables
the yacht, which was built by Perini Navis Picchiotti division and delivered in September, to cruise in near silence.
Among other amenities, the sundeck contains a massage room with a wet-and-dry sauna and a mediation
room. Whether they are ruminating in the meditation room, watching a movie from the Kaleidescape
library in the skylounge, or lounging in the main-deck saloon, guests will not be disturbed
by the yachts electric power plant. When the system is producing enough energy
to propel the yacht at 14 knots, the noise level in the saloon reaches just
45.5 decibels, which is about as loud as it is in a library. The propulsion
system is also efficient enough to give Grace E a range
of about 5,500 nautical miles, enabling the yacht
to provide peace of mind as well as peace
and quiet.

Move Over, Monsieur

BLACK TRUFFLES FROM AUSTRALIA HAVE ARRIVED, JUST IN
TIME FOR SWEET CORN AND TOMATOES. BY DAVID LYON
T IS EARLY JULY in Western Australia, and the black-truffle harvest is swinging into high gear in the remote village of Manjimup. As I walk the Truffle & Wine
Co.s 52-acre grove of hazelnut and oak trees with the truffle hunter Adrian Mielke,
there is a sense of urgency. Winter rains are flooding the normally dry soil, imperiling a
few million dollars worth of black diamonds with the chance of rot.
Mielkes affable yellow Labrador retriever Lola snuffles along the ground until she scents
truffles intertwined with the roots of a host tree. She scratches at the soil to mark the spot

truffle farm, or truffire. Mielke and

Lola usually cover three to four miles
per day and discover hundreds of ripe
truffles. Each little dig turns up clusters
of two to seven truffles; most are the
size of hens eggs, but others are as
large as a gooses. These treasures
weigh an impressive 1 to 4 ounces each.

126

Every so often, Mielke pauses to

pick up a truffle that has nudged its
way to the surface. He grimaces as

down on one knee and
roots his fingers into
the friable soil to reveal
a cluster of three black
lumps. He lifts and gently turns over
the truffles, lightly squeezing each
one to ensure that it has not gone soft
and looking for insect damage or
other surface faults. He leans over
and sniffs the hole for mildew.
Satisfied that the truffles are ready
to be harvested and are in prime condition, he covers them over and drops
a fluorescent pink streamer to mark
the spot for the harvesters.
Lola gets the first of many treats
before we continue along the 25 miles
of nut-tree rows in the Hazel Hill

melanosporum (the scientific name

for the black Prigord truffle). While
no global industry figures supporting
this assertion exist, no one disputes
the claim, and regional figures show
that the Hazel Hill truffirewhich
is still not fully maturealready
produces more truffles than
Australias other 160 growers combined. During last years harvest, a
record 8,400 pounds of truffles were
pulled from the soil at Hazel Hill.
Even more are expected this year.
Wild-foraged truffles still dominate
the European trade, but the modest
success of scientific truffle farming
in France, Italy, and Spain has
encouraged trial farms in such New
World locales as Napa Valley,
Oregon, and Appalachia. Although
Australia (which has no native culinary truffles or host trees) seems an
unlikely place to try truffles, farmers
in northern Tasmania planted the
countrys first truffire in 1991. Even
before they harvested their first
specimen in 1999, truffle farming
was being touted as the next great
wave of Aussie trophy agriculture
as if the Prigord could put Shiraz
in the shade.

managing director of the Truffle &

Wine Co.had a hunch that Western
Australia might be a better match
than Tasmania to the truffles
Southern European homeland. Six
years after planting the Hazel Hill
truffire in 1997, they harvested their
first trufflea nearly 6-ounce lump
slightly smaller than a baseball. By
2009 the project was producing
1,300 pounds of black truffles, and
production has grown dramatically
since then. Until another Southern
Hemisphere truffle farm can match
the magic in Manjimup, the company
has the Northern Hemisphere summer truffle market largely to itself.
Method, however, stands behind
the magic. The company meticulously selected pure Prigord spores
to add to the soil around its seedling
trees to guarantee that no competing

fungi would grow. (The 2010 publication of the DNA sequence of Tuber
melanosporum made that task easier.) The local bandicoots and black
cockatoos are not interested in truffles, and the environment in Western
Australia harbors none of the parasites, like truffle beetles and truffle
flies, that cause major problems in
European truffires. Moreover, the
Truffle & Wine Co. has added sufficient lime to the soil to create an
alkaline island in an otherwise acidic
sea. The recent discovery that the
fungus reproduces by an exchange
of DNA between individual fungi
(the mushroom equivalent of sex)
gave Harry Eslick, the Truffle & Wine
Co.s staff mycologist, the inspiration
to experiment with proprietary cultivation techniques to further boost
production.
The bounty of the Hazel Hill
truffire opens a second truffle season to diners around the world.
European black truffles are harvested from November through
March. Australian truffles are on the
market from late May through
August, and they reach North
Americ an chefs faster than
European truffles. Black truffles
develop their peak aroma around
five days out of the ground and hold
for roughly 11 days. Upon harvest,
the Truffle & Wine Co.s tubers are
quickly cleaned, graded, packaged,
and shipped, clearing U.S. customs
within three days of harvesting.
European truffle foragers may only
bring their finds to market once a
week, so by the time a truffle reaches
North America, its flavor is ebbing.
Truffle seasons in the two hemispheres do not overlap, so head-tohead comparisons are not possible.
But many high-profile chefs concur that the flavors are the same.
Traditional uses for black truffles
with braised meats, rich winter pastas, and fatty egg dishesplay up the
dark, sensuous musk of the fungus.
Summer dishes can explore another

dimension often obscured in heavier winter dishes. When paired with green asparagus, corn, sweet peas, or summer squashes,
black truffles bring a spice cabinet of flavors
into play: black pepper, nutmeg, coriander,
even the pungency of asafetida, an evocative scent that forms the bass note in many
South Asian curries.
Eli Kaimeh, chef de cuisine at Thomas
Kellers Per Se in New York, exults in the
newfound possibilities. We look forward
to a really good thing twice a year now, he
says. His favorite produce pairing from
last August was a succotash of corn, zucchini, and black truffles accented with
roasted peppers. The truffles provided
resinous overtones and a nutlike quality
to the mlange of sweet, soft vegetables.
Curtis Duffy, chef at Grace in Chicago, uses
them in dishes such as a savory crme
caramel topped with truffles, chives, and
a sherry sauce, and a squab preparation
with truffles, green strawberries, and sorrel. These Australian truffles are the equal
to any in the world, Duffy says.
Most U.S. chefs were introduced to
Australian truffles by Frank Brunacci, a
chef who left the kitchen in 2011 to become
a truffle importer. Now he is the vice president of sales for the U.S. subsidiary of the
Truffle & Wine Co. and supplies about 180
U.S. restaurants during the year. In May, he
also starts selling them direct through the
Truffle & Wine Co.s website. Wholesale
prices vary by grade, ranging from $300
per pound for parings to $650 per pound
and up for whole trufflesabout the same
range as European truffles.
A customers first box of Aussie truffles
is nearly always a hard sell. Based on his
experience with insipid lesser species of
summer truffles from Oregon and China,
Craig Strong of Studio at Montage Laguna
Beach was initially skeptical. In 2009,
Brunacci suggested that he try some samples with corn. The combination just
explodes in your mouth, Strong says. Now
he features a black-truffle dish every summer. Last year, I made corn agnolotti with
a corn custard as a base, corn in the middle
of the pasta with a little bit of mascarpone,
a corn foam, and fresh truffles, he says.
Most European-trained chefs never

thought about corn and truffles in the summertime. Now we do.

Chefs used to applying truffles to foie
gras or filet mignon discover a sudden,
giddy sense of liberation when they try
black truffles with the bright flavors of
summer vegetables. Ken Frank of La Toque
in Napa, Calif., has served all-black-truffle
menus in January and February for over
30 years. In 2014, he finally tried the
Manjimup truffles and realized what he
had been missing. He served a black-truffle
menu in July and August that included his
adaptation of a Catalan classic: a plate of
roasted, hand-crushed Yukon Gold potatoes over steamed Romano beans drizzled
with olive oil and sprinkled with sea salt
and black truffles. The earthiness of the
potato, the brightness of the olive oil, the
slightly sweet but earthy tone of the bean,
and the truffle combine in a way thats
magical, he says.

THE NEXT MORNING in Manjimup,

where the truffle production has a magical
air of its own, the weather is unusually
dank after an all-night rain. At breakfast,
I shave a small black truffle over my scrambled eggs and toss them with a pat of butter. The eggs make the truffles taste like
toasted almonds with a hint of pine, and
the truffles make the eggs sweet. This indulgence is possible in a community where
bits and pieces of black truffle are available
for a song compared to the perfect specimens shipped around the globe.
At the truffire, the truffle hunters are
out with their dogs, retrieving precious
fungi from the suddenly sodden soil. The
truffles in plastic crates in the grading
room do not look the worse for wear, though
some are a little muddy. I ask if the weather
has hurt them, and a worker lifts a box to
my face so I can inhale the aromas. The
funky scents of earth and spice make my
eyes water.
OK, mate? he asks. Oh yes, very OK.

hectares and is planted with 80 percent Merlot and 20
percent Cabernet Franc. We produce about 50,000 bottles
annually, including our Castillon Ctes de Bordeaux wine.

What do you enjoy about the winemaking process?

What really interests me is creating a certain style of wine,
indeed crafting a productwinethat emanates from
and reflects the terroir. Vineyards are constantly evolving
and improving over time. Thats what I love about vine
growing and winemaking. It is a permanent challenge
that requires us to be in constant touch with nature.
How did you get involved with truffle farming?
My family always owned little parcels of land with truffle
oak trees. Truffle farming is a lifestyle, an art form in which
my family has always been involved in a dilettante sort of
way. I wanted to create something in keeping with a way
of life that I cherish and create a business out of it.

Didier Le Calvez
A CONVERSATION WITH THE HOTELIER,
VINTNER, AND TRUFFLE FARMER.

IDIER LE CALVEZS STORIED hospitality career has taken

him from the Plaza and Pierre hotels in Manhattan to the
Shangri-La in Hong Kong and the Four Seasons Hotel George V

in Paris. Most recently he guided the restoration of the legendary Le Bristol Paris (see page 98) for the Oetker Collection, for which he now serves
as senior vice president of operations, sales, and marketing. Le Calvez
and his wife, Olivia, also own a thriving vineyard in Bordeaux, a nearby
truffle farm, and two boutique hotels on le de R, where he grew up. The
multifaceted Frenchman took a break from his active schedulewhich in-

What attracts you most to the French countryside?

Certainly, one of my greatest joys occurs when Im in
the countryside, where there is a keen sense of peace
and serenity. For me, its a time of true intellectual relaxation. Those privileged, peaceful moments last only a
few hours or maybe a few days, but they afford me a total
disconnect with the world of the hospitality industry.
The time I spend in the countryside puts me in touch
with our core values, with what really matters.
Tell us about your boutique hotels on le de R.
Purchasing the Htel de Toiras and Villa Clarisse was, in
a way, a contribution to our regional tourism because they
are ideally located between Bordeaux, UNESCO World
Heritage Sites, and the beautiful chteaux of the Loire
Valley and Brittany. Saint Martin de R, where Villa Clarisse
is located, is one of the UNESCO World Heritage Sites,
and its always been very close to my heart since it is my
mothers hometown, of which she was once the mayor.

How do you spend your free time?

All my off time is dedicated to my family, playing sports
with them and sharing a nice meal around the family
dinner table. It is very important to me to enjoy those
privileged moments with my children.

BRUCE MORSER

What motivated you to acquire Chteau Clarisse?

It was a lifelong project and a challenge that I wanted to
take in my life. Ive experienced the vineyard environment since childhood, as my grandmother had a house
near Chteau Bouscaut, close to Bordeaux. The desire to
acquire my own estate grew even further when I worked
in California in the early 1980s. I was fascinated by the
Californian wine producers enthusiasm, such as Robert
Mondavi, Warren Winiarski, Mike Grgich, and more
recently Ann Colgin. My wife and I acquired the Chteau
Clarisse vineyard in 2009. Today, our vineyard covers 14.5

What are your favorite hotels outside of the Oetker

Collection?
One of my favorite hotels is the Mandarin Oriental in
Bangkok, which has a consistency over time with a record
of more than 50 years of great service. The Raffles is also
one of my preferred hotels and is undeniably emblematic
of Singapore. In the United States, I particularly enjoy the
NoMad Hotel in New York and the Peninsula in Los Angeles.
