Equipment Budget Justification

Purpose: A new combination oven is needed in our kitchen at Green Meadows Senior Living Facility.
Problem: Due to the increasing amount of baby boomers becoming part of the elderly population, there
has been a 10% increase in our patient population at Green Meadows Senior Living Facility. Our current
steam oven has started leaking water due to the high demand we have placed on it, and our facility is in
need of a new one. Upon thorough research on different types of ovens, I have found that purchasing a
combination oven may be the best solution, since this type of oven has the ability to function as both a
steam oven and a convection oven, allowing it to be more versatile.
Selected Models:
I have found six different combination ovens that may be a great fit for our facility. Three of them are
electric, and the other three run on gas. I have attached detailed information about the performance of
these ovens at the end of this document. I will compare each oven below based on initial cost of purchase
vs. lifetime cost, performance, and efficiency.

In order for our facility to run as efficiently as possible, I have compared each oven and the different
performances, efficiencies, and costs in order to choose the best one. Below are the ovens separated by
electric and gas.

Recommendation:
Initial Cost of Purchase and Lifetime Costs:
Although the electric base efficiency oven is the most cost effective for the initial cost of purchase at
$5,225, the entire oven should be taken into consideration. The Alto-Shaam 7.14 ESI Electric Ovens
initial cost of purchase is $6, 575, which is still cost effective relative to the other five choices. The least
expensive oven in terms of total lifetime cost would be the Alto-Shaam CTP7_20G Gas Oven at $17,761,
which is about half of the price of the Alto-Shaam 7.14 ESI electric oven at $31,283. However, it is
important to consider all of the variables that contribute to this total lifetime cost.
Performance:
The Alto-Shaam 7.14 ESI electric oven is more expensive, but is a lot more energy efficient and has a
high production capacity at an average of 68.5% energy efficiency and an average of 122.5lbs/h
production capacity when compared to the other five ovens.

Gas vs Electric:
I have chosen the electric Alto-Shaam 7.14 ESI, since it is the most energy efficient, and has a great
production capacity. Lastly, although gas prices are currently low, they are expected to rise in the near
future, and this may contribute to higher costs to run our oven, so electric may be the best way to go.
Conclusion:
Ultimately, I would recommend purchasing the Alto-Shaam 7.14 ESI Electric Combination Oven. The
Alto-Shaam 7.14 ESI Electric Oven has the lowest pre-heat energy consumption at 1.09kwh. It also has
the lowest idle energy rates at 1.42kw and 0.92kw for convection and steam modes, consecutively.
