beer-braised oats. But these sausages are good all day or
night long! Served with Carolina Rice, carefully aged three
years with wild bay leaves, in a Spring purloo with grilled
asparagus, and lemon-dill butter. $15

Oyster & Absinthe Chowder

A rich, creamy, root vegetable & fennel hash, with


pan-roasted oysters doused in absinthe & olive oil to take
the classic chowder on an unforgettable detour. $12

"Una Muy Bonita" Seafood Cobb Salad

In homage to Ornette Coleman's album, 'Change of the


Century,' we offer our revised riff on the Cobb Salad
featuring fried oysters, boiled shrimp, Green Goddess
dressing, hearts of palm, roasted golden beets, and
smoked cucumbers with seaweed finish our melody to "la

Turkeys were raised around McMinnville for decades, so


we salute this most American bird with Nueske's smoked
turkey and applewood bacon, tomato, and Mornay sauce
on a white waffle based on dosa batter. $15

"Spooky" Blue Corn & Huitlacoche Waffle


Oregon exotic mushrooms sauted with shallots, Wild
Turkey Bourbon, and finished with huitlacoche butter, from
the notorious corn fungus/truffle, served over heirloom

Beautiful Lowcountry Carolina Gold Rice, aged for 3 years


in wild laurel leaves, infused with asparagus, peas, and
mint. Nueske's bacon and boiled shrimp are added to

chocolate mol, so we present this classic over earthy
heirloom blue corn waffles. No, not "chicken & waffles!"

ginger, cardamom, orange honey blossom glaze, and a
