EDITORIAL
A series of exhibitions and shows with hindsight, conceived and centred around the role of women
in photographic history, have served to make our own journey through this art-cum-documentary form of
expression from a feminine approach, asking ourselves for what reasons (sociological, artistic, economic...)
the presence of work signed by women is not in proportion to the large number of artists who have devoted
their lives to photography. It is, to say the least, a curious phenomenon and curiosity stimulates creativity (it
is, perhaps, the driving force). This same curiosity has guided us through fascinating routes and we now share
with you this artistic journey which also serves to reflect upon an internal history of the last two centuries.
That voyage through history has turned into a trip through physical space in our particular leisure proposal
for the summer and autumn of 2010: a peregrination through the European, open-air scenarios, from festival
to festival of classical music. Over these months, Europe becomes a gigantic scenario, art floods the streets...
and we have designed a route not to be missed for the lovers of intelligent leisure. As, intelligent indeed is the
latest novel by Javier Reverte, an acclaimed writer specialized in travel narrative, who presents his latest book,
Barrio Cero (Zero District).
Our voyage reaches its climax in one of the most trilling European cities, Budapest. There is where we go
to discover how, the same way as in so many other places, history and art shape the city outlines and create
spaces that are unique and unrepeatable.

El artista japonés expone en el Palacio de Versalles
del 14 de septiembre al 12 de diciembre
El Palacio de Versalles es uno de los mayores símbolos de la
historia occidental, el emblema de una ambición de elegancia,
de sofisticación y de arte y esplendor. Y precisamente por eso,
Takashi Murakami ha puesto todo su empeño en convertirse en
el segundo artista que logra exponer su obra en este reducto. El
primero fue Jeff Koons, en 2008. Ahora, Murakami, el artista
japonés más cotizado en el mundo occidental (su récord en
subasta supera los quince millones de dólares), llevará a
Versalles una muestra de su obra naïf, colorista y kitsch, a
caballo entre el manga, la animación, el merchandising y el pop.
Murakami, conocido como el Andy Warhol japonés, es hoy día
uno de los artistas japoneses más célebres y reconocidos en
todo el mundo.

Versailles from 14 September through to 12 December.
The Palace of Versailles is one of the most important symbols in
the history of the western world. It is the emblem representing
the ambition for elegance and sophistication, as well as art and
splendour. And, precisely for this reason, Takashi Murukami has
placed every endeavour towards becoming the second artist
who has achieved an exhibition in this stronghold. The first was
Jeff Koons, in 2008. Now, Murakami, the most coveted
Japanese artist in the western world (his record in an art auction
was for more than fifteen million dollars) will be bringing to
Versailles a display of his naïf-style work, colourful and kitsch,

3 BMW calls its 25th Painting Prize: In this edition, the accent will be on
optimizing values such as ecology, coexistence or technology. The BMW
Painting Prize this year reaches its 25th edition, under the heading of EfficientDynamics.
The competition is open to all painters, whether of Spanish or other nationality, resident
in Spain. The BMW Painting Prize, EfficientDynamics, has made a point of divulging the
following suggestions with regard to the subject matter of the competing paintings:
“Ecology and the Environment”, “Nature and the Animal World”, “Culture and
Coexistence”, “Art and the History of Mankind on Earth”, “Aesthetics and Technology”
and “The Creativity of Man in Time through Civilizations”. The paintings, limited to no
less than 100 x 81 cms nor any larger than 195 x 195 cms, can be delivered from 10 to
30 September at the central headquarters of BMW in the major Spanish provincial

FIVE El Centre de Cultura Contemporània de Barcelona idea una muestra interactiva en torno a los laberintos
SENSES El laberinto como construcción y símbolo está presente en muchas tradiciones culturales de la humanidad, y con esa excusa, el
Centre de Cultura Contemporània de Barcelona (CCCB) ha diseñado una exposición interactiva a través de la cual podremos hacer un
repaso del concepto y la representación del laberinto a lo largo de la historia. La muestra incluye objetos y formatos múltiples y de
diversas épocas: piezas arqueológicas, fotografías, proyecciones, maquetas… Pero se revela también como una experiencia en
primera persona, ya que diferentes espacios del museo han sido convertidos en laberintos de distinta índole que arrancan al visitante
de su papel de espectador para situarlo como sujeto protagonista de la exposición. La disposición de la muestra Por laberintos, que
nos arrastra por el interior del objeto expositivo, desemboca en una última estancia dedicada a los laberintos vegetales que figuran en

created an interactive display using labyrinths. The labyrinth as an element in building and as a symbol is present in many of
mankind’s cultural traditions and, using this as an excuse, the Centre de Cultura Contemporània in Barcelona (CCCB) has designed an
interactive exhibition by means of which we can make a revision of the concept and the representation of the labyrinth throughout
history. The exhibition includes numerous objects and formats from different eras: archaeological items, photographs, videos, models,
etc. But it is also meant to be a personal experience, inasmuch as different areas of the museum have been converted into mazes or
labyrinths of various types, which remove visitors from the role of spectators to turn them into acting protagonists. The layout of the

El Museo de Arte Contemporáneo de Los Ángeles
dedica al actor fallecido su primera exposición
Por vez primera un museo estadounidense reconoce la
dimensión artística de la obra del actor Dennis Hopper,
fallecido el 29 de mayo. El Museo de Arte Contemporáneo
de Los Ángeles (MOCA) le ha dedicado una exposición que
muestra más de 200 trabajos, realizados a partir de los años
sesenta. En esta especie de antología es fácil rastrear la
evolución del artista, capaz de explorar en la abstracción, el
pop art o el realismo. Dennis Hopper. Double standard
(hasta el 26 de septiembre) incluye fotografías, graffitis,
pinturas e instalaciones seleccionadas por Julian Schnabel,
un artista que ha reconocido en sí mismo las influencias de
Hopper, icono rebelde de Hollywood y creador curioso capaz
de saltar de la pintura a la fotografía y de ésta a cualquier otra
disciplina. Puede visitarse hasta el 26 de septiembre.

time a U.S. museum acknowledges the artistic dimension of
artwork by actor, Dennis Hopper, who died last May 29. The
Los Angeles Museum of Contemporary Art (MOCA) has
dedicated an exhibition of over 200 of his works of art,
produced from the Sixties onwards. This kind of anthology
makes it easy to trace the evolution of this artist who was
capable of exploring abstract art, pop art or realism. Dennis
Hopper. Double standard includes photography, graffiti,
paintings and installations selected by Julian Schnabel, an
artist who has acknowledged Hopper’s influence in his own
work; Hopper, rebel icon of Hollywood and an inquisitive
creator, was capable of jumping from painting to

A mi madre le gustaba sobre todo leer: viendo la ilusión con que esperaba
anualmente la llegada de la última novela de Agatha Christie, aprendí sin
necesidad de más estímulos educativos que la lectura es un placer. Ella me regaló
mis primeros libros, que sigo prefiriendo a todos los demás: Chesterton, Jules
Verne, R.L. Stevenson, Kipling… Mi padre era notario y se pasaba la semana
trabajando en su oficina. Sólo lo tenía para mí el domingo, el día en que los dos
nos íbamos juntos al hipódromo. Allí me contaba historias de campeones del
pasado y discutíamos cada una de las carreras de la tarde. Hace ya más de
cincuenta años… Las dos pasiones de mi vida, la lectura y el turf, son herencia de familia.
De modo que aquí estoy, otra jornada más, en el hipódromo madrileño de la Zarzuela. Es un
recinto modesto entre los grandes europeos, pero rodeado de un paisaje hermoso. Tras la pista,
al fondo, se yergue la silueta de un palacio real, como en Chantilly…, aunque con la diferencia de
que en ese palacio aún habita un rey en ejercicio. Cuando me acerco al paddock para ver a los
caballos, me encuentro con numerosos amigos que conozco desde hace décadas…, pero a los
que sólo veo en el hipódromo. No sé a qué se dedican profesionalmente ni como es el resto de
su vida cuando salimos de aquí. En este limbo hípico somos hermanos de afición, fuera

M y mother loved reading: seeing the excitement with which each year she awaited
the arrival of Agatha Christie’s latest novel, I learned without the need of any
additional educational stimuli that reading is a pleasure. She gave me my first
books, which I continue to prefer above all the others: J.K. Chesterton, Jules
Verne, Robert Louis Stevenson, Kipling... My father was a notary public and he
would spend the week at work in his office. I only had him for myself on Sundays,
the day we would go together to the horse racetrack. Here is where he used to tell
me tales of champions of old and we would discuss each of the day’s races. This was more than fifty years ago... The two passions
of my life, reading and the turf are family inheritances.
So, here I am, yet another day at Madrid’s Zarzuela race course. It is a modest compound compared to the great European
racetracks, but surrounded by beautiful scenery. Behind the track, in the background, rises the silhouette of a royal palace, as in
Chantilly... although the difference is that in this palace a king still lives and reigns. When I approach the paddock to see the
horses, I meet up with innumerable friends whom I have known for dozens of years... but whom I only see at the racetrack. I have
no idea what professions they devote their lives to or how they live when we leave the
place. In this equine limbo we are brothers in our pastime, outside we turn back into
mere human beings, that is: strangers.
Often enough, those people who otherwise only know that I am a professor of
philosophy ask me, “Why do you go to horse races? What is it you find there?” For
sure, if I were a football fan they would not express such surprise... Anyway, I shall try
to give an answer. All games and sports – from chess to rugby, including the turf – are a
kind of summary or models of human life. We have the space shut off from the world,
the precise time-span in which everything is won or lost, the risk, the merits of
success or failure, the struggle between opposing interests, the possible complicity and
also the possibility of alliances, the inexorable end that dictates its sentencing...
But horse racing has other aspects which are even more similar to real life,
specifically the challenge of freedom. Each race is run over a set distance and in
handicap conditions that the participants has to accept: the jockey rides a horse with a specific capacity that he must administer as
best he can; of course, he cannot choose his adversaries; as for the day and time of the competition, no postponement can be

So, I am here on the racecourse because I want to study the functioning of freedom and human life? Let’s be frank: no. I come
here because it is entertaining, for the sake of enjoyment, for the same simple reason that children get wrapped up in their play
stations. I am looking for excitement and fun, not more knowledge: perhaps I should do the same for the rest of my life. Is it

Mientras de las paredes de los hogares acomodados en la Inglaterra Victoriana colgaban las primeras fotografías de
prohombres en actitud magnífica, Julia Margaret Cameron (1815-1879) rompía el encuadre de los retratos hieráticos con fotografías que huían de la
meticulosidad para ensayar el retrato íntimo a través del claroscuro y el soft-focus (suavizar el enfoque). Julia Margaret Cameron, tía abuela de la
escritora Virginia Wolf, está considerada como una pionera de la fotografía, la primera mujer que merece ostentar el calificativo de artista fotográfica.
Y el hecho de ser mujer añade aún más mérito, sobre todo en el contexto victoriano, profundamente misógino, y en una época en la que incluso
Charles Darwin, que revolucionó el pensamiento con El origen de las especies, calificaba el género femenino como “débil, sensible y de marcado
temperamento nervioso”.
Julia Margaret Cameron inició su actividad fotográfica a los 48 años, en 1863, una actividad que la llevó al género del retrato y la alegoría religiosa y
literaria, con una factura íntima y poco convencional para la época. La fotógrafa quiso captar una belleza romántica con influencia de la pintura pre-

temperament”.
Julia Margaret Cameron commenced her activities as a photographer at the age of 48, in 1963, which eventually brought her to portraits and
religious and literary allegories, with a hallmark of intimacy, most unconventional for the period. Her desire was to capture romantic beauty,

aportar a la fotografía la dimensión de las artes mayores y fue por ello una de las principales artífices del desarrollo de la fotografía como expresión
artística.
Afrontar un recorrido de la historia de la fotografía como arte desde una perspectiva de género se justifica por el contraste entre la valiosa
aportación de muchas artistas y la escasa representación femenina en esta disciplina, ya no sólo en materia artística, sino también documental y
periodística. Incluso hoy día, de los 80 fotógrafos en nómina de la prestigiosa agencia de fotoperiodismo Magnum, sólo siete son mujeres. El MoMA
de Nueva York ha programado hasta finales de septiembre de 2010 la exposición ‘Imágenes tomadas por mujeres: Una Historia de la Fotografía
Moderna’, en base a esta perspectiva de género que pretende reivindicar el papel femenino en el desarrollo de la fotografía y, sobre todo, reflexionar
sobre la exigua presencia de la mujer, a pesar del ingente volumen –y la calidad– de su producción. En esta línea, las comisarias de la exposición,
Roxana Marcoci y Sarah Meister, ya apuntan una posible idiosincrasia de la fotografía hecha por mujeres: la atención especial sobre dramas cotidianos
y una empatía con los personajes que aparecen dentro del encuadre.
La mirada crítica sobre los dramas sociales fue una de las constantes de Dorotea Lange (1895-1965). Poco después de que J.M. Cameron captara la
intimidad de los personajes en retratos posados, Lange viajó por el mundo realizando fotografía documental. Su obra más conocida es la realizada
durante los años de la depresión económica de Estados Unidos, en los que fotografió las condiciones de vida en área rurales para la Farm Security
Administration. También es muy conocido su trabajo sobre los campos de internamiento de americanos de origen japonés, realizado en los años
cuarenta, durante la guerra, aunque en su momento fue censurado por las autoridades norteamericanas.
Los últimos trabajos de Lange, antes de su muerte en 1965, coincidieron en el tiempo con los primeros de Helen Levitt (1913-2009), otra de las
grandes fotógrafas norteamericanas. Levitt compartió con Lange su estilo documental, aunque, a diferencia de Lange, centró su actividad en la vida
urbana, sobre todo en las zonas populares de Nueva York. Sus imágenes captan pequeños instantes de la vida cotidiana, momentos aparentemente
banales, pero con un gran sentido metafórico sobre las condiciones sociales. Levitt fue amiga de Cartier-Bresson y Walker Evans y colaboró con Luis
Buñuel, a quien ayudó en sus cortos de propaganda pro-norteamericana en la II Guerra Mundial.
Con un estilo radicalmente distinto y una mirada que muchos calificarían de morbosa, Diane Arbus (1923– 1971) también se enmarca en la tradición
de la fotografía documental de Estados Unidos, pero centrándose por completo en el retrato de personas marginales: enfermos mentales, gigantes,
familias disfuncionales, fenómenos de circo... Ella sostenía sin ambages: “Quiero producir temor y vergüenza en el espectador”. Arbus fue otra
pionera, en este caso del flash de relleno (flash de día).

En un universo totalmente diferente, la obra de Claude Cahun (1894-1954) es una continua reflexión sobre sí misma, un juego permanente de
espejos y de metamorfosis, entre la fascinación y la repulsión, en una obra compuesta en gran parte de autorretratos. De su gusto por el teatro extrae
una auténtica pasión por la puesta en escena, tanto de sí misma como de otros objetos. Sus instalaciones son precursoras de fotógrafos
contemporáneos como Alain Flescher o de artistas plásticos como Christian Boltanski. Singularmente revolucionaria para su época es que su
autobiografía a través de la imagen concede un papel importante a la identidad sexual: Cahun deseaba ser parte de un tercer género indefinido, en la
frontera entre la homosexualidad, la bisexualidad y la androginia. Cahun es un rara avis, que no sigue ninguna corriente ni preocupación de su época.
La exposición del MoMA ilustra a la perfección la evolución de la fotografía en más de 150 años de historia, con la
irrupción, en la década de los setenta, de las técnicas de manipulación, de la profusión de collages... La diversidad de estilos es la constante. Si a finales
del siglo XIX y principios del XX la fotografía se centra en el retrato y, a mediados del XX, la corriente documental realista es la que tiene mayor
presencia, a partir de los setenta –como en otras muchas disciplinas artísticas– la fotografía multiplica enfoques, técnicas, caminos y objetivos.
La denuncia social sigue presente con trabajos como los de Martha Rosler (Nueva York, 1943), que ha explorado críticamente la problemática del
urbanismo, de la mujer, de los medios de comunicación... Con su voluntad de analizar ese otro lado del discurso políticamente correcto, las relaciones

stage sets, as much with himself as with other objects. His installations are the forerunners of contemporary photographers like Alain Flescher or plastic
artists like Boltanski. Especially revolutionary for his times is the fact that his autobiography through images concedes sexual identity an important role:
Cahun wished to be a part of a third, undefined sex, on the edge of homosexuality, bisexuality and androgyny. Cahun is a rare bird, not following any
undercurrents or concerns of his day and age.
The MoMA exhibition illustrates perfectly the evolution of photography in over 150 years of history, during the ‘Seventies with the bursting in of
manipulating techniques, the profusion of collages, etc. A diversity of styles is a constant feature. If, at the end of the 19th century and beginning of
the 20th photography is focused on portraits and, by mid-20th century it is realistic documentary photography that attracts the greatest attention
– as in many other art forms – photography has multiplied its focuses, its techniques, its paths and its targets.
Social criticism continues to be present with work such as pictures by Martha Rosler (New York, 1943), who has critically explored the problems of
city dwelling, women’s problems, media problems… although her reflections go much deeper. Wishing to make an analysis of the other side of
political correctness, and everyday relationships (that is, to make a kind of X-ray of political power, but as well, as expressed in daily life), she
commenced her first pieces of work in the ‘Sixties, which consisted of photomontages. She placed discordant elements (military, war wreckage, etc.)

El verano y el otoño brindan una deliciosa oportunidad para descubrir, en toda Europa, festivales de música clásica que revitalizan
e inundan de cultura las calles de varias ciudades en todo el continente: desde las principales capitales hasta los lugares más recónditos en los que, tras
una infraestructura aparentemente modesta, se esconden algunos de los certámenes clásicos de mayor relieve. El periplo para disfrutar de la mejor
música clásica en directo recorre Europa de norte a sur, y de este a oeste. En Huvila, desde el 20 de agosto hasta el 9 de septiembre, el Festival de
Helsinki, que abarca numerosas disciplinas (danza, teatro, circo...), despliega un programa de música clásica centrado en el compositor patrio de
Finlandia por excelencia, Jean Sibelius (1865-1957). El evento suele ser muy concurrido, ya que en Finlandia la formación musical tiene un enorme peso
en el sistema educativo y eso ha creado una sensibilidad artística muy extendida en todas las capas sociales. Además, el Festival de Huvila se celebra al
aire libre, en una época del año en que la ciudad disfruta de entre 14 y 19 horas de luz solar al día.
El de Huvila coincide prácticamente en el calendario con el Festival Internacional de Edimburgo (del 13 de agosto al 5 de septiembre). Sesenta y tres
años de historia y un programa con más de 200 actividades (entre conferencias, conciertos, recitales, representaciones teatrales, proyecciones

sensoriales del verano mediterráneo.
Chopin y Schumann están muy presentes en el periplo de festivales musicales del
2010. El Festival Bethoven en Bonn (cuyo origen más remoto data de 1845) acoge este
año en su programa un ciclo denominado Bethoven y Schumann, dos revolucionarios.
Varios recitales combinan el repertorio de ambos compositores entre el 10 de
septiembre y el 9 de octubre. La ciudad natal de Schumann, Zwickau, cerró ya en junio
su particular homenaje, así que Bonn (lugar en el que falleció) se convierte en la última
estación del Año Schumann o, si no la última, sí la que llevará a cabo un mayor
despliegue musical en torno al compositor en lo que queda de 2010.
Por su parte, Varsovia centra las celebraciones en torno al compositor Chopin. El
artista, nacido en la ciudad polaca de Zelazowa-Wola, vivió gran parte de su vida en
París, y allí fue enterrado. Pero, por deseo expreso, su corazón fue extraído para recibir
sepultura en la basílica de la Santa Cruz de Varsovia. De aquí a final de año, la capital
polaca se vuelca con este bicentenario: cincuenta eventos musicales llenan los meses de
agosto, septiembre y octubre, en el marco del Festival Internacional de Música
organizado por el Instituto Chopin. Así, el 17 de octubre la Orchestre des Champs-
Elysées ejecutará el Réquiem de Mozart en la basílica de la Santa Cruz, en honor a
Chopin, mientras que, del 2 al 23 de octubre, se celebra la XVI Competición
Internacional de Piano Fryderyk Chopin, que se organiza cada cinco años desde 1927.

En el otro extremo de Europa, la ciudad checa de Marianske Lanze también celebra, entre el 16 y el 23 de agosto, su Festival Chopin. El evento
incluye conciertos de la Orquesta Sinfónica de Praga, varios recitales de piano y un concierto a cargo de los ganadores del Concurso de Piano
Internacional Fryderyk Chopin. A muy pocos kilómetros, en la capital, la Ópera de Praga dedica el mes de agosto y la primera semana de septiembre
a la representación exclusiva de obras de Giussepe Verdi, en un festival que nació en 1993. Durante el Festival Verdi, la Ópera pone a la venta todo el
aforo, ya que queda excluido de la programación anual de abono.
La música clásica inundará también Bruselas entre el 7 y el 17 de septiembre. El KlaraFestival se inaugura con una gran noche de gala en la que se
puede asistir a conciertos gratuitos en las principales estaciones de tren de la ciudad. Además, merece especial atención la participación de la
agrupación Concerto Köln. Integrada por graduados de varias escuelas de música europeas especializados en la interpretación con instrumentos de
época, lleva a cabo una interesante reinterpretación de la música orquestal y operística de los siglos XVII y XVIII.
Nuestro recorrido termina en uno de los festivales clásicos de mayor proyección: el de Salzburgo, que celebra en 2010 su 90 edición, del 25 de julio
al 30 de agosto. Los conciertos y las óperas se representan en seis escenarios repartidos por toda la ciudad, con las tradicionales Matinés dedicadas a
Mozart, hijo predilecto y espíritu del festival. De hecho, la ciudad amplía este año su tributo al compositor con la creación de un nuevo programa, que
comenzó el 22 de mayo y se prolongará hasta el 30 de octubre: los Conciertos Sinfónicos de Mozart. Durante esos meses la Orquesta Amadeus de
Salzburgo viene ofreciendo cada sábado uno de los 32 Conciertos Sinfónicos de Mozart, en un ciclo único dedicado al artista. Entre los escenarios
donde tiene lugar los eventos figuran la Gran Sala del Mozarteum, el Aula Magna de la Universidad y el Palacio de Congresos.

Classical music will also inundate Brussels between 7th and 17th September. The Klara Festival will be inaugurated with a grand gala celebration in
which concerts can be attended free in the city’s main railway stations. Also, particularly worthy of mention is the participation of the Köln Concerto
group. Formed by graduates from various music schools in Europe specialized in performances using instruments of the period, this group carries out
an interesting reinterpretation of 17th and 18th century orchestral and opera music.
Our tour ends in one of the classical festivals of the greatest relevance: the Salzburg Festival, which in 2010 (from 25th July to 30th August) will hold
its 90th edition. The concerts and operas will be performed in six venues spread over the city, with the traditional matinée performances of music by
Mozart, the city’s prodigal son and the spirit of the festival. Indeed, this year the city is extending its tribute to the composer with the creation of a
new programme, commencing 22nd May and which will continue until 30th October: the Mozart Symphony Concerts. Every Saturday during the
festival months, the Salzburg Amadeus Orchestra will be offering one of the 32 Mozart Symphony Concerts, in a series dedicated exclusively to this
genial composer. Amongst the venues are the Grand Mozarteum Hall, the University Aula Magna and the Congress Palace.

The boy stopped, took a deep breath, and the tears stopped flowing. He could see more juniper bushes in the fog, but one of them had two thick
trunks – and suddenly the boy realised it was moving.
It was a person. A man.
He came forward out of the grey fog and stopped just a few short steps away. The man was tall and broad-shouldered; he was dressed in dark
clothes, and he had seen the boy. He stood there in the grass, heavy boots on his feet, looking down at him. His black cap was pulled down over his
forehead and he looked old, but not as old as the boy’s grandfather.
The boy stood still. He didn’t know the man, and you had to be careful of strangers, his mummy had said. But at least he wasn’t alone in the fog
with the juniper bushes any more. He could always turn around and run if the man wasn’t nice.
“Hello there,” said the man in a deep voice. He was breathing heavily, as if he’d just walked a long way in the fog, or as if he’d been running fast.

Ecological agriculture is on the upgrade, and the wine producing world is not
oblivious to it. Many wineries are already producing ecological wine and obtaining – if they comply with all
the necessary requisites – the official certification of Ecological Wine, within the Generic Denomination
Ecological Agriculture. These requisites take in the entire production process: the soil must be fertilized with
natural, organic substances (particularly those of plant origin resulting from the crop itself, such as ground
marc or vine shoots); conservation and bottling must be effected without any treatment and fermentation
without any antiseptic, antioxidizing SO2, very common in wine production.
Can any difference in taste or, in general, the quality of the wine be perceived? In principle, no difference
should exist. The aspect that could cause some variation is limiting the use of the SO2 antioxidant since,
being so restricted, the wine obtained via this process oxidizes more readily. This should not affect the
consumer but rather the producer: during the bottling and storing of the finished product, the winery runs
the risk of loosing a large part of the harvest because it has gone bad, whereas, using the habitual techniques,
there are greater guarantees of placing practically the entire production on the market.

we can find traces of influences as different as Latin American or African, which is hardly surprising as all
influences arrived here via ocean routes. The ocean waters have also been decisive in a large part of Canaries
recipes. The wealth of species of fish and shellfish have given rise to local recipes that we will not find
anywhere else in the world and, thus, the main features in Canaries cuisine are the fish stews and the
Sancocho, salted fish in a hot, spicy Mojo sauce. And the Mojo sauce is precisely one of its identity marks.
There are various types of Mojo, but the most popular are the red and the green. The preparation is similar.
The red, Mojo picón, is made with oil, vinegar and hot, red paprika (picona); its spicy flavour is the perfect
accompaniment for the Papas arrugadas, rabbit and other meat dishes. For the green Mojo, paprika is not used
and instead, is substituted with coriander or parsley. As it is much milder, it is perfect for fresh fish. Mojo is an
unavoidable reference throughout the island cuisine and the combination of Mojo with potatoes (papas
arrugadas) simple as it is, has become the best-known dish in Canaries cuisine. Another aspect is that the
islands also owe many of their traditions to the Guanches, the ancient inhabitants of the Canary Islands, a
basically cattle-raising people. One of the oldest dishes is the Gofio, the basic diet of this race, made of wheat,
millet, barley and other toasted wholegrain cereal flour, with which numerous Canaries recipes are made.
