Chicken & Tortellini Soup

Feeds at least 8
Ingredients
2 cups cooked chicken
7 oz package cheese tortellini
3-4 cans chicken broth (or 4-6 cups) Chicken – Rice Soup
4 cans cream of chicken (about 4 cups) Makes 10-12 servings
1 cup chopped onion
2-3 tsp minced garlic (about 2 cloves) 2 cans (49 oz) chicken broth
2-3 tsp dried Italian seasonings (basil, oregano, rosemary, etc.) 2 cans canned chicken
1-2 tsp dill weed 1 jar (26 oz) spaghetti sauce
16 oz bag frozen broccoli, carrots, cauliflower blend 2 T. parsley
(about 3 cups of veggies fresh, frozen, or canned) ½ tsp. thyme
salt & pepper to taste 3 cups cooked rice
½ yellow onion diced (can use dried onion)
Preparation
In a large saucepan, sauté onion in a little oil, then add first 5 ingredients.
 Prepare tortellini as per package directions and strain. Bring to a boil; reduce heat, simmer 20 min. Add rice; simmer 10 min.
 Sauté chicken, onion and garlic just a bit. Optional: add other canned vegetables.
 Pour in and mix broth, cream of chicken, veggies, and seasonings to taste.
 Bring to a boil.
 Return tortellini to the soup.
 Serve!

Taco Soup
2 cans chicken or 1 ½ lb ground meat
1 onion chopped or dried onion
1 can of corn
1 can of pinto beans
1 can of black or kidney beans
1 can stewed tomatoes or (1 can Rotel + 1 can diced tomatoes)
1 packet of Taco seasoning
1 packet Hidden Valley Ranch Dressing

If needed brown meat first, combine all ingredients in a saucepan and


simmer. You can add water a little at a time to make it “soupier” and less
spicy if desired.
Vegetable Beef Soup
1-2 lb steak meat or ground beef
Easy Pumpkin & Chocolate Chip Cookie 2 large potatoes diced (or canned potatoes)
Makes 48 cookies 1 can sliced carrots
½ cup chopped onion (or dried onion)
1 Spice cake mix 1 can green beans
1 (15 oz) can pure pumpkin 1 can corn
1 cup mini chocolate chips 2 cubes beef bouillon
2 cans (soda size) V8
Mix together well. You can add ¾ cup chopped nuts at this time and drop onto 1 cup water
a Pam sprayed cookie sheet. Bake at 350 for around 10 minutes or until firm. 1 T. Worcestershire sauce
Allow to cool.
In crock-pot, combine all ingredients, liquid and all from canned veggies.
5-6 hours on high.
