Organisations should have a formal procedure to regulate the activities of

contractors on site, whether they be main contractors involved in project work

or small-scale contractors involved in activities such as window cleaning and

electrical work. Whilst company contractors’ regulations are largely concerned

with ensuring appropriate levels of health and safety performance, many

instances of food contamination can be associated with contractors’ employees

failing to recognise the significance of working in food premises.

The briefing of contractors in the food safety requirements, physical segre-

gation of specific areas in certain cases and control over all potential

contamination-producing activities in the work need constant attention.
