Ergot is a mycotoxin derived from a mould, Claviceps purpurea, and associ-

ated with grains, such as rye. The mould forms a hard black spur on the ears

of grain and consumption of contaminated products, such as bread, may cause

ergotism, a condition which can cause severe intoxication and even death

following consumption of large amounts of the affected food. Moreover, contin-

uing high levels of consumption of affected foods can cause gangrene.

Control is exercised by high levels of inspection and laboratory examination

of grain supplied to a food producer.
