Coliforms or, more correctly, faecal coliforms are a group of bacteria commonly

found in the colon (large intestine) and include Eischerichia coli(E. coli), Vibrio

choleraeand Shigella dysenteriae. Evidence of their presence in food may be

an indication of sewage contamination. Coliforms are also responsible for much

food spoilage, causing the production of ‘off’ flavours.
