Ratatouille, the darling of dinner parties in the 1970s, stages a comeback.


In this updated version, France meets Greece as savory eggplant, zucchini,
and tomatoes are sandwiched between layers of flaky phyllo dough. Phyllo
(sometimes spelled filo) is the delicate, paper-thin dough commonly used in
Middle Eastern desserts such as baklava, but its also a natural for savory
dishes such as this.

serves 6 to 8

6 tablespoons extra-virgin olive oil,


or as needed
1 medium yellow onion, halved
and thinly sliced
4 garlic cloves, minced
1 large eggplant, unpeeled, cut
into 1/2-inch dice
3 medium zucchini, cut into
1/2-inch dice
11/2 pounds plum tomatoes, peeled
and seeded (see Tip) and cut into
1/2-inch dice

In a large skillet, heat 3 tablespoons of the


olive oil over medium heat. Add the onion and
saut until translucent, about 5 minutes. Add
the garlic and saut for 30 seconds. Add the
eggplant and zucchini and saut until all of the
vegetables are tender, about 10 minutes. Stir in
the tomatoes, salt, and pepper, lower the heat,
and simmer, stirring occasionally, until most of
the liquid has evaporated, 5 to 8 minutes. Stir in
the parsley and dill and remove from the heat.
Position a rack in the middle of the oven

1 teaspoon salt

and preheat the oven to 425F. Coat a 9-by-

1/2 teaspoon freshly ground pepper

13-inch baking pan with some of the remaining

1/2 cup finely chopped fresh parsley

olive oil.

1/4 cup finely chopped fresh dill

inTrOducTiOn

Truth be told, I did not set out to write a book


called The Orchid Whisperer. But my editor knew
I already had the moniker and felt it would be a
good title, so I decided to run with it. (Plus, I liked
the idea of creating an orchid book that is around
the same retail price as a regular orchid). I have
been growing and decorating with orchids for
thirty years and the reality is that the more time
you spend with orchids the better you get to know
them. Now Im sharing what I know in this book.
Growing up in Berkeley, I spent quite
a lot of time in the garden. When I was about
twelve, my grandmother announced that I had
a way with plants, just like her father who was a
respected Russian naturalist and paleontologist.
By my middle teens, I was working after school
as a gardener. It was in these gardens that I discovered my first orchids.
In my early twenties, a job opportunity to
work as an orchid consultant for the city of Atlanta
presented itself. A fancy title, but in reality it was
more about repotting, cleaning the orchids, and
establishing some sort of regular maintenance
schedule. I was very luckywhen I left, all of
the orchids were blooming their heads off and I
had great letters of recommendation in hand.
I returned to San Francisco and was hired by the
Rod McLellan Orchid Company (one of the very
best firms at the time) as the head of their orchidboarding department. It was my dream job.
After a while, wanting more of the orchid
world, I left the firm and several of my major clients asked if I would keep them on. Of course I
agreed, and from there I was able to form my own
orchid maintenance, sales, and boarding business.

THE ORCHID
WHISPERER

I started supplying interior decorators and


worked to get orchids into major hotels, restaurants, and department stores. It was an exciting
time. I selected and maintained the orchids for
the famous Compass Rose Room at the St. Francis Hotel in San Francisco. I did the orchids for
Saks Fifth Avenue, who kept their orchids on the
design and couture floor, and I was in charge of
the orchid program for Nordstrom, had my retail
orchid shop at the old Gumps store, and rented
orchids to both Ralph Lauren Polo and Herms
of Paris. I also planned special orchid events for
fashion shows and big firms like Cartier. During
this period I was exposed to an incredible array
of orchid growing and display situations, at every
economic and social level.
I also had private clients who hired me to
manage their personal orchid collections and do
the orchid design work in their homes. I continue
to do this to this dayIve had some of my clients
for over twenty years! This has been fun, exciting
work, allowing me to hunt for orchids in the jungle
(which is really awesome, especially when youre
getting paid for it), attend auctions for luxurious
containers for displays, and have the freedom to
express my creativity in my clients homes.
I dont know if all of this qualifies me as an
orchid whisperer. I do know how to grow orchids
one client likes to claim that I can make a brick
bloomand I share the little tricks Ive learned
over the years in these pages.
The book starts out with a handy visual
glossary to familiarize you with the important
terms and parts of the plant before getting
started. From there, you will learn how and where

taking care to water them frequently. But in


homes where they are watered once a week, it
is best to grow them in plastic pots using a fine
bark mixed with small-size perlite.

enough so that they never get dry. They like
to be moist. You must check them often during periods of warm weather, as they can dry
out surprisingly fast. When growing in lowhumidity areas, water the entire plant to keep
mites at bay. You can water them slightly less
during late winter, when daylight is shorter
and the pots take longer to dry out.

These orchids are the jewels of the cool-growing


(40 to 80F) orchid world. The colors of masdevallias are incredibly bright and vibrant. In
the past twenty years, this orchid has exploded
in popularity in the market, with many growers
breeding them to be more heat resistant. The
masdevallia was named in honor of a famous
eighteenth-century Spanish botanist, Dr. Jos
Masdevall. It does well in the cool parts of a
house and grows very well outdoors in hardiness zones 8, 9, and 10 (see Outdoor Growing
Guide, page XX).

location in a cool room with good air circulation. Usually, the coolest room in the house
faces north and is on the bottom floor, so try
there first. In my greenhouse, I prefer to grow
these plants in sphagnum moss in clay pots,

I suggest using a 10-10-10 fertilizer diluted by


50 percent more than the recommended dose
every 2 weeks. Masdevallias collect excess salts
easily and their new roots are particularly sensitive, so watch for salt buildup on leaves.

Repot your masdevallia whenever it is loose in


its pot, as this indicates that the root system has
broken down and is no longer supporting the
plant. It should also be repotted if the mix is
soggy or smells foul or sour, as this indicates that
the plant has been overwatered or its drainage is
impaired. My current favorite potting medium
to use is sphagnum moss, as I have found that
it helps to keep the roots cool and allows them
grow more vigorously, but if you can water only
once a week, use fine bark mixed with small-size
perlite. Water the plant before starting. Remove
the plant from its pot and wash away the old
mix. Cut off and remove the old roots, especially
any dead roots in the middle of the root-ball.
If using moss, fill the cavity where you removed
roots from the root-ball with moss and then
