Meal #1 Roast Turkey For the pumpkin pies: 1 1/2 c + 2T granulated s ugar 2 t ground cinnamon 1 t ground ginger 1/2 t ground cloves 4 eggs 30-oz pumpkin puree 2 - 12-oz cans evaporated milk 2 pre-made pie crus t in pan pint heavy whipping cream For the cranberry sauce: 12-oz cranberries , fres h or frozen 1 c s ugar For the sweet potato soue: 5 large s weet potatoes , peeled, cubed and cooked 2 t + pinch of s alt 1 c s ugar 1/2 + 1/2 c butter 4 large eggs 1 T vanilla 1 c milk 2/3 c all-purpos e our 1 c brown s ugar 1 c walnuts or pecans , chopped For the stung: 12 T butter 8 s talks celery, 1/4-inch dice 3 onions , 1/4-inch dice 2 - 12-oz pkgs s eas oned bread crumbs 6 c chicken broth s alt and pepper For the fresh bread: 1 - 36-ct pkg frozen bread dough For the turkey: 1 - 18 lb whole turkey, giblets and neck removed 2 s talks celery 3 medium onions , cut into wedges 8 T butter, melted 2 t s alt 1 t black pepper For the mashed potatoes: 6 lbs red or rus s et potatoes , peeled and cut into 1/2-inch s lices s alt 1 1/3 c milk or buttermilk 8 T butter black pepper For the green beans: 2 1/2 lbs green beans , cleaned and trimmed 6 T butter 6 t lemon juice, s queezed from 1 lemon 1/4 c pinenuts or s livered almonds 1 1/2 t s alt For the gravy: 2 pkts gravy mix DAY BEFORE: For the pumpkin pies: 1. Preheat oven to 425. 2. Mix 1 1/2c s ugar, cinnamon, s alt, ginger and cloves in a large bowl. Add eggs and beat until well combined. Whis k in pumpkin until combined. Gently s tir in evaporated milk until combined. Carefully pour into the prepared pie s hell. 3. Bake pies for 15 min at 425. Reduce temperature to 350; bake for 40-50 more min, until a knife ins erted into the center comes out clean. Cool for 2 hours . Serve or refrigerate. 4. Right before s erving, whip cream with remaining 2T s ugar. Serve pie garnis hed with cream. For the cranberry sauce: 1. In a med s aucepan, combine cranberries , 1c water and s ugar. Simmer, s tirring occas ionally, for 15 min. Let cool. Serve at room temperature. For the sweet potato soue: 1. Prepare an 13x9-inch baking dis h with non-s tick cooking s pray . 2. In a large bowl mas h potatoes , s alt, white s ugar, milk, eggs and 1/2 c s oftened butter together. 3. In a medium bowl, combine with a fork 1/2 c melted butter, our, pinch of s alt, brown s ugar and walnuts . 4. Pour potato mixture into prepared baking dis h and s mooth out. Sprinkle evenly with nut topping. Cover and chill until ready to bake. Bake @ 400 for 45 minutes , covering with foil if nuts s tart to get to dark. For the stung: 1. Preheat oven to 400. Prepare a 9x13-inch baking dis h with non-s tick cooking s pray . 2. In large s killet over medium heat, melt 6T of butter. Add celery and onion and cook, s tirring occas ionally, until vegetables are tender (about 12 minutes ). Trans fer to bowl. Add s tung mix. Add all of chicken broth and 1c water, adding additional water 1c at a time to your des ired mois tnes s . Add s alt and pepper to tas te. 3. Spoon s tung into prepared dis h. Dot with remaining butter cut into bits . Cover with foil tightly . Chill until ready to bake or bake immediately. 4. Bake until heated through, about 45 minutes . Uncover and bake until top is cris p and golden, about 25 minutes longer. THE MORNING OF: For the turkey: 1. Heat oven to 425. 2. Rins e the turkey ins ide and out and pat dry with paper towels . Place wings underneath body . 3. Place celery and onions in bottom of roas ting pan. 4. Trans fer turkey to wire rack over vegetables . Drizzle turkey s kin with butter, us ing your ngers , s pread evenly Seas on with s alt and pepper. . 5. Roas t turkey uncovered for 30 minutes . 6. Add 2c of cold water to pan. Cover turkey loos ely with foil to prevent further browning. Reduce temperature to 325 for about 4 more hours . Bake s tung as ins tructions direct. 40 MINUTES BEFORE EATING: 1. Bake s weet potato s oue as ins tructions direct. Allowing 10 min to cool before s erving. For the green beans: 1. In a large s killet, toas t nuts until aromatic. It s hould take 2 -4 minutes over med high heat. Set nuts as ide. 2. Meanwhile, melt butter in the s ame large s killet. Allow the butter to turn rich brown color, it s hould take about 3-4 minutes . 3. Add frozen green beans . Cook until green beans are warmed thru and hot. 4.
