One of Californias most beloved producers of bubbles

Laetitia Winery is home to one of the Central Coasts most popular wine tasting destinations; and is equally known for its first-class estate vineyards. While most wine grapes in the Arroyo Grande Valley of the Central Coast are harvested in the fall; Laetitia Winery begins picking select Pinot Blanc, Chardonnay and Pinot Noir grapes from their vineyards this month. These grapes are picked early to ensure lower brix, or sugar level and higher acidity which is ideal for California sparkling wine made in the mthode champenoise. Immediately after the grapes are harvested, they are pressed and fermented just like a still wine. Laetitia uses a unique European style wooden basket press called a Coquard. When the wine has aged and blended to the winemakers preference, sugar and yeast is added to start another fermentation, and the wine is bottled. The yeast eat the added sugar and produce the lovely little bubbles for which Laetitias sparkling is so well known. After the yeast die, the wine continues to age in the bottle and the yeast sediment slowly adds richness and complexity to the wine. After aging, the wine is riddled, or turned slightly and slowly, over time to move the yeast to the neck of the bottle. Once all the yeast has settled in the neck of the bottle, the neck is frozen and the yeast is removed this practice is known as disgorging. To fill the space which is left by the removed yeast a dosage is inserted. This often also adds a hint of sweetness to the wine. Laetitias typical dosage is 12ml at 75% sugar which translates into 1.2% residual sugar in the bottle. The cork is inserted and topped with a cage for protection, and after a few months (or years depending on the bottle) the wine is ready to drink! While all sparkling wine made outside of the area cannot be called

Champagne, the traditional method of achieving fine bubbles in the wine can be practiced in viticultural regions around the world. The process is tedious and difficult but other methods of making sparkling wine cannot produce the same flavor profile and quality as with mthode champenoise. Laetitia has been producing their sparkling wine in this method since its inception by Maison Deutz in 1982 and today, the winery remains one of Californias most beloved producers of bubbles. Current offerings include the 2009 Brut de Blancs which is made solely from white grapes and offers bright, crisp flavors. A Central Coast favorite, the 2007 Brut Ros, made with both red and white grapes, has a beautiful salmon color and elegant floral notes. Cuve M was developed at the turn of the century to showcase Laetitias reserve sparkling wine. The 2007 vintage is creamy and rich with extra fine bubbles and hints of apple pie. Laetitia Winery welcomes guests to learn more about making their famous sparkling wine on August 25th (check with Laetitia to confirm, nature is not always cooperative during harvest!) with a demonstration from 11 a.m. to 1 p.m. Guests are encouraged to get dirty by stomping grapes in the Coquard presses. Afterward, participants, and all others that would like to join, are welcome to bring a picnic, grab a bottle of sparkling and enjoy live music from 1 to 4 p.m. Laetitias tasting room is open daily from 11 a.m. to 5 p.m. and serves samples of their selection of sparklers, along with their delicious still wines. Summer is an exciting time at Niner Wine Estates. The plant life in front of the hospitality center including the white meidiland roses, olive trees and fragrant provence lavender are all in full bloom; as is the beautiful surrounding Heart Hill Vineyard. The flora must have gotten word that Niner Wine Estates is planning on welcoming guests throughout the next several weeks during their summer events. Live and Local Saturday is held on select Saturdays from 1 to 4 p.m. and features a different local musician. Guests are able to enjoy the spacious and well-appointed outdoor patio space, which overlooks the demonstration winery and Heart Hill Vineyard, while sipping on Niner Wine Estates wine and enjoying the live music. Upcoming musicians include Jordan Traub, Vance Fahie and Matt Clark. Wines are available to purchase by the glass during these events. Summer in Paso Robles is often represented by the bounty of fresh local produce which residents are blessed to enjoy. Niner Wine Estates is celebrating by hosting a Farm to Fork style Cooking Class with Thomas Hill Organics on August 25th. Guests will meet at the Hospitality Center at 9 a.m. and hop on the Niner Bus to trek over to Thomas Hills organic farm for a tour with owners, Debbie and Joe Thomas. After gathering plenty of produce, guests head back to the Niner Wine Estates kitchen for a hands-on cooking class with Thomas Hill Organics Executive Chef, Julie Simon. They will learn to prepare an elegant luncheon featuring the farm fresh ingredients, including stone fruits and heirloom tomatoes. When developing the Hospitality Center several years ago, Pam and Dick Niner knew that they would include a state-of-the-art, restaurant grade, demonstration kitchen in the plans. The Niners, having traveled around the world, are enamored by the relationship between wine and food, which seems to be universal, and wanted to share their experience with residents and visitors of Paso Robles. James Beard award-nominee and semi-finalist, Chef Jeff Drew, is Niner Wine Estates guest chef for the Harvest Wine Dinner on Friday, October 19th. Currently, Jeff is the Executive Chef at Snake River Grill in Jackson Hole, WY. Jeff graduated from the Culinary Institute of America before developing his Southwestern cuisine all over the country. In 2010, he was nominated for Best Chef: Northwest at the James Beard Awards. Jeff has been featured on television and in national publications such as The Food Network and The New York Times. The menu sounds truly delectable featuring dishes such as grapevine smoked Idaho trout and buffalo carpaccio. Each of the six courses is paired with a Niner Wine Estates wine. Judged Wine And Grill Pairings Return!
Fifth Year of Celebration Features Local Wineries and Grilled Sensations
Join Transitions-Mental Health Association (TMHA) for a day of grill and grape mastery on the historic Filipponi Ranch, Saturday, August 11th from 1 to 4 p.m. at 1850 Calle Joaquin in San Luis Obispo. Celebrating the fifth year of this lively competition, the SLO Wine and Grill Affair promises to be fun for all. Filipponi Ranch Cellars, Clesi Wines, Salisbury Vineyards, Tolosa Winery, Cal Poly Wines and other local San Luis Obispo County wineries will create delectable bites of signature grilled dishes paired with their own, select wines. Central Coast Brewing will have their beer truck on site as well. Attendees will treated to live music by The Mother Corn Shuckers; native plants and gardening items from Growing Grounds Downtown; and gourmet samples from local vendors including Bella Pops, The California Bee Company, Chaparral Gardens and Tiber Canyon Ranch. Attendees will also have the option to purchase bottles of their favorite wine at the event store. Parking is free. A shuttle will be available. A panel of local celebrity judges will be on hand to pick the best food and wine pairing including Katy Budge, food writer for The Tribune; Kathy Hardesty, food and wine columnist for New Times; Teri Bayus, food and film critic for Tolosa Press and Michael Gunther, founder/managing partner of Collaboration, LLC. Proceeds from this event support mental health in our community through the work of Transitions-Mental Health Association. TMHA is a nonprofit organization dedicated to eliminating stigma and promoting recovery and wellness for people with mental illness through work, housing, community and family support services. TMHA operates 27 programs at over 35 locations that reach more than 2,000 people and 1,500 families in San Luis Obispo and Santa Barbara counties. The emphasis of TMHAs many services is to teach vital independent living skills and build a framework for community re-entry through personal empowerment and hands on experience. For more than 30 years, TMHA has been dedicated to providing housing, employment, case management and life-skills support to teens and adults with mental illness; and support, resources and education for their loved ones.

SFMOMA-Associated Artist Exhibit at PierceModern Gallery


PierceModern Gallery introduced Mark Bowles to the Central Coast last year making his work part of the permanent collection of the gallery. In that short time, Bowles has been admitted to the San Francisco Museum of Modern Art Artists Gallery, has been scheduled for has an upcoming editorial in South West Art Magazine, and has had a roomfilling triptych installed at the Four Seasons in Beverly Hills. In addition, Bowles work was selected by Central Coast Wine Classic organizer, Archie McLaren to be one of the donating artists at the 2012 Central Coast Wine Classic event. PierceModern is excited and honored to be hosting an exhibit of the work of Mark Bowles. The exhibit runs through August 31, 2012. Mark Bowles is a native Californian artist whose large-scale canvases capture both a sense and scene of the western landscape. He has been working as a painter for thirty years and studied at the California College of Arts (and Crafts) in Oakland and the Institudio Allende in San Miguel de Allende, Mexico. Bowles work is shown extensively throughout the West, with two US Embassy exhibitions in Kathmandu, 2010 and Mexico City, 2009. His work is represented in numerous private collections and publically in the Denver Art Museum, Tucson Museum of Art and Crocker Art Museum. Bowles landscapes are individual statements that have emerged with individuality from a rich tradition of California landscape painting. Through painterliness and gestural force, Bowles renders large-scale landscapes balanced on the verge of abstraction. Energized fields of rich color, integrated with selective washes and drips define his work. Based on western locales (the broad plains of the California Central Valley is a favored subject matter), Mark Bowles paintings are a personal tribute to the vast American scene, powered by his focused output and artistic drive over a forty year career. Gallery hours are from 4 to 9 p.m. Thursday, Friday and Sunday, and noon to 9 p.m. on Saturday as well as by appointment. PierceModern is located on Gallery Row, 617 12th Street, Paso Robles, skirting the City Park and a half block from the historic Paso Robles Inn. As most winemakers will tell you, quality wine is made in the vineyard. Hunt Cellars, known for producing memorable wines with high acclaim, harvests grapes from the Hunt Familys estate vineyard in Paso Robles off of Highway 41. The vineyard is located on 550 acres with elevations ranging from 1550 to 2200 feet and with multiple unique microclimates and soil types. The Hunt Family named the property, Destiny Vineyard, in honor of their daughter. To taste wines from this expansive estate, guests are encouraged to visit the Hunt Cellars tasting room conveniently located just off Highway 46 on Oakdale Road. The tasting room is open daily from 10 a.m. to 5:30 p.m. and features a regular tasting menu for $5 and a reserve tasting menu for $10. Owner and Winemaker David Hunt focuses on making wines which contribute to wonderful experiences. Each wine is carefully crafted to reflect the terroir of the fantastic vineyard from which it is made. Critics have become aware of the superiority of Hunt Cellars, awarding several of the wines with incredibly high scores. The 2005 and 2007 Cabernet Sauvignon, with a 96 point score, has unyielding structure with underling notes of dark cherries. Hunts 2006 Que Sirah Syrah (a blend of Petite Sirah, Syrah and a bit of Zinfandel) is a fan favorite and is also a 96 point winner. Another winner is the 2009 Pinot Noir, Imagine garnering 96 points on its first release. Wow! Hunt Cellars has one of the most extensive selections of Port-style wines in Paso Robles. The 2005 Sauvignon Blanc Port is lovely, its just sweet enough for dessert but with enough acidity to enjoy as an aperitif. The 2000 Tawny, Oldie But Goodie was selected as Editors Choice in Wine Enthusiast, rated 93 points, as well as receiving 96 points from Food and Beverage magazine. Noticeably, there is a reoccurring musical theme in the names of many of Hunt Cellars wines. A musician himself, David Hunt often graces guests in the tasting room or during special events with beautiful melodies on his white baby grand piano. During Paso Robles Harvest Celebration, Hunt Cellars will host a six-course gourmet meal, perfectly paired with wine, followed by David Hunt performing songs from his latest record, Rhapsody in Red, which is available for purchase in the tasting room and iTunes. Mamas Meatball
One pretty reliable way to find out just how good the food at a local restaurant is, is to ask somebody in the restaurant business. Ask a bartender, a waiter, anyone in fact, what they think of Mamas meatballs in San Luis Obispo and their lips begin to quiver, their eyes roll towards the heavens, they sigh; that is how good Mamas Meatball is. Set in a small courtyard off of one of the towns main streets, in a place called the Old Creamery, Mamas Meatball is actually divided in two. On the right is the take-out where people line up to get their orders of meatballs and more. To the left, fronted by a huge-trunked tree and a water fountain, is the intimate restaurant with its mural of the Mediterranean across the back. Meatballs aside, the restaurant, under owner and chef Nicola Allegretta, offers a wide range of authentic Italian dishes, many of them now available in smaller sizes as well, a bow to the economy and his customers wishes. Among them are half a dozen soups, a long list of salads (including grilled salmon and a refreshing pear and gorgonzola), some wonderful antipasto choices, both hot and cold paninis (including, of course, one made with meatballs), more pasta dishes than there is space here to share (though the Ravioli di Pollo all Vodka homemade ravioli filled with chicken and served in a vodka sauce cannot go unmentioned). There is also a heady selection of meat and fish dishes as well as any number of traditional and specialty pizzas (now available in two sizes) and some far tootempting desserts. Clautiere Vineyard Receives Two Prestigious Awards for 2007 Estate BDX
Clautiere Vineyard was still in the midst of celebrating their win as Best Bordeaux Blend at this years prestigious Critics Challenge International Wine Competition in San Diego, when even more good news arrived announcing the 2007 BDX had also been awarded a Gold Medal at the 2012 Los Angeles International Wine & Spirits Competition, with an over-all score of 94. The double-win brought new meaning to the term Win-Win Situation. Detailing the complicated Critics Challenge awards process, Felicia Forbes, Critics Challenge Competition Coordinator explained; First, the wines are awarded a medal: Silver, Gold or Platinum, with Platinum being the highest. Then, in the Sweepstakes Voting the Platinum winners are voted on for Best of Category and Best of Show awards. Your 2007 Clautiere BDX was a Platinum Winner, then further elevated to Best Bordeaux Blend, Congratulations! There were a total of 34 Bordeaux blends entered in the 2012 Critics Challenge, ranging in price from $7.99 to $95. Of those 34 wines, the 2007 BDX was judged Best Bordeaux Blend. The 73rd annual Los Angeles International Wine & Spirits was equally competitive with more than 3,200 wines judged in May by a panel of 75 of the worlds leading wine experts headed by master sommelier Michael Jordan, honorary chairman of the competition. All wine entries are blind-tasted and carefully evaluated by four-judge panels. After much discussion, the judges come to collective decisions using a standard point system Jordan said. The Gold Medal winners all must have ratings of 90 points or more. Out of thirty-six award-winning Bordeaux and Bordeaux Blends, Clautieres 2007 Estate BDX scored the second-highest, with a score of 94. Sta. Rita Hills Winegrowers Alliance Are All Fired Up About This Very Cool (Climate) Appellation
As the always-predictable morning fog begins to retreat back to the nearby Pacific Ocean, the iconic barn at Fiddlestix Vineyard reveals the winegrowers of the Sta. Rita Hills AVA preparing for their annual celebration. The 2012 Wine & Fire events will celebrate the very unique characteristics of this cool-climate appellation over the weekend of August 17-19. The weekend will feature open houses, special tastings, an educational seminar and the Grand Tasting at the beautiful and historic La Purisima Mission. Its an especially exciting time for all of us, states Norm Yost, Chairperson of the Alliance. The vines will be laden with grapes, and both winemakers and growers will be in that heightened state of just-before-harvest excitement. Well definitely be all fired up to celebrate! The celebration will begin with welcome receptions and tastings on Friday, August 17th in locations on both the eastern and western boundaries of the region. Saturday mornings seminar will feature The Fire Within - Why Winemakers Choose Chardonnay and Pinot Noir from the Sta. Rita Hills. This in-depth tasting at The Barn at Fiddlestix will explore and celebrate the two grape stars of the appellation. Youll hear from ten winemakers and taste along with them as they explain why they are so passionate about Sta. Rita Hills. The seminar will be followed by Santa Rita Style BBQ lunch by local favorite Hitching Post II and seminar panelists will be joined by fellow winemakers pouring their wines during lunch. Saturday evening will bring together all of the members of the Alliance with an evening wine reception in the courtyard of the historic La Purisima Mission in Lompoc, situated on the outskirts of the Sta. Rita Hills Appellation. The stunning grounds and historic buildings lend an exquisite setting to an evening of camaraderie, fine wines and fire-grilled foods. Member vintners and winemakers will all be on hand to present their latest releases under the majestic oaks of the Mission. A weekend passport is also included, providing VIP access to wineries and tasting rooms of Alliance members, who will each be pulling out all the stops for visitors. Guests will have a full range of events to choose from throughout the weekend as members of the Winegrowers Alliance present open houses, focused tastings and winery events. A full listing of winery events will be posted on the Sta. Rita Hills Winegrowers Alliance website as they are planned. In order to continue the mission of Wine and Fire as an intimate event where guests, growers, winemakers and vintners are able to get to know each other, ticket sales will be limited. The Santa Barbara County Vintners Association announces that tickets for the popular Celebration of Harvest festival on October 13 are on sale. In addition to the festival itself, the accompanying weekend-long celebration pays tribute to, as well as exhibits, the unparalleled variety of agricultural products grown, raised and harvested in Santa Barbara County. Not only is the county a world-renowned wine growing region but with the abundance of local produce, livestock and seafood available, Santa Barbara County has become a culinary Mecca for those seeking exceptional food and wine artisans, affirms Association Executive Director Jim Fiolek. Festival attendees can experience a full range of edibles paired with the latest releases of wine all grown or raised right here in our county. Wild Horse Winery is among the founding wineries here on the Central Coast, established in 1981. Today, Wild Horse sources fruit from vineyards across the Central Coast wine appellation, paying homage to the wild mustangs which roamed the land east of the winerys estate. This band of horses inspired the winerys motto which is, Live Naturally, Enjoy Wildly and, over the years, the winemaking team at Wild Horse has done just that. Today, the team is made up of Clay Brock, Director of Winemaking, and Chrissy Wittmann, Winemaker. Both Clay and Chrissy are Cal Poly San Luis Obispo alumni and have extensive Central Coast winemaking experience, essential for the expansive winemaking duties at Wild Horse Winery. Clay and Chrissy source grapes from upward of fifty vineyards across the Central Coast. Each lot is processed and fermented separately before the art of blending occurs. The wines reflect the abundant flavor profiles which are apparent in several different micro climates across the Central Coast. Each of the wines is harmoniously balanced, the result of the distinctive art of winemaking. Most wine drinkers will recognize the Wild Horse Chardonnay and Pinot Noir which is distributed throughout the country. Wild Horse Winerys Unbridled series focuses on smaller production and vineyard specific bottlings of Chardonnay, Pinot Noir, Cabernet Sauvignon, Merlot and Zinfandel. Cheval Sauvage, Wild Horse en franais, is the winerys tte du cuvee, or reserve, Pinot Noir. The Cheval Sauvage represents the finest vineyard specific Pinot Noir barrels from each vintage. The production is less than 1% of the winerys Pinot Noir production each year and the vineyard changes based on which barrels stand out amongst the entire winery. Normally winemakers describe beer as their drink of choice during these warm summer months. However, at Wild Horse, they are enjoying the fresh and crisp Malvasia Bianca. The wine is on special in the tasting room so guests are encouraged to take the wine home and drink like a winemaker!

14th Annual Paso Robles Rotary Winemakers Cookoff to be Held August 11 at River Oaks Hot Springs
The Paso Robles Rotary Club is looking to build on the momentum generated from last-years Winemakers Cookoff scholarship fundraiser. KEVIN SASS
Halter Ranch Winery
Halter Ranch covers one thousand acres on the west side of Paso Robles. In the middle of this historic ranch sits the 280-acre Halter Ranch Vineyard planted with 20 different wine grape varieties. Diversified by design, the original intent was to produce highly sought after, west side fruit for sale to neighboring wineries as well as for the Estate label. Today, however, almost all of the fruit is used in production of Halter Ranch wines. What does that make Kevin Sass? It makes him a very lucky winemaker. A Southern California native, Sass grew up in Agoura Hills, a bedroom community north of Los Angeles and graduated from California State University Fresno with a double major in Enology Wine Production and Agricultural Business. So, where does someone with his talent head to first? Paso Robles. Sass started in 2000 working harvest at well-known Justin Vineyard. He was then hired by Justin as their Grower Relations Manager, which put him in close proximity to many area vineyards including Halter Ranch. In 2002, Kevin was promoted to associate winemaker at Justin and in 2006, he assumed the position of winemaker. But every winemaker is looking for new challenges and in 2011, Kevin joined Halter Ranch as their winemaker, a property he already knew quite well. Im excited to be involved in this amazing, long-term project at Halter Ranch, he says. My previous experience with the Halter Ranch estate fruit, combined with a new, state-of-the-art facility, will allow me to showcase what this property has to offer. And what the Westside Paso Robles property can offer is that the region grows most varieties well. The one very unique thing we have are soil types with a large amount of limestone mixed with clay, Sass says. Limestone soils generally produce wines with high acidity. The way California makes wine, we ripen our fruit a little earlier than Old World countries, so by having soils that maintain acidity we can push the levels of ripeness but still maintain acidity in our wine. And its all about balance. And no where is balance more sought after than pairing wine with food. So, what does Sass do? He turns to two of Halter Ranchs wines. We have a brother/sister combo of food pairing wines; the Ctes de Paso Blanc is a white wine blend of Grenache Blanc, Roussanne and Picpoul Blanc, he says. The companion red wine called Ctes de Paso is a blend of Grenache, Syrah, Mourvdre and Tannat. These wines have bright fruit, no new oak, are lower in alcohol and have a bright acidity, which makes them perfect with food, Sass says excitedly. Whenever I sit with sommeliers and chefs around the country, working on their wine lists, they gravitate to these two wines. Though Sass has nearly two dozen grapes at his disposal, hed love to try his hand at a stand alone Picpoul Blanc. The words in French translate as stinging lips he says, another way of showing off the Halter Ranch soils which create acidity in their wines. Stop by Halter Ranch to sample Kevins handiwork.

Paso Robles Wine Country Will Come Together August 18 to Raise a Paddle for Local Charities
The Paso Robles Wine Country Alliance announced that the Wine Country Auction will take place on Saturday, August 18th at Summerwood Winery & Inn. This announcement comes after the successful completion of the 30th Annual Paso Robles Wine Festival, which up until 2012 featured the Wine Country Auction as an exclusive dinner. The separation of the Wine Country Auction from Wine Festival weekend allows wineries, restaurants and guests to participate more actively in the auction. The 2012 Wine Country Auction is scheduled to take place from 10:30 a.m. to 1:30 p.m. under the trees at Summerwood Winery & Inn, hosting approximately 300 guests. The event will kick off with an hour of walk-around wine tasting by Paso Robles Wine Countrys world renowned winemakers. A four-course gourmet brunch will be prepared by the regions finest chefs, showcasing a seasonal farm-to-table menu. A spectacular live auction benefitting San Luis Obispo County charities follows where guests bid on a range of sought-after lifestyle and wine country items including signed, large format bottles, exclusive wine country getaways and luxurious international excursions. The Wine Country Auction allows guests and the Paso Robles wine industry to come together for a fabulous time and a great cause. Tickets for this event are $250. Transcendence
As a winemaker, Kenneth Joey Gummeres resume is extensive, including several years making wine at Babcock Winery & Vineyards, Santa Barbara Winery, Lafond Winery & Vineyards, and founding Kenneth-Crawford. But in 2006, when Joey and his wife Sara found out that a close friend had brain cancer, he decided to put his winemaking skills to even greater use creating a Grenache the proceeds of which were donated to their friend and her family as well as to brain tumor research. At that moment, Transcendence Winery was born as Joey and Sara realized they had found a way to combine their lifes passions. My dream has always been to make great wine, and my wife [Sara] wanted to do meaningful humanitarian work both in the community and throughout the world, said Joey. When we were married, we made a promise to support these dreams in our vows. Since that 2006 vintage of Grenache, Transcendence Winery has grown from the Gummeres shared belief that wine has the potential to make a meaningful difference in peoples lives. Transcendence Winerys philanthropic endeavors support the efforts of several nonprofits by donating a minimum of 10% of their sales and an additional 10% of their annual wine production to these worthwhile causes. We try to make wines that make a difference, said Joey. Of course Transcendence Winerys success does not come solely from good intentions. Joey carefully selects vineyards to partner with, paying great attention to detail throughout the winemaking process. All of the wines are crafted by hand, in order to emphasize the quality and provenance of the fruit. Transcendence Winery currently boasts a very hand-crafted integrity to their annual production of around 1,000 cases. They strive to create limited quantities of cool-climate wines with grapes from highly acclaimed vineyards including Syrah from Ballard Canyon, and Chardonnay and Pinot Noir from several vineyards in the Santa Rita Hills including Lafond, Zotovich and La Encantada. When you walk into the Original Roadhouse Grill, youll immediately feel comfortable and at home, even if your household does not boast a mouth-watering grill menu, full-service saloon, satellite horse racing and lets you throw your empty peanut shells on the ground. The Original Roadhouse Grill in Santa Maria opened in May 2000, as part of an American Family Steakhouse concept developed by Los Angeles-based brothers and restaurant entrepreneurs, Larry and Ralph Cimmarusti. To date there are eleven Roadhouse Grills throughout California and Oregon, that boast a casual, fun, familyfriendly atmosphere and hearty meals. The Original Roadhouse Grill prides itself on an extensive menu that features favorites such as slow-roasted Bourbon tri-tip, fall-offthe-bone baby back ribs and hand-cut steaks from high-quality USDA beef from Washington State. All steaks are grilled over mesquite wood and generously seasoned with a special blend of spices. All of our steaks are freshly hand-cut daily in-house to ensure the highest quality, said Vice President of Operations, Linda Bryant. We also grind all our own burgers from our steak trim, so theyre actual steak burgers. There are also several steak alternatives including (but not limited to), Whiskey River Salmon, BBQ chicken, turkey and veggie burgers, and an entire menu section dedicated to Bison steaks, ribs, meatloaf and burgers. While you wait for your entres, all guests are served freshly baked yeast rolls with homemade honey butter. The Original Roadhouse Grill offers a range of choices for diners of all ages and appetites, with a section of the menu called a little less dinner for smaller portioned meals under $11.99, over 20 menu items under $10, and children eat free every Tuesday night. For those diners over 21, the saloon features specialty cocktails served in Mason jars, and a selection of twelve draught beers from local breweries, as well as the signature Peanut Tap Handle beers. Beginning this month the saloon will roll into fall featuring Firestone Brewerys Oaktoberfest draught beer, which will include a souvenir Firestone Pint beer glass with the purchase of any Firestone beer on Firestone Fridays. The coming winter months will also feature Firestone Brewerys Velvet Merlin. The daily Happy Hour features a selection of food items for $5 from 2 to 7 p.m. on Monday-Friday, and from 2 to 6 p.m. on Saturday and Sunday. In addition to the saloon and family dining area, the Santa Maria, in October 2011 the Santa Maria Original Roadhouse Grill became the first location to offer a separate area where horse racing enthusiasts can enjoy the races. The California Horse Racing Board approved Original Roadhouse Grill as an Off-Track betting facility to replace the former location housed at the county fairgrounds, said Bryant. From Wednesday through Sunday, racing fans can enjoy the new Official California Wagering Facility in a separate and newly enclosed bar dining and patio area, and more than 26 televisions will broadcast both the Del Mar and Santa Anita racing seasons, as well as racing on other US and international tracks. Horse racing enthusiasts will also enjoy events to celebrate the Kentucky Derby and Preakness Stakes in May of each year, as well as the Belmont Stakes in June and the Breeders Cup in November. Alta Maria Vineyards
The oldest profession in California is not what you think: its most probably cattle ranching. And the partners of Alta Maria Vineyards, Paul Wilkins and James Ontiveros, have a long history in the ranches and farmlands of this part of California. The Ontiveros family first came into California in 1781 with the Rivera expedition. Although their original land grants were in Southern California, they drove thousands of heads of cattle into the Santa Mara Valley, finally settling there on the Rancho Tepusquet Land Grant of 1837. Today, much of the duos grapes come from that very same land. As a couple of kids in college, both studying crop and fruit science at Cal Poly San Luis Obispo, they bonded over an unlikely interest in wine. Pauls family background in farming and James history of cattle ranching put them firmly in position to build on their knowledge of the land and growing things on the land, to arrive at a new calling: wine production. For both men, wine grew into obsession and obsession became career: James as a viticulturist and Paul as a winemaker. Working hard and making sacrifices was not new to either, and they both became veterans in their fields, even at a young age. Finally they moved away, lost touch, and many years passed. But the land in the Santa Maria Valley had a pull on the two men; the sense of heritage and nostalgia drew them back together. As the two friends re-connected on a vineyard on a hill in that valley, they decided to make the wine that was waiting for them all along: Alta Maria Vineyards. used by homesteaders in Santa Maria before the Industrial Revolution introduced mass-produced, machine-cut nails. Despite its lowly function, each nail is unique from the next according to the conditions in which it was made and the expertise of the craftsman. This craftsmanship is what Paul and James strive for in all their wines. In addition to the Alta Maria wines, the pair also makes Autonom wine, focusing on Rhone varietals and Native9, which is purely Pinot Noir. The wines are made in small lots with a nod to both Old World sensibilities and New World stylistic freedom. With vine-growing and farming in their blood, Alta Maria wines reflect the pairs shared affinity for all things homespun and honest and the authenticity of the Santa Maria Valley and a gratitude to the generations of California farmers and ranchers before us, farming the very same land 150 years ago. Sort This Out Cellars Daring to be Different

Every winery wants to stand out from the competition. For Sort This Out Cellars, even the name tells you this is going to be a different experience. In an attempt to avoid the corporate homogenization of consumer culture, as owner and winemaker Michael Cobb puts it, he has created a unique and expressive wine tasting room in Solvang. And, the wines here are different too, including their Elvira line of wines. Yes Elvira, Mistress of the Dark, has her very own Macabrenet, a full-bodied, blood-red Cabernet Sauvignon sporting Elvira in a seductive pose in front of a spider web. Sort This Out Cellars is handcrafting and distributing a full line of California-based wines for Elvira beginning with a 2008 Cabernet Sauvignon. But its not mere gimmickry. Elvira works closely with Cobb and is involved with all aspects of the winemaking process, including the selection of the grapes, blending decisions, art direction and even marketing. The only thing Im not doing is stomping the grapes, Elvira says. Currently, the wine is available through our website and tasting room and a few retailers in Ojai and Los Angeles, Cobb says. In addition to the wine we also just rolled out a line of vintage soda pop for her. Weve been doing the soda ourselves for about a year now with World War II era pin up girls on them. And the Elvira soda names reflect a sense of play with labels like, Lemon sLime and Silent sCream Soda. The recently released Casino Vineyard Rhne is a blend featuring artwork by Fullerton, California tattoo artist Robert Adams. Its a tongue-in-cheek take on our lack of vineyard type labels and the fact that we love Las Vegas, Cobb says. He has also released Vino Nostra, a tip of the hat to the Prohibition-era

with wine that reminds us that government restrictions are still a real issue. For more than thirteen years the wine industry was effectively shut down by Prohibition. We honor the spirit of the underground vintners who carried forward the tradition of American winemaking during the darkest hours of Prohibition, Cobb writes on his blog. Clearly there is a diversity of wine to be had at Sort This Out, from Merlot to Syrah to Viognier and Chardonnay, nothing is off limits. And the concept is also different in that Cobb does not own any vineyards. I tried to take all that I felt was wrong with wineries and turn that around, he says. And clearly he has hit on something. There is an enduring allure with wines and wineries that celebrate a specific sense of time in our collective history. Sort This Out has created an homage to Las Vegas, a pin-up 1950s era sensibility. This is clearly evidenced in the tasting room, all decked out in chrome and red leather, a fun, funky and hip place to be. Our tasting room is definitely different than anything else in Solvang, Cobb says. They are also the latest tasting room open in town. Friday and Saturday nights they offer live music which gives both locals and tourists something to do when sleepy Solvang rolls up the streets at dark. Our vibe is different, our hours are different, our outlook on wine tasting differs, and we just want people to have fun with the wine tasting experience, Cobb says.
