What I did on my summer vacation!
Hope that everyone is having a good summer. I've just come back from a quick getaway to New York. While I was there I had the chance to do a few interesting things that I found out about through Groupons. (As an aside, did you know that you can sign up for Groupons in any state, so you can use them while traveling!) One thing I did that was very touristy, but turned out to be quite a great experience. I took a walking chocolate tour of New York. What fun!! We not only were able to sample the best of the best chocolates from the finest chocolatiers, but we were also given an historical tour as well. We started our tour at the Chelsea Market and ended up in Greenwhich Village. The tour lasted for over three hours, and safe to say we walked off every calorie we ate!! We visited five chocolatiers and four bake shops, nibbling everything chocolate along the way. Our guide was very knowledgeable on the subject as well as an historian of sorts. I would highly recommend this to anyone, be you a native or not. Then the next day I partook in a cupcake making class. It was given by the Butter Lane bakeshop. Cupcakes are a big thing in New York, with shops scattered throughout the city. The class itself was a pretty basic class, but was well presented and I met some interesting people. Plus I came away with a few recipes to add to my collection as well as to share with you. I must say that I found taking a class a fun and interesting way to spend a few hours while on vacation. There was also a gelato class available at Mia Gelato, but it wasn't available at the time I was in New York, maybe next time! So, if you get the opportunity to visit you might try them out. And keep in mind when traveling to use those Groupons!!!! 5 minutes. Add vanilla bean and mix for one more minute. While mixing at low speed, add sugar. Once combined add a splash of vanilla extract and mix on a medium to high speed for 3 minutes or until smooth and fully combined. Frost and enjoy.
Chocolate Cupcakes
Ingredients 1/2 lb butter 1 1/2 cups granulated sugar 4 eggs splash of vanilla extract 6 oz unsweetened melted chocolate 1 1/2 cups buttermilk 1 1/2 tsp baking powder 1 tsp baking soda 1 pinch of salt 3 cups of cake flour Combine butter and sugar in mixing bowl. Mix until sugar and butter forms a cream. Crack eggs into a separate bowl, add a splash of vanilla extracts to the eggs, then add the eggs to the mixing bowl. Mix on medium speed until mixture becomes light and fluffy. Add melted chocolate to mixing bowl and mix on medium speed until incorporated. Combine baking powder, baking soda, and the rest of the flour mixture. Mix until combined, but be careful not to overmix. Scoop cupcakes and bake for 23 minutes at 300 degrees. Yields 36 cupcakes.

Mix on medium speed until mixture becomes light and fluffy. Combine baking powder and salt with flour. Add half the flour mixture, followed by sour cream, and then add the rest of the flour mixture. Mix until combined, but be careful not to over mix. Scoop cupcakes and bake for 23 minutes at 300 degrees. Yields 36 cupcakes
