What is tannin?
Tannin is a naturally occurring chemical compound in wine that gives a dry red wine texture. Its mouth-drying effect, balanced with ample fruit, creates a wine of firm structure that can equalize the effective weight in the mouth of a rich red wine. The four basic wine components are fruit, alcohol, acidity and tannin. Generally speaking, the proper balance of all four define a quality wine. Tannins contribute to a wines feel in the mouth, and also provide a stabilizing effect in the wine by helping it to age longer and protecting its aroma and flavor over time. A comparable parallel of the astringent component that tannin contributes to wine is the tannin in a cup of hot tea. When the tea cools down, the mouth-drying effect of tannin is more evident. Typically, a young red wine, like Cabernet Sauvignon, will have more of this harsh tannin, whereas a mature wines tannin has lessened and softened over time, and more pure fruit flavor is exposed. A red wine is said to be at its peak when it has reached a perfect balance of tannin and fruit. The specific point in time in the life of a wine when this balance occurs varies with every wine, and is mostly unpredictable. The very best wines in the world will take years, and sometimes decades to evolve. Tannin is sometimes described as green, which some consider to be a fault in a wine. Green tannins have an impact on the palate much like eating an underipe fruit, like a very green banana. It can be attributable to growing seasons with insufficient warmth to full ripen the grapes, or in very rainy growing seasons. This is not usually a problem in wine regions known for its long, hot summers, but is more likely to be an issue in cool, coastal regions. Tannin in wine comes from two sources. Some originate from the extended period of time that grapes are in contact with its skins. This long-term contact with the skins, in addition to the grapes seeds and stems, is the primary source of the tannin in the final wine product. A white wine will have only a few hours or less in contact with its grape skins during fermentation, while a red wine will remain in contact with its skins for days, or until the winemaker extracts enough color. That is why tannin is a subject in the discussion of red wine, not white. Another source of tannin comes from the wood of the oak barrels in which the wine is aged. The amount of structure contributed to the wine from oak barrels will vary greatly and depends mostly on the age of the barrel, the type of oak, type of toasting and length of time in barrel.

Just about every major winery in Sonoma and Napa has an interesting history. Many of the wineries in this area were started by immigrants to America, from Germany, Italy and France. While many of the stories are generally rags to riches epics, none is more compelling than that of the Jacuzzi family. You probably know the name Jacuzzi from the eponymous whirlpool spas for which they are well known, but as Paul Harvey used to say, this is the rest of the story: The story of the Jacuzzi immigration to America began in 1907 when Valeriano and Francesco Jacuzzi, the second and third-born sons of Giovanni and Teresa Jacuzzi, left Italy and landed in Washington state to work on the railroad. A warmer climate with a lot less rain was in order and the two made their way down to southern California. Several years later, they were joined by four other brothers and eventually all of them went to work in the burgeoning aviation industry. Before long they would make American history. In 1911 their father, Giovanni, skilled as a wood worker as well as vineyard farmer, joined his sons. Two weeks in America was enough to convince him that his boys would never return to Italy. So he returned to the homeland with son Valeriano to gather up the rest of the family, but World War I intervened and the trip was delayed until the wars end. During this time, Valeriano had met Giuseppina, fell in love, married and had their first child. In 1920, Valerianos new family, parents and remaining siblings departed Italy for America. Soon after their arrival in early 1921, Valeriano started working with his brothers at their Jacuzzi Brothers factory. The brothers were experimenting with building airplanes in their factory, but when their first endeavor of a monoplane crashed and took several lives with it, Papa Giovanni asked his sons to find another line of work. Shortly after, Valeriano moved his family further north and purchased a 161-acre farm in Contra Costa County. During the depression of the 1930s, Valeriano, with assistance from his older children, planted a portion of the open farm fields with grapes, and in 1936 he applied for a license to make wine for home consumption. At the time, he was limited to making just 200 gallons, about 84 cases. He planted Zinfandel, Carignane and Mourvedre, and the grapes that he did not use for his own wines were sold for about $30 to $35 a ton! Fast forward a few more years and Valeriano is now a grandfather, planting more and more grapes on his property, until approximately 140 acres were covered in winegrapes. His grandchildren often come to visit, and one in particular, Fred, takes a keen interest in the farms agriculture, the grapes, the growing process and the mysteries of winemaking. Young Fred Cline obtained a degree in Agriculture Management from the University of California at Davis. In 1982, with an inheritance from his grandfather, Fred founded Cline Cellars in nearby Oakley. Here he preserved and restored many ancient vines sites to their rightful reign as premier California wine lands. In 1991, Fred and his wife Nancy relocated the winery from Oakley to the Carneros region of Sonoma County on a historic 350-acre estate with new vineyards and facilities. While much of the cool Carneros region is

With the 2012 harvest just getting under way, its a great time to visit the Napa Valley. Somerston Vineyards & Winery is more than an inviting tasting room for visitors and locals alike, it is a winery with a rich past and a bright future. Today, far removed from the ocean, is the 1,628-acre Somerston Estate in the hills above the Napa Valley, a property dating back to the 1800s. It is there that vines flourish on 87 carefully tended vineyard blocks and where hundreds of content, meandering sheep graze. Its also where the altitude (between 850 and 2,800 feet above sea level) and the wide variety of soil types combine with cool nights, fog that lingers and warm afternoons to seamlessly make that most crucial component of fine wine: the grape. Open to visitors under a strict reservations only policy, the tasting room at the Estate is beautiful, the view serene and the number of lucky tasters is strictly limited, though the property is available for special events (though not for weddings, this being Napa country). They also offer an all-terrain tour of the land, and if you wish they can supply a picnic lunch from the famous Bouchon Bakery, part of chef Thomas Kellers French Laundry empire. Back in the town of Yountville, their spacious, tasteful, high-ceilinged tasting room has quickly become a haven for visiting wine lovers as well as for locals, many of whom make a visit a weekly ritual to socialize and mingle. The cheese plate they offer has also become an institution, offering artisan domestic and international cheeses presented with an assortment of dried fruits and pistachios from nearby farms. At a modest fifteen dollars it is one on the regions most attractive bargains.

You can take a the seat at a tasting bar that is a work of art in itself, or settle into a sofa facing the fireplace. Plan ahead and you can also schedule a private tasting experience, or sit outside on the rooftop terrace or in the outdoor courtyard with a glass or a bottle. Our goal here is to have people come relax with us whenever they are in the mood and have the time, said tasting room manager Sean Pakenham. Of course it is about the wine, but it is also about enjoyment. Many of the wines poured are Estate wines and include a nice spectrum of varietals: Sauvignon Blanc, Petit Sirah, the Stornoway Red (a predominantly Merlot blend), Zinfandel and rich Cabernet Sauvignon. Plus, Grenache Blanc, Pinot Noir, Syrah and Viognier. The wines variously bear the labels of Somerston, Highflyer and Priest Ranch, and all are made in limited quantities. One of the best things about our winery and tasting room in addition to the wines is the warm and welcoming experience our visitors get. People connect with those that pour the wine and everyone seems to love the space itself, both indoors and out. A seasonal feature at their Yountville tasting room is called Thursday Night Live. Every Thursday from 6 to 9 p.m. they have free live music by a variety of local artists that you can listen to as you enjoy their wine and snack on food from area food trucks, everything from ethnic specialties, gourmet sliders, and macaroni and cheese to dim sum and noodle bowls. Some of my earliest wine country memories revolve around the wines from Napa Cellars. Their wines, then and now, are uniformly pleasing and exceptionally well-priced, and a visit to their tasting room in Oakville is always great fun. Even more fun is taking a picnic lunch or some bread and Northern California artisan cheese to enjoy right outside the tasting room with a bottle of their wine surrounded by premium vines. There are any number of first-rate places to pick up your al fresco meal, both in Yountville a few miles to the south, and at the famous Oakville Grocery just up the road. The well-crafted wines from talented winemaker and rare California native Joe Shirley include a crisp and refreshing Sauvignon Blanc and a pair of Chardonnays, plus a roster that includes Merlot, Pinot Noir, Zinfandel, Syrah and two Cabs. The tasting room structure is certainly unique a geodesic dome by the famous architect and author Buckminster Fuller, with a high ceiling and a 360-degree tasting bar that is staffed by friendly and knowledgeable people who obviously enjoy what they do. Here, you can also try wines made under the Folie Deux label, which includes such diverse offerings as Pinot Grigio, Moscato, a ros and a red blend, among a number of others. Chris Corley, winemaker of Monticello Vineyards, grew up on acres of vineyard in the Napa Valley. As a young boy, he remembers playing in the vineyards by the river and getting a natural sense of things, how the vines grew lush, and how the grapes looked and tasted each year. His father, Jay Corley founded Monticello Vineyards back in 1970, purchasing 80 acres of land and during the summer months Chris worked for his father in the winery. He started at the bottom cleaning wine barrels, making needed repairs, driving trucks to dump trash. He simply did what he was told. With my father, there were no short cuts. I started from the ground up and learned my way to the top, which for me was becoming a winemaker. After high school, Chris took a brief break from the wine business to study Marine Biology at Humboldt State University. Chris loved the ocean, biology and scuba diving, but he quickly sorted out in his mind that he wanted to return home to begin his career at Monticello Vineyards as an apprentice, receiving invaluable hands-on training in wine education. From 1990-1998, Chris worked in the cellar, cleaning and racking wine barrels, ensuring tank sanitation, washing floors, cleaning bins and preparing harvest equipment. In 1998, he went from Master Cellar to Assistant Winemaker. Over the years, Chris worked under three winemakers who taught him how to make award winning wines. The first winemaker was known for his creativity and artistry. Like a chef in the kitchen, he trusted his natural tasting abilities. He was also a fanatic for sanitation, where cleanliness is next to Godliness. The second winemaker was more intellectual, more organized and relied heavily on detailed wine records and data when measuring grapes. The third winemaker was a hybrid of the two former winemakers and was more cautious by nature, knowing when to take calculated risks at harvest time. Chris took these fantastic learning experiences and applied his own personal style to the art of winemaking. He looks to keep the wines consistent, allowing for only gradual shifts in the vintages over time. As for what Chris looks for in a best-selling wine, such as their 2009 Monticello Vineyards Jefferson Cuvee Cabernet Sauvignon or the 2010 Monticello Vineyards Estate Grown Chardonnay? Its balance. He wants the three dimensions savored in a good wine to find their rightful place. He wants the palate to attack through the finish, the texture to be balanced from beginning to end, and the aromas to be in sync with the dark berry fruit flavors. When I make wine, I know in my minds palate what I want. How I navigate the winemaking process is the harder part. Whats the weather going to do and how we react to it, are the questions. Chris doesnt work alone when making wine. He relies on his brothers who manage the winery and leans on his assistant winemaker, Rodolfo Cuevas, a professional partner and good friend for over 30 years. I have spent more hours with Rodolfo than anyone else in my life, Chris laughed. He taught me how to deal with adversity, he taught me about life. Together, they make Cabernet Sauvignon, Cabernet Franc, Merlot, Chardonnay, Pinot Noir and Syrah, producing 15,000 cases of exclusively Napa Valley wine in the Oak Knoll, Yountville, Rutherford and St Helena appellations of Napa Valley. Chris hopes to be making wine for the rest of his life. My deepest satisfaction in doing what I do is carrying the tradition of my fathers work, including a third generation of Corleys at Monticello Vineyards. All the work we do at the winery, over 40 years, we have done together.

Bennett Lane Winery Launches First Winery Branded Hot Air Balloon in California Wine Country
Bennett Lane Winery recently launched its branded hot air balloon on its inaugural flight. For its maiden voyage of one hour, the balloon carried six passengers on a journey over the Napa Valley, providing views of the lush pre-harvest vineyards and rolling hills below from approximately 3,000 feet in the air. The first winery branded hot air balloon in California, the Bennett Lane Winery balloon was built by Kubicek Balloons in the Czech Republic. The balloon stands 67 feet high when inflated and has a diameter of 65 feet. It took over a month of sewing to create the balloons envelope, which measures 142,4000 cubic feet, from 16,000 square feet of special ripstop polyester fabric. It also took twentyfive days of dying of the fabric for the special grape color shade for the Bennett Lane logo of grape clusters. Following the balloon landing, winery co-owner Lisa Lynch announced the winning entry of the Name the Bennett Lane Balloon contest. The chosen name, Calistoga AVA-tion, will be included on the

This is what I imagine Stags Leap District to be like about 30 years ago. An unpretentious, slightly askew winery sign along the road. A dirt and gravel driveway leading through the vineyard. A cozy tasting room just a bit larger than a breadbox. And a few people genuinely happy you found them and quite proud to show you their wares. Welcome to Baldacci Family Vineyards, started in 1997 when Tom and Brenda Baldacci purchased this sweet 17-acre parcel with ample hills and vales to provide the ideal setting to grow great Cabernet Sauvignon. In 2000, the Baldaccis added a 7,000-square-foot wine production cave in the hillside behind the tasting room. The estate vineyard now produces classic Stags Leap District Cabernet Sauvignon silky-textured with ripe black fruit flavors and refined tannins, ready to enjoy now or ageworthy up to 10 years. The highly acclaimed wines at Baldacci are the handiwork of renowned winemaker Rolando Herrera, who got his start down the trail at Stags Leap Cellars. Herrera went on to make wine at Chateau Potelle, Vine Cliff and Paul Hobbs before returning to the Stags Leap District to work with the Baldaccis. Herrera also makes his own wine under his own label, Mi Sueo, and has a vineyard management company that manages the Baldaccis 20-acre Carneros vineyard (planted to Pinot Noir, Chardonnay, Syrah, Gewrztraminer and Merlot). Baldacci produces three Stags Leap District Cabernets in all. Their flagship wine is the Brendas Vineyard Cabernet Sauvignon, which is tough to get your hands on at just 180 cases produced annually. Brendas Vineyard represents the best of the best the best seven barrels from the best vineyard block on the estate. The Black Label Estate Cabernet Sauvignon is the Baldaccis ambassador wine, representing the best fruit from different blocks of the estate vineyard. Not to be missed, theres the IV Sons Cabernet Sauvignon, a supple and full-bodied Stags Leap District Cabernet thats ready to be enjoyed now. The Baldaccis Carneros vineyard came on line in 2008, and now the tasting room offers a few wines from the Carneros estate: including the 2009 Elizabeth Pinot Noir (named after Toms mother), the 2010 Frederich Gewrztraminer (named after Toms grandfather), the 2009 Sorelle Chardonnay (named after Toms sisters), the 2008 Allwin Syrah (named for Toms grandmother) and the 2008 IV Sons Fraternity Red Blend which uses the Merlot and the Syrah from the Cuttings Wharf property and blends that with the Cabernet Sauvignon from the Estate in the Stags Leap District. For centuries, cultures around the globe, particularly in European countries, have realized that wine and food are meant for each other. Some would say they form equal parts of the equation. Following that, this well-travelled Culinary Institute of America graduate spent a year as sous chef at Ramseys West Hollywood restaurant. According to winery principal Duffy Keys, We wanted to attract a person with solid culinary credentials who could help us convey to winery visitors the reasons for our foodcentric reputation in the culinary community. It also might be noted that co-founders Duffy and Borsack met at where else? a barbecue on the Fourth of July 2002, a year before they began acquiring vineyard land. The wines B Cellars produces include a Cabernet Sauvignon made with fruit sourced from a trio of distinguished vineyards (for their wines they draw on a total of 16 premium vineyards). They also craft three blends: Blend 23 (Chardonnay, Sauvignon Blanc and Viognier), Blend 24 (Cab, Sangiovese and Petite Syrah) and Blend 25 (Cab and Syrah). The names may not evoke magic and romance; but the wines themselves do. They also make a refreshing Sauvignon Blanc and a vineyard designate Syrah Caldwells Kreuzer Canyon. All of their wines are made in relatively small lots, from 330 to 1750 cases, and are the result of the efforts of master winemaker Kirk Venge, named one of the top twenty young winemakers in the world. You can sample these wines in their tasting room on the Silverado Trail just south of Calistoga. The main tasting room has a comfortable Western feel to it, with lots of wood and leather and a tile floor. Outside, an expansive patio sweeps around the building, with views of vineyards, the hills in the distance and, right in front, a serene pond. The entire property is also available for special events. There are a large number of tasting options available. The Special Celebration Tasting is for groups of nine to 25 and includes a private tour of the grounds and cellar and ends in the Salon for a Flagship Tasting accompanied by B-Bites, as they call their mini seasonal pairing of food and wine. There is also the seated Signature Private Tasting, which includes wines not often seen in the marketplace, paired with artisan cheese and charcuterie. The same is true of the Single Vineyard Private Tasting, where a wine educator will guide you through their single vineyard Cabernets and Syrahs. Or in Wine Tasting 101 you can learn to taste wine like the professionals do, in a casual atmosphere, and how to best pair food and wine. In the end, whichever option you select, or if you simply stop by as you travel through the Napa Valley, you will find yourself in a world with fine wine, and a sensitivity to the part that good food and good living plays in it all.

Food and Wine Festival Includes 50 Chefs, over 125 Vintners, and Adds Two Days of Hands-on Immersions
Following a successful 2011 debut, an impressive array of Napa Valley-based celebrity chefs, restaurants, vintners, sommeliers and artisan food producers are set to once again headline this years Flavor! Napa Valley food and wine festival, scheduled for November 14-18. Napa Valley Chef Michael Chiarello, the originator of the Flavor! Napa Valley concept, is joined again this year by fellow Napa Valley chefs such as Thomas Keller, Christopher Kostow, Cindy Pawlcyn, Jeffrey Jake and Masaharu Morimoto. Visiting graduates of The Culinary Institute of America include Scott Conant, returning for his second year, along with Geoffrey Zakarian, Johnny Iuzzini, Charlie Palmer, Larry Forgione and all three of his sons Marc, Sean and Bryan cooking a course together at the opening night tribute dinner to their father, a chef often referred to as the godfather of American cuisine. According to festival producer Herb Karlitz, one of the festival highlights is a twoday tasting of wines that have and continue to put Napa Valley on the map, reaching back to the post-Prohibition wines of the 40s through the present day. We are thrilled to be able to offer our guests a unique way to experience Napa Valley, with our signature Bennett Lane Winery brand of hospitality, said Bennett Lane Winery owner Randy Lynch. Randy and his wife Lisa were joined by special guest, World Series Champion Manager Tony La Russa, for a celebratory brunch and press conference following the inaugural flight. Bennett Lane Winery, in partnership with Calistoga Balloons, will now offer standard and private flight packages for guests who would like to experience the thrill of riding in
their hot air balloon. Private flights in the balloon are available in either two, four or six person options and include a limousine pickup from an up-valley hotel prior to launch, a Bennett Lane flight jacket, and brunch at The Grill at Meadowood. Also included in this package is a private reserve tasting at Bennett Lane Winery following the flight. The prices for this package are $1999, $2399 and $2899 for two, four and six people respectively. A standard flight with a group in the hot air balloon includes a Bennett Lane flight hat, brunch at The Grill at Meadowood and a tour and tasting at Bennett Lane that includes a picnic lunch. Transportation to and from the launch site is provided; guests must provide their own transportation to the winery. This package is priced per individual and costs $339 per guest. Founded by Randy and Lisa Lynch in 2003, Bennett Lanes offthe-beaten track location and friendly tasting room offer visitors to Napa a secret gem and a great way to learn about and try some of Napas best wines in a more intimate setting. Bennett Lanes wines include: a Napa Valley Cabernet Sauvignon ($55); a limited production Reserve Napa Valley Cabernet Sauvignon, ($95); Maximus ($35) a blend of Cabernet Sauvignon, Merlot, Syrah, Malbec and Petit Verdot a red feasting wine; Los Carneros Reserve Chardonnay ($45); White Maximus, a blend of Sauvignon Blanc, Chardonnay and Muscat ($28) and a limited production Port-style Dessert Wine ($60). Justin strives to create dishes with balanced flavors that come together to bring out the best in the accompanying wines. The gardens at the Kendall-Jackson Wine Center were planted in 1997 by Jeff Dawson, a well-known local gardener/horticulturist and are managed by Chef Matthew Lowe and Head Gardener David Gonzales. They have around three acres of gardens that include: honey bees, chickens and more than 150 varieties of heirloom tomatoes. Garden tours are offered daily and feature the sensory gardens, culinary gardens, viticulture and seasonal gardens. For the daily food creations at The Wine Center, Justin finds a tremendous amount of inspiration and ingredients from their culinary gardens and local food producers. His pairings feature fresh quality ingredients that are harvested that day from their estate garden. We start with the wines and build the menus based on the flavor profiles of the individual wines. Our chefs deliver and present the wine and food pairing to each guest and are always available to answer questions about food, wine and local culinary adventures. For a chef, the idea of having access to Kendall-Jacksons world-class wines and a superb culinary garden is a dream come true, says Justin. The Kendall-Jackson Culinary Team helps him achieve this harmony between food and wine, Im lucky to have such an accomplished staff that I can learn from, he explains. You cant be a great chef without talented people around you who really care about food. Our work environment manages to attract the right people. Beginning in 2011, Gloria Ferrer became the first full participant in WillMars Winery Partnership of Hope & Healing. In addition to the annual sales of the Bluebird nesting boxes, Gloria Ferrer hosted WillMars 2012 Celebration and Fundraiser Nantucket in the Caves (a Lobster Feast) last March a fabulously fun and successful Gala event. Just recently, Benziger Family Winery joined this wonderful funding partnership and the next Gala event will be held at their Glen Ellen winery in March of 2013! Gloria Ferrer has donated the proceeds of both of these rare and delicious Carneros Pinot Noir bottlings in support of WillMar Family Grief & Healing Centers fundraising efforts for bereaved children within Sonoma Valley and surrounding areas. Wine Tasting in
Wine enthusiasts can admire the breathtaking views of a 16-acre Cabernet vineyard sprawled along Greenville Road, perfectly situated on top of a hill in Livermore. McGrail Vineyards and Winery specializes in 100-percent, estate-grown Cabernet Sauvignon. McGrail won the Sweepstakes Red Wine Award from the San Francisco Chronicle Wine Competition this year for its flagship wine, the 2008 McGrail Vineyards Cabernet Sauvignon Reserve. We farm it to the highest degree for quality. We drop fruit several times throughout the year and we strive for the best fruit possible, said Heather McGrail, McGrail Vineyards and Winery President.

Musical Wine by The Singing Winemaker

Music and wine lovers can have the both of best worlds by tasting musically inspired wines with live music by the singer/winemaker who goes by the name: The Singing Winemaker (aka Steve Powell). Steves signature wines are his red varietals but he offers every type of wine ranging from Dolcissimo, a musical term meaning very sweetly for a Cabernet Sauvignon blush; a white Scherzando, (musical term for playful) for his, light summer white wine; a tawny Port; a late harvest Zin dessert wine along with peach, raspberry and almond sparkling wines. We focus on red but provide wine for all palates, there is something in the tasting room for everyone, he said. We have great wines and the best wine tasting experience. The Singing Winemaker has not released a new red wine in a year, so this summer he is back in action, releasing six wines. Each will have a release party during the summer with wine and food pairings for guests and of course, music for every age and taste performed by The Singing Winemaker. Many of his wines have musical names including his Harmony blend made with Cabernet Sauvignon, Syrah and Old Vine Zinfandel. The Singing Winemakers popular Melody which is a blend of Malbec and Tempranillo is always a crowd pleaser along with another favorite, Amador County Barbera, which is a robust Italian varietal.
