Established in 2003, the Carolina Center for Jewish Studies, an interdisciplinary academic program in the College of Arts and Sciences, promotes a deeper understanding of Jewish history, culture and thought through its teaching, research and community outreach initiatives. In 2011, UNC approved a new undergraduate degree program in Jewish Studies. The degree program will be offered through the Department of Religious Studies, where students will earn a Bachelor of Arts degree in Religious Studies with a Concentration in Jewish Studies. The Centers global focus and comprehensive scope of study, coupled with Carolinas national reputation as a student-focused research university, make the program truly unique among its peers. Future plans promise to establish Carolina as the leading institution for Jewish Studies in the American south and as a prominent source of research with an international reputation.

The Department of Nutrition was established in 1946 with the aid of a grant from the General Education Board of the Rockefeller Foundation. With greater public interest in nutrition, increasing numbers of graduates from diverse baccalaureate programs started to seek careers in public health nutrition, and the Department began to recruit into the program persons with a broad educational base in the arts, humanities and behavioral sciences. Current research includes the role of nutrition in cancer prevention, inflammation of white blood cells and the relation to obesity and cancer, and how different foods affect the way the brain functions as we age. The department supports a student group, the Nutrition Coalition, whose activities are open to all students and dedicated to promoting healthy lifestyles on both the UNC campus and in the surrounding community through volunteer, social and educational activities. DPS is an accredited agency dedicated to the welfare of the University community with a commitment to the Universitys core teaching, research and public service mission. DPS police are qualified sworn officers, commissioned and holding the same responsibility and authority as city police officers or sheriffs deputies. They protect campus 24 hours a day, 365 days a year and offer a strong crime prevention program, providing information and classes to help UNCs students and employees. DPS also coordinates the distribution of parking on campus and local transportation services with the towns including UNCs own Point-to-Point night-time shuttle. The Commuter Alternatives Program provides a menu of sustainable alternatives to single-occupancy vehicle use. Examples include the innovative Zipcar and Zimride programs, local and regional transit, park-and-ride options and bicycling. DPS addresses safety and transportation needs with professionalism and integrity, while protecting North Carolinas future.

Mildred Edna Cotton Council (aka Mama Dip) was born in Chatham County, North Carolina. She was raised in Balwin Township where she started cooking at an early age. Mildred was the youngest of seven, and was dubbed Dip by her siblings because she was so tall and had such long arms that she could reach way down in the rain barrel to scoop up a big dipper full of water when the level was low. Mama Dip first learned to cook watching family members make meals by using the dump cooking method. Dump cooking means no recipes, just measure by eye, feel, taste and testing. Mama Dips first job was as a family cook in Chapel Hill. She then moved on to work at Carolina Coffee Shop, Kappa Sigma fraternity and St. Andrews Hall. In 1957 she worked with her mother-in-law in a tiny take-out restaurant where she began to hone her business skills. On a Sunday in November 1976 Mama Dip opened her own restaurant with $64 -- $40 dollars went toward food and $24 was used to make change. The mornings take was used to fund the lunch meal and lunch to fund the dinner. At the end of the day Mama Dip took home $135, and the rest is history.
