"There's so much misinformation out there. People are looking for simple
solutions to complex problems," says Schwarcz, a McGill University
professor.
"There's a real hunger for this kind of stuff," he says. "The question is: Are
you reading the right things or are you making the right changes? Food is
extremely complicated and so is the human body."
Which is why Schwarcz has written An Apple A Day -- to demystify all the
myths, put it into an easily digestible format and help people decipher truth
from fiction.
Schwarcz says that since 30 to 40 per cent of cancers and heart disease can
be prevented with lifestyle changes, there is good reason to pay attention to
the foods we eat.
Schwarcz says that if he had to sum the book up in one sentence, it would
be: "Eat mostly plant material."
"The more varied your diet is, the greater your chance that you are covering
all your nutritional bases. The more different veggies and fruits you eat, the
better off you are."
And what about soy -- one of the most controversial foods out there. "Soy
should be looked at as a food, not a medication," he says. "There's no issue
at all about consuming soy early in life, but if someone is already
diagnosed with breast cancer, then you don't want to go out of your way to
consume soy (because) it may have a negative effect, although that isn't
clear."
And, yes, an apple a day is good for you. "There actually have been some
studies specifically on apples which have shown it really does pay to eat
one every day," he says.
Apples are high in antioxidants and they're a good source of fibre and
vitamins. So does Schwarcz eat an apple a day? "I do," he says. "It's more
symbolic than anything else, to show that you are conscious of what you're
putting into your mouth."

A INDÚSTRIA DE LATICÍNIOS
Robert Cohen,
-----------------------------
