Instructions
All the ingredients for each recipe must be poured into the bowl in the order that the recipe stipulates. The recipes are written using the measuring cup and spoon included with the bread maker. Some of the programmes require loaf size and colour, some dont. This will be indicated within each recipe instruction. Where possible use good quality ingredients that are not out of date and stale. This will affect the rise and texture of your bread. When the bread is finished, press the start button and hold to turn the machine off. If you dont press it at the end, the bread machine will automatically keep the bread warm for one hour. Open the lid and using oven gloves remove the bread pan by turning anti-clockwise and lift up and away. Let the pan cool down before removing the bread. Turn the bread pan upside down onto a wire cooling rack and gently shake until the bread becomes loose. Let the bread cool for about 20 minutes before slicing. Before slicing remove the kneading paddle with the hook provided. 3

Programme 1
The bread made on this programme can be made with white, wholemeal, spelt and granary flours. With the white flour, your bread will rise well and be lovely and light in texture. Wholemeal and spelt are a little denser. Add different ingredients to ring the changes and invent your own recipes. 1. Pour the water into the bread pan, followed by the oil, salt, milk powder and caster sugar. 2. Pour the flour on top and then finish with the yeast, making sure it is not in contact with the liquid. 3. Place the bread pan into the machine and lock in place. Close the lid. 4. Choose programme 1, the 750g or 450g weight and choose light, medium or dark for the colour of your bread. 5. If you are using the delay function, choose how long you want.You can delay the bread making process for up to 13 hours. 6. Press the start button.

Basic white bread 750g

1 cup water 2 tablespoons sunflower or light olive oil 1 tsp sea salt 2 tablespoons dried milk powder 2 tablespoons caster sugar 3 cups of strong white bread flour 1 tsp of dried fast action yeast

450g

cup water 2 tablespoons of sunflower or light olive oil 1 tsp sea salt 2 tablespoons of dried milk powder 1 tablespoons caster sugar 2 cups of strong white bread flour 1 tsp of dried fast action yeast

White granary bread

750g and 450g loaves Replace the strong white flour with strong white granary seed and grain flour. The rest of the ingredients are the same. Follow the same method as the white loaf.

Spelt bread

Spelt is a stone ground wholemeal flour. This bread uses a mixture of white and spelt flour to give a light brown bread. Follow the same method as the white loaf, but use the ingredients list below.

750g

Cheesy leek bread 750g


1 medium sized leek trimmed, washed and thinly sliced 1 tablespoon olive oil 1 cup water tsp sea salt 2 tablespoons dried milk powder 1 tablespoon caster sugar 1 cup of grated strong mature cheddar cheese 3 cups of strong white bread flour 1 tablespoon poppy seeds 1 tsp of dried fast action yeast 1. Fry the leek in the olive oil over a gentle heat for 5 minutes. Cool. 2. Pour the water into the bread pan, followed by the salt, milk powder and caster sugar. Add the cooked and cooled leeks. 3. Pour the flour on top, then the poppy seeds. Finish with the yeast, making sure it is not in contact with the liquid. 4. Place the bread pan into the machine and lock in place. Close the lid. 5. Choose programme 1, the 750g or 450g weight and your choice of colour. 6. Press the start button.

450g

Seeded bread 750g

Pour the water into the bread pan, followed by the oil, salt, milk powder and caster sugar. 2. Pour the flour on top and then finish with the yeast, making sure it is not in contact with the liquid. 3. Place the bread pan into the machine and lock in place. Close the lid. 4. Choose programme 1, the 750g or 450g weight and choose light, medium or dark for the colour of your bread. 5. 450g

Programme 2
This light weight bread has a lovely crisp crust.

French bread 750g

1 cup of water 1 tablespoons sunflower or olive oil 1 tsp sea salt 2 tablespoons dried milk powder 1 tablespoon caster sugar 3 cups of strong white bread flour 1 tsp of dried fast action yeast

1. Pour the water into the bread pan. Then add the oil, sea salt, milk powder and caster sugar. 2. Now carefully pour on the flour and then the yeast, making sure the yeast doesnt touch any liquid. 3. Place the bread pan into the machine and lock into position. Close the lid. 4. Choose programme 2. This will give you a wonderfully crisp, nicely browned crust. Choose the preferred colour of your bread. and either 750g or 450g weight. 5. Press start.

450g

cup water 1 tablespoon sunflower or olive oil 1 tsp of sea salt 1 tablespoons of dried milk powder tablespoon caster sugar 2 cups of strong white flour 1 tsp dried fast action yeast.

Programme 3
This programme is for bread containing purely whole wheat flour. It has a longer preheat time to allow the grain to soak up the water and expand. There will be a lovely thick crust and a denser texture. 1. Pour the water into the bread pan. Add the oil, salt, dried milk powder and sugar. 2. Pour on the flour and then the yeast, making sure the yeast does not come into contact with the liquid. 3. Place the bread pan into the machine and lock into position. Close the lid. 4. Choose programme 3 and then choose your desired bread colour, and either 750g or 450g weight. 5. Press start.

Whole wheat bread 750g

1 cup water 2 tablespoons of sunflower or light olive oil 1 tsp sea salt 2 tablespoons caster sugar 1 tablespoons dried milk powder 3 cups of strong whole meal flour or stone ground spelt flour tsp dried fast action yeast

450g

cup water 1 tablespoons sunflower or light olive oil tsp of sea salt tablespoon caster sugar 1 tablespoon dried milk powder 2 cups of strong whole meal flour or stone ground spelt flour tsp dried yeast.

Programme 4
This is the perfect setting for yeast free sponge cakes and cakey breads. This is a quick cycle where you mix two groups of ingredients together in separate bowls, and then pour them into the bread pan. These cakes will not rise to fill the pan completely; however they will still be light in texture. 1. Mix together all of the ingredients for bowl 1. 2. Do the same with the ingredients for bowl 2. 3. Now combine both bowls together and mix well. 4. Pour into the bread pan and place into the machine. Lock into position. 5. Close the lid and choose programme 4. Press start. 6. Once cooked, leave the cake to cool in the pan for 10 minutes, then turn out onto a wire rack. Leave to cool. 7.You can make an icing for this cake by sifting 200g icing sugar into a bowl and adding the grated zest of 1 lemon. Now add enough lemon juice to make the icing sit nicely on top of the cake, with a little coming down the edges.

St Clements cake
Bowl 1 cup of melted butter 3 medium eggs beaten 2 tsp lemon juice Grated zest of half a lemon Grated zest of half an orange

Bowl 2 1 cup of plain flour (approx 225g) 2 tsp baking powder 1 cup of demerara sugar

Lime and coconut cake


Bowl 1 cup of melted butter 3 medium eggs beaten 2 tsp lime juice Grated zest of 1 lime 1. Mix together all of the ingredients for bowl 1. 2. Do the same with the ingredients for bowl 2. 3. Now combine both bowls together and mix well. 4. Pour into the bread pan and place into the machine. Lock into position. 5. Close the lid and choose programme 4. Press start. 6. Once cooked, leave the cake to cool in the pan for 10 minutes, then turn out onto a wire rack. Leave to cool. 7.You can make an icing for this cake by sifting 200g icing sugar into a bowl and adding the grated zest of 1 lime. Chocolate chip and banana bread

Bowl 1 2 tablespoons melted butter 1 tablespoon semi-skimmed milk 1 cup (approx 3 medium) mashed banana 1 egg beaten Bowl 2 cup of milk chocolate chips 1 cups plain flour tsp bicarbonate soda tsp baking powder cup of soft brown sugar tsp salt tsp ground mixed spice

1. Mix together all of the ingredients for bowl 1. 2. Do the same with the ingredients for bowl 2. 3. Now combine both bowls together and mix well. 4. Pour into the bread pan and place into the machine. Lock into position. 5. Close the lid and choose programme 4. Press start. 6. Once cooked, leave the cake to cool in the pan for 10 minutes, then turn out onto a wire rack. Leave to cool. This bread is best served still slightly warm.

Programme 5
This programme is ideal for baking a sweet type of bread, which has a lovely crispy crust. Delicious still slightly warm and great the next day, toasted with butter and jam. 1. Pour the water into the bread pan. Add the oil, salt, sugar and dried milk powder. 2. Now pour in the flour, add the cinnamon and the yeast. Make sure the yeast doesnt touch the liquid. 3. Place the bread pan into the machine and lock. Close the lid. 4. Press programme 5 choose the colour of the bread and either 750g or 450g weight. Press start. 5. When the audible beep sounds during the process, lift the lid, add the cranberries. Close the lid back down. 6. When cooked, remove the pan from the machine and leave the bread to cool for 10 minutes and then turn out.

Cranberry and cinnamon bread 750g

1 cup water 2 tablespoons of sunflower oil 1 tsp salt cup of light brown sugar 2 tablespoons dried milk powder 3 cups of strong white flour 1 tsp of ground cinnamon 1 tsp of dried fast action yeast cup of dried cranberries You can use different dried fruits for this bread. Try dried cherries, raspberries or strawberries.

450g

cup water 2 tablespoons sunflower oil 1 tsp sea salt 5 tablespoons soft brown sugar 2 tablespoons dried milk powder 2 cups of strong white flour tsp ground cinnamon 1 tsp dried fast action yeast cup of dried cranberries 13

Programme 6
Ultra fast bread 450g
1 cup of water heated to 40c-50c this makes the yeast work quicker 1 tablespoons sunflower or light olive oil tsp salt 1 tablespoon dried milk powder 1 tablespoons caster sugar 2 cups of strong white flour 2 tsp yeast 1. Pour the water into the bread pan. Add the oil, salt, milk powder and sugar. 2. Pour over the flour and then add the yeast, making sure it doesnt touch the water. 3. Place the bread pan in the machine, lock and then close the lid. 4. Choose programme 6. The default loaf size will automatically come up with 450g and you cannot use the delay start time with this programme. 5. Press start. Both breads with the ultra fast I and II programmes use warm water, a lower salt content and higher ratio of yeast in them this all enables the bread to rise in a shorter time.This bread will be denser in texture and wont rise as much, but its all cooked in 58 minutes, so thats a big bonus!

Programme 7
Ultra fast bread 750g
1 cup water heated to 40c-50c 2 tablespoons sunflower or light olive oil 1 tsp sea salt 1 tablespoon dry milk powder 2 tablespoons caster sugar 3 cups of strong white flour 2 tsp dried yeast 1. Pour the water into the bread pan. Add the oil, salt, milk powder and sugar. 2. Pour over the flour and then add the yeast, making sure it doesnt touch the water. 3. Place the bread pan in the machine, lock and then close the lid. 4. Choose programme 7. The default loaf size will automatically come up with 750g and you cannot use the delay start time with this programme. 5. Press start.

Programme 8
This cycle prepares the dough for you by mixing the ingredients, kneading and taking it through its first rise cycle.You then remove the dough, knock it back and shape it by hand into the required bread for example a pizza base. The colour and loaf settings cannot be used with this programme. This recipe below is for a pizza dough, but you can also use it for garlic bread. 1. Pour the water into the bread pan. Add the butter, salt, caster sugar, garlic and parsley. 2. Pour over the flour, the sesame seeds and then add the yeast, making sure it doesnt touch any liquid. 3. Place the bread pan in the machine, lock into place and close the lid. 4. Choose programme 8 and press start.

Dough

1 cup water 1 tablespoon melted butter 1 tsp salt 2 tablespoons caster sugar 2 cloves garlic crushed cup of chopped fresh parsley 2 cups of strong white flour 1 tablespoon sesame seeds 1 tsp dried fast action yeast

For pizza

Preheat the oven to 200c /Mk6 1. Use your hands to shape the dough into a round, making sure it is nice and flat. Place onto a floured non-stick baking tray and brush with a little olive oil. 2. Place somewhere warm and leave to rise for about 20 minutes. 3. Spread some tomato sauce over the base, and then your favourite pizza topping with plenty of mozzarella cheese. 4. Bake for about 10-15 minutes or until the base is crisp and the topping nice and golden brown.

For garlic bread

Preheat the oven to 200c /Mk6 1. Use your hands to shape the dough into a round, making sure it is nice and flat. Place onto a floured non-stick baking tray and brush with a little olive oil. 2. Place somewhere warm and leave to rise for about 20 minutes. 3. Melt 50g butter in a pan with 4 cloves of crushed garlic and 3 tablespoons of chopped fresh parsley. 4. Spread this butter over the top of the dough and let it sink it. If there is a little extra butter, save it for the end. 5. Bake for about 10-15 minutes or until the base is crisp and the topping nice and golden brown. 6. Spread with any extra warm garlic butter and serve.

Programme 9
This programme makes approximately 450g of delicious, stress free jam! It has the added benefit of containing less sugar than normal jam too and has a bright vibrant colour and fresh taste. Do not increase the amount of ingredients written here as you run the risk of the jam boiling over into the inside of the machine. 1. Put the raspberries into the bread pan. Add the lemon juice 2. Mix the sugar with the pectin powder thoroughly and sprinkle over the top of the raspberries. 3. Place the bread pan into the machine, lock into position and close the lid. 4. Choose programme 9 and press start. 5. Warm your sterilised jam jar and pour the jam into it. Seal tight. The paddle will automatically keep the ingredients stirring throughout the process and the heating element is placed in such a way as to prevent the contents of the pan from burning.You cannot use the colour, loaf size or delay start time settings with this programme.

Summer fruit jam

3 cups (approx 380g) of frozen mixed summer fruits eg cherries, raspberries, blackcurrants, blackberries, redcurrants. Measure BEFORE defrosting. 3 tablespoons lemon juice 1 cup of granulated sugar 1 sachet Tate and Lyle dried pectin powder (approx 1 tablespoons)

Programme 10
This is a programme for tea bread type cakes that use yeast as a raising agent, and require a shorter cooking time. There is no choice of weight on this programme. 1. Pour the water into the bread pan and add the salt, butter and malt extract. 2. Pour on the flour and then add the yeast, making sure it doesnt touch the liquid. 3. Place the pan inside the machine and lock into position. Close the lid. 4. Choose programme 10. 5. When the audible beep sounds, lift the lid, add the dried fruits and close the lid. 6. When cooked, remove the bread pan from the machine and leave to cool for 10 minutes before turning out. 7. Serve still slightly warm and spread with butter. Delicious toasted too.

Malted fruity teacake


1 cup water 1 tsp sea salt 2 tablespoons melted butter 3 tablespoons malt extract 3 cups of plain flour 1 tsp of dried fast action yeast cup chopped dried prunes cup chopped dried apricots cup chopped dried pears

Programme 11
This is a light textured, spongy bread, with a thinner crust ideal for sandwiches.You cannot use the colour setting for this programme. 1. Pour the water into the bread pan, add the butter, salt, sugar and dried milk powder. 2. Pour over the flour and add the yeast, making sure it doesnt touch the liquid. 3. Place the bread pan into the machine, lock into position and close the lid. 4. Choose programme 11 and press start. The default is 750g.

Sandwich loaf 750g

1 cups water 1 tablespoons of melted butter tsp sea salt 3 tablespoons caster sugar 1 tablespoons dry milk powder 3 cups strong white flour tsp dried fast action yeast

450g

cup water 1 tablespoon melted butter tsp sea salt 2 tablespoons caster sugar 1 tablespoon dried milk powder 2 cups strong white flour tsp dried fast action yeast Follow the recipe for the 750g bread, but choose the 450g weight.

Programme 12
This programme is for baking only. You can use it for shop bought partbaked bread or if you want to give an existing loaf a darker colour. The colour and loaf size settings cannot be used with this programme.

Bake

To cook part-baked bread: Place 4 x 50g rolls into the bread pan and place in the bread machine. Lock into position. Close the lid and choose programme 12. The bread will take about 10-15 minutes to cook. To darken an existing loaf: Place the loaf back into the baking pan you dont need the paddle. Place the pan into the bread machine and choose programme 12. Bake until you get the required colour. The programme is automatically set for an hour, but you may not need all of this time, so when the bread rolls are baked, press and hold the start button to stop the programme.
