Already more than 200 years ago pectins were discovered in fruits. However, not before the beginning of the 20th century, their functional applicability in the production of food was recognized. Due to its gelling, thickening and stabilising properties pectin have become increasingly important both for the food industry and the cosmetic and pharmaceutical industry. Today, highly specialised pectins are mainly produced from harvest-fresh dejuiced and carefully dried apples resp. citrus fruits. The production process from fruit to pectin requires much experience and accuracy to guarantee the highest possible quality and purity.
