An Italian classic, lig h ten ed up. Bakin g th e cutlet as opposed to fryin g really lig h ten s th is dish up wh ile remain in g moist an d full of flavor. Serve th is over pasta or with a larg e salad to keep it on th e lig h ter side. Th is recipe is from th e arch ives wh ich first made it's appearan ce back in 2009. I decided to update th e ph oto because my ph oto skills were lackin g back th en . We all love th is dish in my h ome, it's perfect for a weekn ig h t yet g ood en oug h to serve to compan y. Ser ving s: 8 Ser ving Size: 1 piece Old Points: 5 pts Points+: 6 pts Calor ies: 224.5 Fat: 8.6 g Pr otein: 25 g Car b: 14 g Fiber : 1.5 g In g redien ts: 4 (8 oz) ch icken breast h alves, sliced in h alf to make 8 3/4 cup season ed breadcrumbs (I used wh ole wh eat) 1/4 cup g rated Parmesan ch eese 2 tbsp butter, melted (or olive oil) 3/4 cup reduced fat mozzarella ch eese (I used Polly-o) 1 cup marin ara or Filetto di Pomodoro cookin g spray Direction s: Pr eheat oven to 450. Spr ay a larg e bakin g sh eet lig h tly with spray. Combine breadcrumbs an d parmesan ch eese in a bowl. Melt th e butter in an oth er bowl. Lig h tly br ush th e butter on to th e ch icken , th en dip in to breadcrumb mixture. Place on bakin g sh eet an d r epeat with th e remain in g ch icken . Lig h tly spr ay a little more oil on top an d bake in th e oven for 20 min utes. T ur n ch icken over, bake an oth er 5 min utes. Remove from oven , spoon 1 tbsp sauce over each piece of ch icken an d top each with 1 1/2 tbsp of sh redded mozzarella ch eese. Bake 5 more min utes or un til ch eese is melted.
