Geer Nursing and Rehabilitation
Center in North Canaan is one of more than 300
nursing home facilities in Connecticut licensed by
the states Department of Public Health. But to
Kevin OConnell, the centers new administrator,
Geer is much more than a nursing home.
OConnell started his career as a physical thera-
pist and obtained his masters degree in business
administration at the University of Hartford. He
worked at Ohio and Indiana nursing homes, as
well as at the corporate level, before recently mov-
ing back to Connecticut.
Im very impressed with Geer. It has a unique
setup because it covers such a broad spectrum of
services, he said.
OConnell listed a wealth of options available on
the Geer campus: Geer Village, a retirement com-
munity that offers independent and assisted living,
as well as units for memory-impaired residents;
the Beckley House, for people with limited income;

an Adult Day Center, which features the Dial-
A-Ride service; the Nursing and Rehabilitation
Center, which offers long-term care and short-
term rehabilitation; outpatient physical therapy;
a pharmacy; and the Northwest Connecticut
YMCA.
While OConnell was happy to discuss any as-
pect of Geers services, he emphasized the impor-
tance of community at the campus.
Transportation is a large piece. Some people
either dont drive or cant drive, and there is a
real risk in a rural community of being isolated,
he said. Our Dial-A-Ride service took 8,500 calls
in 2012. Its a much bigger service than I origi-
nally realized, and the only form of transporta-
tion for a large portion of the senior population.
OConnell also mentioned that Geer Village
functions as a community center, hosting clubs
like the Rotary, classes from Taconic Learning
Center and other private gatherings. Its a pretty
active, vibrant place.
In three to fve years, OConnell expects home-
based services to become a bigger part of the
Medicare and Medicaid systems.
On the bigger scale, people see whats going on
with the rebalancing in Connecticut and health-
care in the country. More services are going to be
offered in the home and in the community, he
said.
As for the high number of nursing homes in
the state, OConnell says that Connecticut has
a relatively high rate of occupied beds compared
to states such as Ohio, which is overly bedded.
Even so, he said there are still some empty beds
in Connecticut, which is why the state is moving
toward a home-based system.
Health-care is an ever-changing system, and
in the next three to fve years were going to see
more changes than we have in the past decade,
he said. Nobody has a crystal ball, but any orga-
nization such as ours has to be adaptable.

We joke about it, not out of a lack
of sympathy for the afficted, but because the symp-
toms of forgetfulness are so common. But forgetting a
name or where you put your car keys is a far cry from
forgetting family members, even a spouse. We are
talking about Alzheimers disease which affects 5.4
million Americans, the sixth largest cause of death in
the country.
The rapid increase of Alzheimers sufferers is at-
tributed mostly to increased life expectancy and more
elderly 80 million baby boomers are 65 or older as
well as poor lifestyle choices, according to Dr. Gary
Small, director of the UCLA Longevity Center.
An estimated 10 percent of boomers are at risk. One
percent of Alzheimers diagnoses are believed to be he-
reditary. The rest is due to poor diet, lack of exercise
and stress.
Dr. Small and his wife, Gigi Vorgan, have written six
books on the brain and memory, including the The
Memory Bible. Their latest is The Alzheimers Pre-
vention Program.
The single, greatest risk factor is age, Dr. Small
told a large audience at a recent presentation at Geer
Village in North Canaan, so all of a sudden, there is
an epidemic. The good news is that it is forcing scien-
tists to look harder for treatments.
They may be on at least one right track with proof
that anti-infammatory drugs given for joint pain are
reducing harmful infammation in the brain.
The Alzheimers Prevention Program, published
in 2011, is a guide to brain health. It recounts that
plaques and tangles in the brain are the identifable
symptom and cause functional disruptions. Its more
than 200 pages are devoted mostly to how anyone, at
any age, can prevent, or at least delay, the onset of
Alzheimers.
People in Sardinia, Italy, Okinawa, Japan and Loma
Linda, Calif. have a markedly low Alzheimers rate.

Scratchy throat, mild headache,
cough, some congestion. Those were the symptoms
I took to my doctor. Yes, I use my Medicare and sup-
plemental insurance whenever I feel poorly, expect-
ing a prescription of some sort. After all, I had had
the u shot, so this must be something else.
You know, this is probably viral, my doctor,
young, female and open to new ideas in medicine,
told me. Antibiotics wont help. So I want you to try
elderberry. Its been proved to be much stronger than
Tamiu with no bad side effects.
Elderberry, I asked? Where do I get it? She handed
me a small piece of paper with sambucus scrawled
on it. Go to the health food store.
So of course I called my best friend of nearly 50
years, a doctor. He listened, laughed and pooh-
poohed poor elderberry. But then, he is like all the
physicians I know of a certain age.
So I went to Google the Great and Powerful. That
magical wizard spit out such positive elderberry facts
that I was in the store holding a bottle of capsules of
the magic elixir within an hour. (No insurance cover-
age, of course, but reasonably priced.)
Seems the sambucus nigra or black elderberry has
a huge concentration of antioxidant avanoids. Even
better, many of these avanoids are cytokines, prov-
en to both boost immune response and ght inam-
mation, which is why they effectively combat aches,
pains and fevers. And, dear readers, it worked.
Within two days I was mostly recovered. All symp-
toms gone or much reduced. So now elderberry is in
my medicine drawer arsenal beside the zinc tablets
that to the disbelief of my doctor friend work
against a cold if you take them almost the moment
you begin to sneeze and feel stuffy-nosed.
In case you are tempted to pick your own elderber-
ries and boil them down, it seems the black variety
grows in warmer climates then ours. If you nd any
here, they are going to be red.

Its hard to believe its been a
year since I wrote a story for Health and Well-
ness about sleep apnea and my battle with the
afiction. Tackling sleep apnea has been the
past years challenge.
After my doctor informed me I was an ideal
candidate for a sleep test, it was off to the Win-
sted Health Centers Hungerford Regional Sleep
Lab last spring.
Friendly and accommodating, the staff quickly
processed my paperwork and had me spend a
somewhat uncomfortable night in bed, hooked
up to more than two dozen wires fastened to my
head, torso and legs.
I quickly realized that trying to drift into un-
consciousness in a sleep lab can be akin to try-
ing to stay awake in a recliner after a Thanks-
giving meal. Positioned on my back, tangled in
a spiderweb of thin wires, I became convinced
I would never fall asleep, but in the morning I
was told that I did manage to make it through a
short cycle.
A few weeks later, the results of my test
came back, loud and clear. I had developed a
severe case of sleep apnea and I needed to do
something about it immediately. The soft pal-
ate at the top of my windpipe was closing dur-
ing sleep, and I was, unknowingly, waking up
many times throughout the night to regain my
breath. I was never actually achieving a full
nights rest. Severe cases like mine can dam-
age the heart and shorten the lifespan or, in
the absolutely worst cases, cause death in ones
sleep. I wasnt ready for that yet.
The Hungerford Regional Sleep Lab invited
me to return to the facility to spend another
night attempting to catch some zs, but this
time I would be using a constant positive air
pressure (CPAP) machine to assist me with my
breathing. And this time, I actually slept.
The science behind CPAP is fairly simple. Con-
stant air pressure is produced by a machine and
pressed into a mask worn during sleep. The con-
stant air ow keeps the patients airway open
while teaching the proper muscles to exhale. In-
stead of stopping breathing many times through-
out a nights sleep, the CPAP user is able to expe-
rience deep, uninterrupted sleep.

If youve recently been given a diagnosis of celiac
disease or some other afiction that necessitates
cutting out wheat from your diet, youre probably
going into serious withdrawal. Maybe even tran-
sitioning through Elizabeth Kbler-Rosss Five
Stages of Grief: anger, denial, bargaining, depres-
sion, acceptance.
For some people giving up their daily bread is a
big adjustment.
And its no wonder: Americans like their wheat
products. Breakfast almost always involves some
sort of toast or cereal. Lunch is commonly a sand-
wich, and what would dinner be without bread
and butter on the side? To top it off, most chil-
drens birthday parties feature pizza and cake. A
celiac nightmare! Thats not even talking about
all the foods into which wheat has been known to
silently creep.
When my mother was rst diagnosed with celiac
disease (celiac can be hereditary, which explains
why three of her children also have it) we consci-
entiously switched from serving pasta to risotto,
and yet she would still feel ill after eating. Turns
out our favorite brand of chicken stock had wheat
gluten in it. It never occurred to us to check the
chicken broth.
So now we know all about reading labels. In fact,
after I was diagnosed I came to the conclusion
that if a product label listed more than ve ingre-
dients, then more than likely wheat gluten was
buried in one of them, i.e. natural avors. Thats a
big red ag.
As a generally healthy eater and cook, I prefer
making my own food from mostly unpackaged
ingredients, so I didnt nd the transition to no-

wheat impossible, except on occasion. Trav-
eling can be challenging, because eating
options on the road or in airports tend to be
fast-food or chain restaurants, most of which
have limited gluten-free (GF) options. And
breakfast at the neighborhood coffee-shop
tested my good humor. Yes, I could indulge
in a frothy latte, but the croissants, bagels,
sticky buns, all were strictly off-limits.
Times they are a-changing, though, and
at least locally, there are some good places to
satisfy my breakfast-bread cravings.
Peggy McEnroes Back in The Kitchen in
Amenia, NY, offers a fuffy GF blueberry or
apple/cinnamon muffn and serves gluten-
free toast with the eggs. She also makes a
yummy GF carrot-cake cupcake. Irving Farm
in Millerton, NY, is trying to get on the GF
bandwagon. Though they seem to run out of
the gluten-free four fairly often, sometimes
they offer both GF cookies and GF break-
fast goodies. Once or twice they have had a
wonderful morning glory muffn, which I was
lucky enough to snag.
Country Bistro in Salisbury, CT, has a
menu that acknowledges its gluten-free cus-
tomers. GF items are asterisked.
Sadly, though, there are no pastries at
the lovely Sweet Williams in Salisbury, but
this brings up an important point. They
are a small shop and do not have the space
to make dedicated gluten-free items. They
will make a GF cheesecake or truly four-
less chocolate cake by special order. And
next door, Salisbury Breads offer frozen GF
pie crusts and, occasionally, GF banana or
pumpkin bread.However, contamination is
one of the pit-falls of gluten-free food. A food
product may be gluten-free but the facil-
ity that makes it might not be. Irving Farm
posts a sign in its bakery case noting that
this is not a gluten-free facility. McEnroe
does all her gluten-free baking at one time,
separate from her other baking, and she
goes to great lengths to make sure the glu-
ten-free products dont come in contact with
any contaminants.

always an easy sell.

were very compelling.
There was a long line
for books afterward.
After an initial look,
one might do as I
did and skip straight
to Chapter 9, Your
First Seven Days. It
is the essence of what
Dr. Small offers. It
promises improve-
ments that will be
obvious almost im-
mediately. Isnt that
what we all want?
It convincingly be-
gins with assurances
that the meals, and
physical and mental
exercises laid out for
the week can quickly
become habitual.
For busy people, or
anyone for that mat-
ter, not having to
add more things to
remember to the day
is key to being able to
follow this.
It may be ironic
that we need to not
have to remember to
work on memory, but
there it is.
The idea that brain
health and physical
health are not sepa-
rate things sums it
up.Small can cite
cases in which people
have added an exer-
cise, such as a brisk
walk to their routine,
prompting a spiral
of benefcial results.
The exercise loosens
up stiff joints and the
fresh air and change
in scenery stimulates
the brain. Feeling
better, those people
wanted to socialize
more, which is an
important factor in
relieving the stress
that is so harmful.
Take a walk with
a friend. Its a triple
threat, Small said.p

er, he died of cancer,

more than twice what
the apartment was
worth. His widow
continued to pay rent
until Calment died
two years later.
Calment, by the
way, died of natural
causes. She used
olive oil, drank port
wine and ate about

Then there are foods like French fries, usual-
ly considered GF, but if cooked in the same oil
as fried chicken, say, those fries would be con-
taminated by the four coating. The other rea-
son to be wary of the French fry is that many
large chains coat them in a dusting of four to
make them crispier. Suddenly, a perfectly good
gluten-free food is off the menu for the celiac.
Thats the sort of thing that I must confess
makes me cranky. Why take a food thats nat-
urally gluten-free and muck it up?
Of course, the sure-fre way to be gluten-
free is to cook at home, and here too, GF is
beginning to catch on. LaBonnes Market in
Salisbury, Four Seasons in Lakeville and the
Sharon Farm Market in Sharon all sell a va-
riety of gluten-free cereals, crackers, pastas,
breads, broths and fours. LaBonnes has a
fair number of items in the frozen section and
Sharon Farm Market has a range of GF cook-
ies, plus, of course, their extensive Asian food
section, which includes lots of rice noodles and
a wheat-free tamari sauce. Because, did you
know, soy sauce has wheat gluten? For a strict
GF diet, that eliminates Chinese food.
Fifteen years ago, being gluten-free pretty
much meant doing without. Yes, there were
recipes that involved mixing several kinds of
specialty fours to try and approximate the
standard all-purpose wheat four. I remember
making my favorite beef stew and substituting
rice four for the wheat. The result tasted so
awful (rice four is sweet), I didnt try it again
for years. Now Bobs Red Mill, among other
companies, sells a very good gluten-free all-
purpose four, as well as some excellent GF
brownie and cake mixes. As does, wonder of
wonders, Betty Crocker! Is gluten-free going
mainstream? Maybe. The package says these
products are made in a gluten-free processing
facility.
One of the best gluten-free cakes Ive ever
had is one my friend, Ian Michaels of Pine
Plains, NY, whips up. Its made with almond
four and is naturally gluten-free.

Gluten-Free Almond Cake
2 cups raw almonds,
2 squares unsweetened bakers chocolate,
1/4 lb butter,
1 1/4 cups sugar,
5 eggs,
1 tsp. of vanilla or 1/2 tsp. of almond extract.
Preheat oven to 325 degrees. Spread almonds evenly on
a cookie sheet and bake for 20 minutes. Remove and
let cool. Turn the oven up to 340. Once the nuts are
cool, pulse in a food processor until the consistency of
coarse meal. Meanwhile, melt 2 squares unsweetened
bakers chocolate (or substitute a good quality 6 oz.
dark bar chocolate) in microwave. Cream 1/4 lb. butter
with 1 1/4 cups sugar. Separate 5 eggs, beat yolks till
lemony and add that to the butter mixture. Stir in the
cooled, melted chocolate. Add either 1 teaspoon of va-
nilla or 1/2 teaspoon of almond extract. Stir in the al-
mond meal. Beat the egg whites til soft peaks form and
stir a third into the nut mixture. Fold in the remainder.
Spread the cake into a well-greased false bottom pan
and bake at 340 degrees for about 35 minutes. p

For me, the CPAP ma-
chine was a complete suc-
cess. Being able to breathe
through the night gave me
a sense of renewal, and I
was immediately hooked. It
turns out breathing air can
be addictive!
So how does this af-
fect daily life? Well, the
frst thing I noticed was
an increased ability to re-
member things. Meeting
times, names and numbers
seemed to come to me more
quickly after only a few
weeks of using the CPAP.
After a while, I noticed I
was having more vivid and
memorable dreams. I would
wake up feeling rested. The
increased sense of mental
clarity, along with more
and more energy, made for
brighter days. I was able
to add a bit of exercise into
my previously lackluster
regimen, and I felt myself
more eager to get outdoors
and simply walk around.
Getting more exercise,
of course, means being
healthier in general, and
that also translates into
a more restful sleep. So
conquering sleep apnea
can truly kick off a cycle
of healthy behavior. Many
people describe the results
as miraculous.
After several months of
using a CPAP machine, I
have noticed differences in
my physical state and over-
all mental well-being. The
machine has not been a
cure-all for every ill, but if I
dont use it, I feel the nega-
tive effects. Overall, I am
thankful to my doctor and
to the staff at the Charlotte
Hungerford Hospital Sleep
Center for helping me im-
prove my mental and phys-
ical health through such a
simple thing as sleep.
